This bottle hasn't really changed from the one a couple years ago; if anything it seemed to have a bit more freshness. Very much mineral and citrus driven with a bit of beeswax and lilac; fresh and with good depth. Very enjoyable.

This pours medium gold in the glass. The nose is just lovely from the first pop, showing lemon drop, preserved lemon, green tea, pear blossom, dried mango, peach tea, a touch of custard, and a whiff of sea spray. Complex and very appealing, though not exactly screaming Chablis. The palate enters on lemon drop with medium plus acid. The finish lingers nicely with significant, lightly medicinal lemon drop. Yet another lovely old bottle from Daniel-Etienne Defaix, and while perhaps lacking some Chablis markers the complexity is lovely.

Wow! Light gold in color. Restrained aromas of yellow florals, waxy fruits, honeysuckle, minerals and wet stones. An expansive and dense palate reveals waxy and stone fruits, dried honey, tons of minerals, very good acidity and finishes with savory herbs and crustacean broth.

In the last couple of years I tried this and was disappointed, as it was showing oxidation notes and was not at the same level I expect from this producer. That must not have been a sound bottle. I opened this with some trepidation, but a single sip allayed my fears. This was a stupendous wine, and such a treat to drink such a wonderful Chablis with some age, (compliments of the producer). Everything was in balance, the wine was still fresh but mature, and it was a great experience to savor and sip this wine.

Full body Chablis. At age 17, acidity is reduced, but still moderate. Minerality dominates but in aged way, with a little sherry aftertaste. Beautiful wine, enjoyed as an aperitif with cheese and fish and olive tapas.

Restaurant purchase. 375ml. Medium gold in the glass. Oxidative with bruised yellow apple, sea spray, light honey, and an array of dried, slightly candied yellow fruits reveal themselves on the nose. A bone dry, austere, well evolved palate that’s probably at the limits of still being able to provide drinking pleasure and this from someone who enjoys mature white Burgundy. It’s worth keeping in mind that this bottle is a 375ml format so will age at a quicker rate. It’s my no means tired, though since the acidity is still bright - it just lacks a little generosity and concentration at this point.

Rocknroller, you hit nail on the head. An aged beauty, deep yellow in glass, just a delight of finesse with a paradoxical freshness to well defined aged citrus, orange rind, mineral. Great balance. I didnt find as much gunsmoke in the flint and mineral notes as I've seen in other Defaix bottles.

Virtual Saturday Afternoon (Home): Light gold color. Drank 2 glasses over 90 minutes. I've yet to be disappointed by any of these late release bottles of Defaix. They've all been in pristine condition, so hopefully I'm not jinxing myself. Great nose, penetrating aromas of Meyer lemon, sea air, linetsone, orange zest and cittus. The palate is concentrated and expansive with tons of earthy ocean flavor, limestone, brine and tangerine, and citrus zest with hints of wood spice in the background. This drinks with class and maturity. 93+ to 94pts. WOTN.

I decided to not to decant and aerate it in the glass. Notes of honey, minerals and citrus like grapefruits. The attack are lemons and introduces its underlying florals and vanilla once you swirl in your mouth.
Full bodied, mouthwatering acidity (medium plus), medium plus intensity, buttery-smooth in the mid palate. Fresh, juicy, vibrant and long finish even at 16 years. Elegant and beautifully aged.
I paired it with grilled salmon, and stir-fried turnips with pork.

This is wonderful. Pouring golden, you might think it wouldn't be as fresh as it is. Sea breeze and crustacean minerality, yellow apple, creamy lemon, brioche, pineapple, pear and orange zest. No decant needed and the last glass lost a bit over night but was still good, just more muted.

Overall thoughts: Wow! Really great wine. Great acidity (maybe could be integrated slightly better if I'm being very picky), full body, fresh while still presenting some tertiary complexities. Really great wine and such a good value that I'm buying more right after I post this note.

Super enjoyable and different. Third bottle and all have been equally good. The wine looks light gold colored. The legs are slow. It smells like butterscotch, hazelnut and lemon. It tastes like lemon and butterscotch with medium/full body. The wine has silky texture and relatively low acidity.

i liked this better when I tasted it next to other Chablis, where by contrast I noted it was fuller bodied and creamier. It is very good but I didn't find the creaminess this time plus I noticed it has taken on notes of sherry and apples and pears. We drank it with raw oysters and it does have good minerality and appropriate notes of calcium and stones along with the sherry like fruit, but i think it would have gone better with the oysters when it was younger and more acidic. Will drink it with savory food next time--roast chicken or pork.

Tons of respect for this wine. Thought it was the perfect accompaniment for Thanksgiving salad, turkey, gravy, collared greens. The slightly oxidized nature helped it stand it wonderfully. A too-clean young Chablis, or an oaked American Chardonnay, would have been much worse choices. Thanks to the winery for releasing this with age at a great price. Winner.

Part of a Zoom wine tasting. This has classic white burgundy notes - no reduction, honeysuckle on the nose. This is a slightly broader Chablis given the aging, but is great. As the wine opens up more, some citrus notes (lemon, to me) on the finish. A really good wine and some very good QPR.

Layered on the nose with saline and plastic as a first impression followed by lemon, orange, grapefruit and pear and ending with some earth and wet stone. Dry and very well balanced, medium alcohol, medium acidity. The palate starts sweet with notes of tangerine, orange and pineapple and turns to lemon/lime after the initial impression. The citrus and stone fruit balance beautifully on the long finish.

Incredibly complexity, especially for a Chablis. Lush & round and still maintains the oyster shell salinity. Odd. Nose of skunk / weed. A lot of minerality. Others enjoyed, but the majority smelled what I smelled. Palate didn't match the nose, so a little better on the palate.
Gravelly, minerally, stony with “as much fruit as you can hope for” said one taster. Dry, quenching. Absolutely great. Crystal clarity in a glass. Made for seafood or quaffing on a hot summer’s day. I generally prefer the more voluptuous pleasures of Puligny, Meurseault and Chassagne, but this I could drink all day.

Took a day in the fridge to come around. Very dark yellow with thin legs. Lots of secondary characteristics, including beeswax and lemon curd. A little smoke, too. Fresh and lively in the mouth. Full, forward & fragrant nose of ripe fruit aromas of pear, lemons/limes & grapefruit with overtones of mineral/flinty notes, some floral notes, stony & chalky & a slight hint of smokiness in the background. Medium bodied with a very good concentration of well balanced & smooth textured, ripe citrus flavors of lemons/limes, grapefruit & green apples, chalky, stony & minerals. Lingering crisp finish. The wine overall was great. It is in a very nice place right now in its maturity arc with notes of oxidized apples, cooked pears, mineral, good acidity, and spices. As someone who has only had young chablis up to this point I had a hard time with this wine as a chablis since there was a lot more vanilla than I was expecting and smoother than I thought. I was expecting more acid and minerals which this wine had but just not as much as I thought it would.

Reductive and flinty on the nose. Seashells and limestone with some subtle citrus and orchard fruit. Midweighted well balanced savory and soil driven wine that if I were picking nits is a little hollow in the mid palate, but it also suffers being served set to the Dauvissat Peruses. This bottle hasn't really changed from the one a couple years ago; if anything it seemed to have a bit more freshness. Very much mineral and citrus driven with a bit of beeswax and lilac; fresh and with good depth. Very enjoyable.

This pours medium gold in the glass. The nose is just lovely from the first pop, showing lemon drop, preserved lemon, green tea, pear blossom, dried mango, peach tea, a touch of custard, and a whiff of sea spray. Complex and very appealing, though not exactly screaming Chablis. The palate enters on lemon drop with medium plus acid. The finish lingers nicely with significant, lightly medicinal lemon drop. Yet another lovely old bottle from Daniel-Etienne Defaix, and while perhaps lacking some Chablis markers the complexity is lovely.

Wow! Light gold in color. Restrained aromas of yellow florals, waxy fruits, honeysuckle, minerals and wet stones. An expansive and dense palate reveals waxy and stone fruits, dried honey, tons of minerals, very good acidity and finishes with savory herbs and crustacean broth.

In the last couple of years I tried this and was disappointed, as it was showing oxidation notes and was not at the same level I expect from this producer. That must not have been a sound bottle. I opened this with some trepidation, but a single sip allayed my fears. This was a stupendous wine, and such a treat to drink such a wonderful Chablis with some age, (compliments of the producer). Everything was in balance, the wine was still fresh but mature, and it was a great experience to savor and sip this wine.

Yummy, perfect drinking right now. Deep golden in glass; rich nose of apple, lemon, stone fruit, brioche, oiliness, a whiff of sherry. Structure is still intact, with good minerality. Went well with swordfish steak, and also brie cheese after.

Restaurant purchase. 375ml. Medium gold in the glass. Oxidative with bruised yellow apple, sea spray, light honey, and an array of dried, slightly candied yellow fruits reveal themselves on the nose. A bone dry, austere, well evolved palate that’s probably at the limits of still being able to provide drinking pleasure and this from someone who enjoys mature white Burgundy. It’s worth keeping in mind that this bottle is a 375ml format so will age at a quicker rate. It’s my no means tired, though since the acidity is still bright - it just lacks a little generosity and concentration at this point.

Rocknroller, you hit nail on the head. An aged beauty, deep yellow in glass, just a delight of finesse with a paradoxical freshness to well defined aged citrus, orange rind, mineral. Great balance. I didnt find as much gunsmoke in the flint and mineral notes as I've seen in other Defaix bottles.

Deep gold in Gabriel Glas Stand’Art.
I decided to not to decant and aerate it in the glass. Notes of honey, minerals and citrus like grapefruits. The attack are lemons and introduces its underlying florals and vanilla once you swirl in your mouth.
Full bodied, mouthwatering acidity (medium plus), medium plus intensity, buttery-smooth in the mid palate. Fresh, juicy, vibrant and long finish even at 16 years. Elegant and beautifully aged.
I paired it with grilled salmon, and stir-fried turnips with pork.

This is wonderful. Pouring golden, you might think it wouldn't be as fresh as it is. Sea breeze and crustacean minerality, yellow apple, creamy lemon, brioche, pineapple, pear and orange zest. No decant needed and the last glass lost a bit over night but was still good, just more muted.

Look: medium+ gold; moderate amount of slow legs, showing good viscosity
Nose: browned yellow apple, butterscotch, honey, salinity, faint fresh mushroom
Palate: yellow apple, lime peel, honey, table salt, minerality, mushroom, hazelnut; long- finish of salt, minerality, mushroom, and hazelnut; dry; full- body; high- to high, decently sharp acidity that leaves a lasting impression on the palate (it almost starts off med+ to high-, but seems to finish high)
Overall thoughts: Wow! Really great wine. Great acidity (maybe could be integrated slightly better if I'm being very picky), full body, fresh while still presenting some tertiary complexities. Really great wine and such a good value that I'm buying more right after I post this note.

The wine looks light gold colored. The legs are slow. It smells like butterscotch, hazelnut and lemon. It tastes like lemon and butterscotch with medium/full body. The wine has silky texture and relatively low acidity.

i liked this better when I tasted it next to other Chablis, where by contrast I noted it was fuller bodied and creamier. It is very good but I didn't find the creaminess this time plus I noticed it has taken on notes of sherry and apples and pears. We drank it with raw oysters and it does have good minerality and appropriate notes of calcium and stones along with the sherry like fruit, but i think it would have gone better with the oysters when it was younger and more acidic. Will drink it with savory food next time--roast chicken or pork.

Tons of respect for this wine. Thought it was the perfect accompaniment for Thanksgiving salad, turkey, gravy, collared greens. The slightly oxidized nature helped it stand it wonderfully. A too-clean young Chablis, or an oaked American Chardonnay, would have been much worse choices. Thanks to the winery for releasing this with age at a great price. Winner.

Color: medium gold with brass streaks
Nose: chalk and a little diesel. Kiwi and guava. Brie rind. White flowers like acacia.
Palate: medium acidity, structure is pretty big. Minerals and tropical fruit. Starts strong on the white flowers but they do dissipate.
Finish: medium-long
Much chunkier than its cousin vaillons, deep and quite rewarding but not quite at that level. I find this would really be great with a herb chicken, it has the structure to stand up to it.

PnP in my somewhat smaller version of the Riedel Montrachet glass. Light gold color. Citrus and brine on the nose. The palate shows that lovely relaxed & resolved yet energized and fresh mouthfeel and stately elegance of age without any drop off. Displays a captivating array of honeyed and finely etched; citrus, brine along with a hint of herbs and tropical. Feel so lucky to have stumbled on these late release wines from the producer though Envoyer. These drink well above the $40 I paid. Fabulous! 93+

Layered on the nose with saline and plastic as a first impression followed by lemon, orange, grapefruit and pear and ending with some earth and wet stone. Dry and very well balanced, medium alcohol, medium acidity. The palate starts sweet with notes of tangerine, orange and pineapple and turns to lemon/lime after the initial impression. The citrus and stone fruit balance beautifully on the long finish.

BEAUTIFUL gold, gold muted color - classic Chablis nose - with more of an intense perfume. Very subtle, balanced, and aged lemon-lime, rock, and (believe it or not) earth in the mouth. This wine is toward the end of its life. Drink now.

What great value for money. Bought 2 bottles on my ski trip. Apple, lemon, honey and saline backbone. Great mouthfeel. Could charge 2 or 3X I think. I will be on lookout for more.

Same btl as R&Rler. Light gold color for its age. Both chiseled and yet elegantly mature at the same time. A wonderful saline and mineral driven Chablis with a light dose of herbs and earth. Making the Most of Dinner Without Dad (Rocknroller's (Kevin & Vicki's Place)): Light medium gold color. Drank a glass over 30 minutes plus. This is still fairly bright but showing the complexity and development of age. It has a lovely honeyed character and a nice earthiness to go with ocean minerals and apple. The palate is mineral driven with a good dose of limestone, with apple and more subtle citrus notes, medium bodied, honey, saline, and good persistence. Love this producer.

Incredibly complexity, especially for a Chablis. Lush & round and still maintains the oyster shell salinity. With an hour in the decanter, the wine gains layers gets longer and more interesting. 5-7 years more in the bottle should be rewarding though hard to resist at the moment (with a decant for sure).

Gravelly, minerally, stony with “as much fruit as you can hope for” said one taster. Dry, quenching. Absolutely great. Crystal clarity in a glass. Made for seafood or quaffing on a hot summer’s day. I generally prefer the more voluptuous pleasures of Puligny, Meurseault and Chassagne, but this I could drink all day.

nice aged Chablis. Tons of character, interesting color. Mid weight, balanced. A lot of interesting things on the palate. Citrus, butter, hints of wood and smoke, some classic minerality and oyster shells.

Took a day in the fridge to come around. Very dark yellow with thin legs. Lots of secondary characteristics, including beeswax and lemon curd. A little smoke, too. Fresh and lively in the mouth. Steely and lemony fruit. Drinking at peak, with at least a few more years of prime drinking. A very good showing. 5-12-17-8: 92/100.

Medium-light golden in color. Full, forward & fragrant nose of ripe fruit aromas of pear, lemons/limes & grapefruit with overtones of mineral/flinty notes, some floral notes, stony & chalky & a slight hint of smokiness in the background. Medium bodied with a very good concentration of well balanced & smooth textured, ripe citrus flavors of lemons/limes, grapefruit & green apples, chalky, stony & minerals. Lingering crisp finish. Drinks quite well at present & at 15 years of age is close to or at its peak of development but do not see any decline for a couple of more years if cellared properly.

The wine overall was great. It is in a very nice place right now in its maturity arc with notes of oxidized apples, cooked pears, mineral, good acidity, and spices. As someone who has only had young chablis up to this point I had a hard time with this wine as a chablis since there was a lot more vanilla than I was expecting and smoother than I thought. I was expecting more acid and minerals which this wine had but just not as much as I thought it would.

Reductive and flinty on the nose. Seashells and limestone with some subtle citrus and orchard fruit. Midweighted well balanced savory and soil driven wine that if I were picking nits is a little hollow in the mid palate, but it also suffers being served set to the Dauvissat Peruses. Still outstanding and with plenty of time in hand.

Decanted for 2 hours and served at cellar temperature. Lots of work to make enjoyable, both physically and mentally. The quality, the minerality, the freshness - it’s all there if you have the patience.
