France Planning Dinner & Burgs (Bucheron, MPls): Light gold color. Drank a glass over an hour. My backup for the '10 Droin Les Clos. This was my first bottle of any of the '07 Defaix's and it did not disappoint. This has grand cru weight and power, with tons of briny ocean and limestone on the palate, deep lemon-lime fruit and some honeycomb. The palate is deep and filled with oyster shell, saline, swampy earth, tart lemon, and lemon-lime with lots of dry extract. 93+ to 94pts.

Lagret på bunnfall i 18 mnd. med gjentatt bâttonnage. Smoky og mineralsk. Med tid åpner den seg mer og viser friske, gule sitroner. Slank med bra syrlighet, og finish som blir lenger og lenger med luft. Fortsatt mange gode år igjen!

This is really special Chablis. With air and some time in the glass, it is approaching Grand Cru weight and breadth. Almost at room temp, it is sublime. Killer with an apricot and fried brie salad.

Quite lovely nose with richer / lactic character along with lemon, minerals, and apple. Good acidity with more lemon notes, riper fruit, and good balance on the palate. Nice finish. Very well made, perfectly aged Chablis. The nose in particular was lovely!

Medium Straw, medium acid. It showed it’s age as it is 15 years from vintage, but was not premox. Pretty white peaches, dried white flowers, honey, and sea minerality. Very good at a fair prices.

I agree with the immediately prior note, this was better on night two... really nice aged Chablis without any 'caramel' aging noticed and a combo of brightness and lift plus a hint of richness (again, not caramel) and minerals... yum

Huge complexity of fruit, even at age 15, the palate has tension balanced by the creaminess from the lees stirring. Tertiary fruit character just staring to creep in, but the minerality is breathtaking.

Nice, very clean and understated, good acid, nice but very reserved and touch hot on the finish. Not sure the QPR is there… maybe a bit past its prime, though not at all oxidized.

Some didn't find this typical of Chablis, but I got lemon, some salinity, wet stones, some nuttiness, and did find it recognizable for Chablis. It does need some air or a few more years in the cellar at this point. Good stuff!

Annual Tasting Group Holiday Party (St. Genevieve, Mpls, MN): Small taste. First bottle of the '07's and outstanding as had hoped! Excellent ocean and crustacean character, Meyer lemon, ocean waves, peach, limestone, loved it. 93+ to 94pts.

One of the best Chablis I’ve had. Doesn’t taste near as old as is it. Less acidity that most Chablis but great complex fruit. I’d love to have this one again.

Where to start. So Chablis and like none I've had before. Think deep aromas of luscious fruit protected by a wooly muting quilt of smoke and gunpowder. Chablis blanket effect. Underneath is the meat of the fruit - creamed bananas, papaya, chamomile and metallic copper. Flavors of vanilla and almond and peach apricot. An absolute textural sensation.

Drinking this over a few days was patience rewarded. I find these wines (released late) are best when slo-ox'd. Pop one day, have a glass or two, then put it back in the fridge, and go back and experience it again the next day. The tasters on this wine's thread have a solid handle on the tasting notes, so I feel like I won't add many more details that need to be said. Harmonious, mature, graceful, and in a great spot. Homemade chicken pot pies for the win.

Pours a medium gold. Focused aromas of lemon curd, key limes, sea spray, some underripe pear, as well as an undercurrent of complex aromas of age that I’m having some difficulty parsing out. I can only explain it by saying that young Chablis always smells very bright, and this is bright as well, but with a few streaks of dark thrown in there as well.
Acidity is high and the wine feels very focused, just starting to soften out around the edges a bit. There are strong flavors of baked citrus desserts while still remaining completely dry. There is a powdery chalky quality that I associate with Chablis on the finish.
Wow- this is really good. It will last a few more years at least, but my recommendation is to drink it now. Great stuff.

Consumed with roast chicken, carrots, onions, potatoes. Not a bad pairing, but there are better. Nice lemon/lime zest, ocean air, lees, a hint of nuttiness, great acidity on the palate with a viscous texture. Nice wine and great value for the age; very enjoyable now.

These late releases from Defaix are such incredible value. A bit of leesy, creamy texture to complement the acidic spine. Classic oyster shell, saline, Chablis notes. Still quite youthful, but still great.

Burgundy Paulée with the Chevaliers du Tastevin (Chez Mike, East Greenbush, NY): Interesting. Minerals and spice on the nose. Seems quite youthful. Must have been well-stored. Lovely.
