Cork gave a nice pop. Lively fizz and acidity. Great depth of flavor. Started out with a faint strawberry note, but ended up tasting of the sea after an hour or so. Good autolytic character and umami. Complex and long. This is a really nice aged Champagne.

From magnum served moderately chilled. Light golden color, fine pearl stream, fresh white fruits with traces of toast, lemon curd, honey, roasted almonds, and sea mist. Rich, deep, layered, a bit linear, perfect acidic balance, along with its trademark fizziness, made this a spectacular bottle. This format will remain here another 8-10 years.

I really was curios about this one, as I only had fully ripe PR Winston two or three times so far. When drinking premium champagne, it almost always is DP or Ruinart. So I wasn’t quite sure, what to expect here.
It started very cidre like, probably an artisanal cidre or so. But when opening an almost 25y old champagne, you know that the gustatory footprint can change dramatically within 20-30 minutes. Well, it wasn’t that dramatically in the end. It improved quite a bit and was rather lively with a smooth and enjoyable perlage. The cidre core gained brioche and nut elements. Nonetheless I wished for more complexity, or at least a less dominant cidre core.
Nice experience, but no need to restock (particularly since prices have doubled since release).

Sparkling golden, miniscule bubbles. Nose of syrup, figs, Christmas spices, tropical fruits. Voluptuous and sweet taste, a rich dessert bubbly that could probably benefit quite a lot from pairing with spices or cake. Well developed sweetness, but too much of it to really enjoy more than a sampling.

Theres still bubble and deep lemon in colour. Pronounced nose intensity with nose of caramel, honey, very toasty and nutty, almond. Complex and have yeasty notes as well. In its peak.

This started off slow, as if it was just apple juice. After about an hour, this wine picked up significant weight and started drinking with a much denser and brioche heavy champagne. Still not as good as I had it a few years ago, but you play the volatility game with Pol Roger WS. Still a delicious wine, but not elite today.

This was an absolutely glorious bottle of champagne opened for a fabulous occasion. This was markedly evolved from my previous tasting note. Again I'll briefly mention storage which might be a factor.. I wouldn't say my bottle was at full maturity but it was certainly displaying mature notes which were very special. The thing I love about Pol Roger Sir Winston Churchill is the fizz. Its absolutely fantastic. Very strong and powerful and lasts an age on my palate. Rhis os something I love. Unbeatable! Strong and powerful initial mouth feel for me makes me know its something very special, followed by a dry and mature mid palate then a beautiful finish. Wow what a bottle!

And my worst fears for this third and last bottle ... were not fulfilled, thank goodness. Low carbonic presence. Aristocratically decadent on the nose with aromas of roasted apple, delicate redberries, meringue pie with ripe lime or even slightly oxidized natural honey. No depth but at least elegant as always. On the palate it is broad and generous in both, flavor and acidity. Without the persistence of other occasions but with an excellent aftertaste, bitter and delicious. Thank you for your generosity Amadeo. Until the last drop.
Y mis peores temores para esta tercera y última botella ... no se cumplieron, gracias a Dios. Escasa presencia de gas carbónico. Aristocráticamente décadente en nariz con aromas a manzana asada, delicadas moras rojas, tarta de merengue con lima madura o incluso miel natural ligeramente oxidada. Sin profundidad pero al menos elegante como siempre. Al paladar se muestra amplio y generoso tanto de sabor cómo de acidez. Golden. Rich, deep and fine length. A creamy lactic note, with sweet marron glacée flavors. None of the typical toast and apple flavors, which is a nice change. Not heavy, and with sufficient lift to keep it fresh. Peak drinking now.

The nose on this is dense and rich with red and yellow apple. Buttery pie crust and mild caramel, but still with bright citrus. Green apple too. On the palate this is ripe and rich and also very fresh. 30 minutes after the pop his begins to pick up serious Pinot energy and vibrancy. Has a creamy mousse. Truffle. Very pleased indeed.

From magnum and this was lovely straight away - deep colours and rich with plenty of biscuity body. Lovely aromatics too. It showed such promise and gave immediate pleasure, but didn't seem to improve further with air. Perfect time to drink through bottles, no reason to wait. Not the most acidic, showed best pre-dinner rather than with food.

På nesen er Champagnen intens og med dyp herlig stor gul frukt som forfører de fleste. Også litt vanilje, nøtt, litt saltpreg sammen med den flotte tunge gjærbaksten.
Middels konsentret på paletten med eleganse som nøkkelord. Her er det saftige epler, sitrus, hvit pepper, et herlig mineralsk sjøpreg, får tanker til Chablis, og et gjærpreg som fortsatt kanskje er vel mye. Lang og supermineralsk utgang. Blir smattende lenge på denne.

Wineberserkers dinner with Herwig (Heirloom cafe): Just an exquisite nose with yeast, apple tart, brioche, rich but elegant; palate is also just a wonderful balance of freshness and elegance with rich texture, mousse, slight oxidation that I love, and excellent depth of flavor and length; long finish. Complete Vertival Tasting of Winston Churchill in Magnums and Jero: Am Anfang wirkt er jünger und frischer als 1999 mit mehr Frucht, teilweise rote Beeren und gelbes Steinobst. Where do I start? I don't think champagne gets much better than this. This was a beautiful bottle with a glorious long lasting finish. Apparently '98 was not a great year and did not show to be great on original release. You would never know that was the case, quite the opposite in fact. This really was palate staining stuff. Initial taste was fresh, fruity and with real depth and character. Mid palate was really structured and oozed class. I prefer a long finish and boy did this deliver here with a lovely, lingering, staining finish. Pure opulence and I love it. I feel quite privileged to have tasted this.

Saying Goodbye to Relatores Street; 1/12/2016-1/14/2016 (Restaurant La Piperna - Madrid): In spite there was no gas at all I am on my knees when I've a bottle like this in front of me. Nose is pure lush, exotic, opulent, odalisque-like. Part of the Ingres' Turk Bath painting. My kingdom for this aroma. By disgrace that lack of carbonic let the wine flat, almost dead on the palate. A flawed bottle saved by those aromas. A shame and some fears for my only bottle.

I suppose the two most important things to mention are its intensity and its acidity
Despite its age it drinks like a new release excepting the toastiness which adds the element of age to its complex fruitiness, yeast, and smooth length.
Really it has everything in the bolder style one associates with Pol Roger and importantly will be wowwing anyone lucky enough to possess this beauty for at least another 5=6 years
Intense, developed nose with great depth. Wax, canned corn, pine nuts, almonds, crushed stones, brioche, honey, whipped cream, butter, a little paint bucket and lots of ripe citrus fruit.
High acidity, but round and mature with just a little tartness left to keep it on the fresh side. Full bodied, high intensity and everlasting finish.
A beautiful champagne, that almost merits its price tag!

Toronto Wine Cru - WineSpectator Off-Line Event - Champagne OL (La Palette (French Bistro)): Tasted at WS TWC OL. I brought the wine. Nose - not much on initial opening. Abit of bread (toasted brioche), quite fresh. Could still use afew years. Palate - Clearly a pinot based Champagne. Developed some sherry notes as it sat in glass. This was the Champagne of the night for me, preferable to the Taittinger. I found it to have more complexity and interest than the other Champers.

Twenty minutes were needed to take the first gulp. That's respect and devotion. Complex nose to the limit. A bottle full of goodness, as simple as that Supreme mellow acidity with a long way ahead. Playing in a superior league. Delicious. An only bottle in life.

Good bottle of champagne. Light yellow golden color. Very clear. Nose of yellow fruits, citric and minerals. On the palate is silky, balanced, the small bubbles are very soft in the mouth. Tastes bitter and citric! Has good acidity and freshness with some peach and brioche taste. Good and creamy finish.

Polar opposite to the elegance of a 98 Comtes a few days earlier, this is a burly, dark-fruited wine which is drinking nicely now but I suspect will age well. Again I think just missing some mid-palate concentration to make it really great but it disappeared extremely quickly. ****

Great Champagne! The 98’s goes from clarity to clarity! What a great vintage this turns out to become. This is a marvelous Champagne, with a soft creaminess and still very nice fruit, minerallity and acidity. The fruit is very clean, with some pear, stone fruits, nice bread and some smoke/coffee tones on the nose. Flowers. Complex and very long, perhaps still on the young side, but open for business! One off the best Champagnes I have tasted, and my best Sir W so far!

Siggy Turns Forty!!!: Pretty ale yellow color. Excellent on the nose, with clean fruit and mineral with hints of dough/yeast. Mid-weight with great balance on the palate. Flavors are intense and expansive. Acidity appears by mid-palate and builds to produce an excellent finish. A complete wine, and an excellent way to kick off the celebration.

Burgs at Siggy's: Popped and poured after six red Burgs. Pale gold color with a beautiful stream of small bubbles. Beautiful nose showing clean citrus fruit and mineral with maybe a hint of dough/yeast. Awesome on the palate with a great mousse, tons of clean citrus flavor and great balance. Acidity builds with the flavors to delivery an excellent finish. A beautiful wine and a much needed change of pace before moving on to the last few wines.

Champagne and Burgs #2: Pale yellow color. The nose is far brighter than the '88 with tons of fresh fruit, some bread dough/yeast and exotic floral notes. On the palate there are tons of bubbles and clean citrus flavors that coat the palate. Great balance with nice acidity building towards the long, clean finish. This is just a baby and in need of many years in the cellar but is drinking pretty well already.

Verkligen bra, ungt men med alla Winston-kvalitéer. Maffigt vin som har mycket frukt, laktrits och ganska bra eftersmak. Med lite tid kommer chokladen, kaffet och allt det andra goda komma fram. På halvmagnum 5-6 år, på magnum många många år.

Lemon-coloured with shades of gold. Very small bubbles rise slowly. Nose is medium-strong and multidimensional. Very winey, mineral, limestone and chalk. Even a bit of salt liquorice notes, yellow apple and yeast bread. Balanced. Drank from the flute has a lot of chalky notes so still very young. Neverending bubbles on the palette are moderate and not foamy. Balanced taste with powerful minerality. Acidity of a green apple in the finish. Very dry. Will last for decades, minerality will get more subtle. Now tight and too young.

Wine and dinner with great friends in Denver (Denver, CO): Showing advanced age with a bit of browning at rim, moderate to high mousse. On nose the wine started off a bit oxidative, nutty with good, firm Pinot fruits, no barrique notes, moderate toast. On the palate the wine is firm with moderate + acidity, a full and firm midpalate, low dosage, high effervescence, and good palate weight. The wine got more complex over the night showing deeper spices, fruit intensity, autolytics. A good rather than great, softish WC that needs time to show its best, try again in 3-5.

I have drank 2 seperate bottles of this vintage and it is trully memorable the Pinit Noir dominates Cherry, walnut and brioche on the nise The mousse is rich and creamy The pallet is full and round Rich old apple with cherry, nuys and oak
BYO tasting (My place): Straw yellow color. Robust, masculine nose with aromas of toasted bread, wheat flutes, red apples and peaches. Same masculine still on the taste with intense notes of red apples, brioche and almonds first, and more bitterness, minerals and a metallic note on the finish. I would have preferred it a bit more elegant and lively in the acidity.

BYO with the CPH wine club without any name @ Terkels place (Terkels place): Very complex nose with a very agressiv presence. Mostly bonfire, caramel and wheat toast with a nice butter-like feel to it. Really very pure in the mouth. and very cleansing. Pure green apple flavours, very present and almost vibrating acidity. A lot of wheat and butter is also there with hints of different nuts. The bubbles are agressive. Some sweetness to it also, especially in the finish with mostly honey-like flavours.. I absolutely loved this!!

Palate; Where do I begin; baked lemon custard/baked brie, toasty/lees/yeasty notes, with baked apples, apple skins, peaches/apricots, quince paste, exotic spicy/smokey/woody flavors, with vanilla, touches of pears/pear skins, slight nuances of red fruits....it goes on and on Mid-palate; Its amazing to get the spicy/smokey/woody/vanilla notes, followed by all of the orchard fruits and citrus notes, with alot of rye/wheat/pumpernickle/yeasty expressions Finish; this wine won't quit; pushing lemon/citrus/peach/apples/quince paste/, with smokey/spicy notes, hints of vanillla/custard/creme brulee,...contrasts with the bracing acidity, and the overall power of this Champagne. If I could drink one Champagne for the rest of my life.....this is it. If I am in prison, on death row,....this is what I want for my last meal......just a bottle of this!

Cork gave a nice pop. Lively fizz and acidity. Great depth of flavor. Started out with a faint strawberry note, but ended up tasting of the sea after an hour or so. Good autolytic character and umami. Complex and long. This is a really nice aged Champagne.

I really was curios about this one, as I only had fully ripe PR Winston two or three times so far. When drinking premium champagne, it almost always is DP or Ruinart. So I wasn’t quite sure, what to expect here.
It started very cidre like, probably an artisanal cidre or so. But when opening an almost 25y old champagne, you know that the gustatory footprint can change dramatically within 20-30 minutes. Well, it wasn’t that dramatically in the end. It improved quite a bit and was rather lively with a smooth and enjoyable perlage. The cidre core gained brioche and nut elements. Nonetheless I wished for more complexity, or at least a less dominant cidre core.
Nice experience, but no need to restock (particularly since prices have doubled since release).

Sparkling golden, miniscule bubbles. Nose of syrup, figs, Christmas spices, tropical fruits. Voluptuous and sweet taste, a rich dessert bubbly that could probably benefit quite a lot from pairing with spices or cake. Well developed sweetness, but too much of it to really enjoy more than a sampling.

This started off slow, as if it was just apple juice. After about an hour, this wine picked up significant weight and started drinking with a much denser and brioche heavy champagne. Still not as good as I had it a few years ago, but you play the volatility game with Pol Roger WS. Still a delicious wine, but not elite today.

This was an absolutely glorious bottle of champagne opened for a fabulous occasion. This was markedly evolved from my previous tasting note. Again I'll briefly mention storage which might be a factor.. I wouldn't say my bottle was at full maturity but it was certainly displaying mature notes which were very special. The thing I love about Pol Roger Sir Winston Churchill is the fizz. Its absolutely fantastic. Very strong and powerful and lasts an age on my palate. Rhis os something I love. Unbeatable! Strong and powerful initial mouth feel for me makes me know its something very special, followed by a dry and mature mid palate then a beautiful finish. Wow what a bottle!

And my worst fears for this third and last bottle ... were not fulfilled, thank goodness. Low carbonic presence. Aristocratically decadent on the nose with aromas of roasted apple, delicate redberries, meringue pie with ripe lime or even slightly oxidized natural honey. No depth but at least elegant as always. On the palate it is broad and generous in both, flavor and acidity. Without the persistence of other occasions but with an excellent aftertaste, bitter and delicious. Y mis peores temores para esta tercera y última botella ... no se cumplieron, gracias a Dios. Escasa presencia de gas carbónico.
Aristocráticamente décadente en nariz con aromas a manzana asada, delicadas moras rojas, tarta de merengue con lima madura o incluso miel natural ligeramente oxidada. Sin profundidad pero al menos elegante como siempre.
Al paladar se muestra amplio y generoso tanto de sabor cómo de acidez. Sin la persistencia de otras ocasiones pero con un excelente retrogusto, amargo y delicioso. Gracias por tu generosidad Amadeo. Hasta la última gota.

The nose on this is dense and rich with red and yellow apple. Buttery pie crust and mild caramel, but still with bright citrus. Green apple too. On the palate this is ripe and rich and also very fresh. 30 minutes after the pop his begins to pick up serious Pinot energy and vibrancy. Has a creamy mousse. Truffle. Very pleased indeed.

It showed such promise and gave immediate pleasure, but didn't seem to improve further with air. Perfect time to drink through bottles, no reason to wait. Complete Vertival Tasting of Winston Churchill in Magnums and Jero: Am Anfang wirkt er jünger und frischer als 1999 mit mehr Frucht, teilweise rote Beeren und gelbes Steinobst. Zum Schluß kommt Milchschokolade dazu. Er ist vergleichbar mit 1999 nur wesentlich jünger und knackiger. In 7-10 Jahren ist er dann auch auf dem Höhepunkt. Aktuell 95 Punkte

Where do I start? I don't think champagne gets much better than this. This was a beautiful bottle with a glorious long lasting finish. Apparently '98 was not a great year and did not show to be great on original release. You would never know that was the case, quite the opposite in fact. This really was palate staining stuff. Initial taste was fresh, fruity and with real depth and character. Mid palate was really structured and oozed class. I prefer a long finish and boy did this deliver here with a lovely, lingering, staining finish. Pure opulence and I love it. I feel quite privileged to have tasted this.

Por desgracia esta falta de carbónico deja al vino plano, casi muerto en boca. Una botella fallida salvada por esos aromas maravillosos. Una pena y algo de miedo para mi única botella.

As good a champagne as Ive ever tasted
I suppose the two most important things to mention are its intensity and its acidity
Despite its age it drinks like a new release excepting the toastiness which adds the element of age to its complex fruitiness, yeast, and smooth length.
Really it has everything in the bolder style one associates with Pol Roger and importantly will be wowwing anyone lucky enough to possess this beauty for at least another 5=6 years

From magnum. One of the best Champagnes I've had.
Intense, developed nose with great depth. Wax, canned corn, pine nuts, almonds, crushed stones, brioche, honey, whipped cream, butter, a little paint bucket and lots of ripe citrus fruit.
High acidity, but round and mature with just a little tartness left to keep it on the fresh side. Full bodied, high intensity and everlasting finish.
A beautiful champagne, that almost merits its price tag!

Toronto Wine Cru - WineSpectator Off-Line Event - Champagne OL (La Palette (French Bistro)): Tasted at WS TWC OL. I brought the wine. Nose - not much on initial opening. Abit of bread (toasted brioche), quite fresh. Could still use afew years. Palate - Clearly a pinot based Champagne. Developed some sherry notes as it sat in glass. This was the Champagne of the night for me, preferable to the Taittinger. I found it to have more complexity and interest than the other Champers.

Polar opposite to the elegance of a 98 Comtes a few days earlier, this is a burly, dark-fruited wine which is drinking nicely now but I suspect will age well. Again I think just missing some mid-palate concentration to make it really great but it disappeared extremely quickly. ****

The 98’s goes from clarity to clarity!
What a great vintage this turns out to become.
This is a marvelous Champagne, with a soft creaminess and still very nice fruit, minerallity and acidity.
The fruit is very clean, with some pear, stone fruits, nice bread and some smoke/coffee tones on the nose.
Flowers.
Complex and very long, perhaps still on the young side, but open for business!
One off the best Champagnes I have tasted, and my best Sir W so far!

Siggy Turns Forty!!!: Pretty ale yellow color. Excellent on the nose, with clean fruit and mineral with hints of dough/yeast. Mid-weight with great balance on the palate. Flavors are intense and expansive. Acidity appears by mid-palate and builds to produce an excellent finish. A complete wine, and an excellent way to kick off the celebration.

Burgs at Siggy's: Popped and poured after six red Burgs. Pale gold color with a beautiful stream of small bubbles. Beautiful nose showing clean citrus fruit and mineral with maybe a hint of dough/yeast. Awesome on the palate with a great mousse, tons of clean citrus flavor and great balance. Acidity builds with the flavors to delivery an excellent finish. A beautiful wine and a much needed change of pace before moving on to the last few wines.

Champagne and Burgs #2: Pale yellow color. The nose is far brighter than the '88 with tons of fresh fruit, some bread dough/yeast and exotic floral notes. On the palate there are tons of bubbles and clean citrus flavors that coat the palate. Great balance with nice acidity building towards the long, clean finish. This is just a baby and in need of many years in the cellar but is drinking pretty well already.

On nose the wine started off a bit oxidative, nutty with good, firm Pinot fruits, no barrique notes, moderate toast. On the palate the wine is firm with moderate + acidity, a full and firm midpalate, low dosage, high effervescence, and good palate weight. The wine got more complex over the night showing deeper spices, fruit intensity, autolytics. A good rather than great, softish WC that needs time to show its best, try again in 3-5.

Really very pure in the mouth. and very cleansing. Pure green apple flavours, very present and almost vibrating acidity.
A lot of wheat and butter is also there with hints of different nuts. The bubbles are agressive.
Some sweetness to it also, especially in the finish with mostly honey-like flavours..

If I could drink one Champagne for the rest of my life.....this is it. If I am in prison, on death row,....this is what I want for my last meal......just a bottle of this!
