Most would go to Puligny for this one. The colour does not say 17 years old - more like seven. On the nose there is none of the iodine and honey one gets with most Chablis of this age. It's rounded and powerful like a good burgundy, but the acidity could give it away. With time, and temperature, there is a very pronounced smell of caramel. Not so nice!

Wonderful white burgundy that is fully mature, nice fruit - maybe slightly on the ripe side for Chablis, stones and shells. Great finish. Seems it will hold but in peak form now in my opinion. A

Light gold. Iodine and candied apple on the nose. This put on weight in the glass, evolving from sweet apple flavors to an appealing saline minerality. Crisp and clean. The 2002 Preuses is drinking well today.

I have followed this wine for about a decade from a case purchased on release and properly stored. While it is still a pleasant experience to drink, the fruit is fading noticeably and the leesy finish is becoming more dominant. This amped-up leesiness is also apparent now on some 2002 premier Cru Raveneau wines. I'm down to my last 3 Dauvissat 2002 Preuses and they are going to be sacrificed this summer. I see no upside to further cellaring.

Pale yellow green. The most atypical of the 2003 grand crus from Dauvissat we have drunk so far. There is some oyster shell and slate on the nose, but muted. The palate is more about lime and green apple with only hints of slate. The oak is more perceptible with the muted Chablis characteristics. The finish is endless but at that end, the impression is more that of Puligny than Chablis to me. Good Puligny mind you.

60th Birthday Dinner (Our Place): One of the stars of the night. With amazing Seared Scallops with Crispy Herb Crumb on Braised Fennel Confit with Orange Tarragon Beurre Blanc. Splash double decanted one hour before serving. Bright, stylish, very austere and briney, and explosively creamy - almost sweet fruit, yet dry at the same time. Ripe, yet exquisitely balanced with the structural acidity to sear and cleanse the palate. This bottle young, showing white fruits atop bright citrus. Showed, and faded, earlier than the Raveneau. Spectacular.

A fascinating wine. Extremely complex, fully mature - flirting with decay even? Good colour, intense but lively: deep nose that keeps on unfurling, aromas of honey, lemon zest, minerals, truffle, yellow apple, meaty note, almond; the palate is silky, sweet on the attack almost, with ripe acidity and searing minerality; pungent but light finish like chewing on rock, very good length. A pleasing conundrum? Not sure this is a perfect bottle, will try another.

Wowee, now we are talking'! Medium glorious golden color. Nose is the definition of Chablis -- citrus, chalk, a stony quality -- all there. On the palate there is a beautiful co-mingling of flavors that are all quintessential for chardonnay from Chablis -- citrus, minerals, hint of saline and the honeyed quality of an aged Chablis -- all of this with a loooong finish and perfectly integrated acidity. Just beautiful and stunning and exactly why I love Chablis. Right up there with the best I've ever had and shared WOTN honors with the '02 Les Clos.

Three Boston Dinners; 8/17/2014-8/19/2014 (The Hub): Medium yellow. The essence of Chablis mystery on the nose that makes Dauvissat Preuses so distinctive-salinity, herbs, florality, iodine. It makes you wonder "Could this really have come from a grape?" since the fruit is hardly the main theme. Medium weight and like earlier this year, mineral, bitter lemon, but just a tad short in intensity and acidity. A+ for its characteristics that set it apart from all other Chardonnay, but only B for cut and tension. More likely to decline than improve from this point on.

2nd of 12, pale usual green tinge, attractive if too broad nose, flowers but where's the minerality, lightish on palate but with dimension and length, a tad too sweet and atypical, though better than first bottle, seems to be tightening and gaining focus and if this continues it will be fine, but presently very good indeed (17/20).

Medium yellow color. All Chablis on the nose-brothy salinity and oyster shell. The fruit is in the background; let's say 80% yellow apple and 20% bitter lemon. Medium to full body with a gloriously sappy feel-in this respect, closer in style to Raveneau than Dauvissat usually is. As was my impression about a year and a half ago, the only thing missing that would make it great is some acidity, and that is the essential character of the vintage. As interesting and excellent as this is, it leaves me longing for a little more bite and edge.

Odd showing. Somewhat advanced color of honey gold. Nose of fresh-mown grass, grapefruit, some tropical notes and limestone. Sweet granny apple flavors and melon on the palate at first indicating perhaps a high degree of evolution, but after 40 minutes some steel, limestone, strong acidity, and tart citrus emerged. Moderate finish of round lemon fruit vying with zesty, spiny mineral. Hard to know which way this wine was heading, but all in all an enjoyable pairing with fresh-cracked dungeness. Half-bottle.

bright lemon on the nose with crystalized lemon and a huge mineral streak. The nose has green fruit, sea scents, and rocks and the palate reinforces these attributes. Wow! This wine just won't quit. No sign of pmox. This beauty attacks crystalline pure with oyster shell, bone meal, dried lemon peel. The swallow is deep, with bright acid, minerals, and more lemon peel. Solid Grand Cru wine with a few years before peak... although this bottle is hard to resist in its present state.

Chablis Grand Cru Dinner (GT Fish & Oyster - Chicago IL): Big and ripe fruit showing lots more ripeness than I expected. Bit of oxidation comes through from the middle to the end, not terrible, but still noticeable. Impressive mineraility shows lots of oyster shell and crushed stone. Wish there was more acidity, but that might be the oxidation.

Light yellow. Here is the mysterious nose of Chablis, full of herbs, broth and notes of the sea. Light, agile with some faint orange tones and great acidity (especially for the year). Finer, livelier and more complex than the excellent Raveneau Premier Cru we has alongside this. Probably more ready and approachable than a bottle a year ago. Not a powerful wine but still as good as it gets. The purity and focus in contrast to the Raveneau were quite striking tonight.

Luncheon of Champions (Yountville, CA): Penetrating soil and shell aromas. Notably more delicate, lacy, and floral, and less strict, than the Clos. An almost Beaune honeysuckle quality. Great fanfare of a finish. A tiny bit of finishing warmth – artifact of the vintage perhaps. Another very fine bottle from a local reseller.

A Small 1990 European Dinner (Nopa, San Francisco): Light yellow. Pure, pristine Chablis, much more about the underlying stoniness and acidity than the fruit, but you feel more than taste the fruit and the balance is superb. Very atypical for 2002 in that it is lean and delicate without any sense of fatness. As is often the case, a totally different wine than Les Clos in its weight, but an equally great expression of Grand Cru Chablis. This '02 and the '04 Preuses we tried earlier this month were both stellar and played to the strengths of the disparate vintage styles. I'd aim to hold this one for another 8-10 years if this bottle is representative.

Taste: Vibrant and lively the palate was in a constant state of flux that made it difficult to identify anything other than the lasting persistence of crushed rocks, green apples, and honey. Possibly one of the more profound experiences I've had with Chablis.
Overall: A magical bottle of Chablis that reminds me I need to be buying more of than I have been. Compelling, delicate, powerful, graceful, and intoxicating. With good storage this bottle has 5-10 years ahead of it.

Pale gold hue. Nose of sea air, applecore, lemon peelings, freshcut spring flowers. Long on the palate with an initial bite of semisweet granny apple and compelling acidity, then a sudden drenching with mineral-laden, flinty flavors of lime, grapefruit, and some petrol thrown in. Finish quite long and evocative, with waves of stone and citrus. Absolutely thirst-quenching and a standout with shui mai. From a 375.

An utterly compelling wine! This wine had a sweet fruit profile, but it was light, lithe and nimble. It was unctuous, but had an ethereal side that almost floated to the heavens. There was also a little tart typical Chablis mineral, zesty citrus, and crispness; but this wine had a finish to die for. It lasted forever. It was present, but never invaded the mouth. I love it!

Ordered from restaurant wine list, this Chablis is drinking surprisingly well already. On the nose there is chalk/talc, lemon curd, honeysuckle, and a whiff of fresh white mushrooms. In the mouth the citrus becomes richer and heads towards grapefruit-orange peel flavors. The close is complex, very spicy, and quite long. While minerally(?) throughout, these flavors do not dominate today as I imagine they did a couple years ago.
I am probably under-rating this and it will surely be better in a year or two.

Rousseau Dinner (Knightsbridge - Northbrook IL): Tasted blind alongside its 2000 vintage counterpart. Incredible minerality and crisp fruit. At first, people guessed Meursault because of its rich fruit, nutty hints and incredible acidity. Nice citrus trace on finish. This showed great fruit purity and no oak manipulation. For me, close to an excellent wine. Group was evenly divided between the two wines.

Light yellow in color, very fresh and young, medium palate full of citrus fruits showing well and very long finish with lots of minerals, young but already very good.

Odd showing. Somewhat advanced color of honey gold. Nose of fresh-mown grass, grapefruit, some tropical notes and limestone. Sweet granny apple flavors and melon on the palate at first indicating perhaps a high degree of evolution, but after 40 minutes some steel, limestone, strong acidity, and tart citrus emerged. Moderate finish of round lemon fruit vying with zesty, spiny mineral. Hard to know which way this wine was heading, but all in all an enjoyable pairing with fresh-cracked dungeness. Half-bottle.

Klar, dyp gul med gylne toner. Intens mineralsk nese av sjø, sitrus og eple med eim av tørt treverk og antydning til smør. Litt spinkel og syrlig inngang før vinen åpner seg med østers, eple, agurk. Avslutning som varer og varer, med ørlite fatkrydder og honningtoner.

Klar, gul med gyllent skjær. Dyp, supermineralsk nese av sjø og sitrus. Snev av kjeller, samt antydning til svovel; men mineraliteten dominerer luktbildet.
Frisk inngang. Konsentrert, bløt, leskende frukt med stram syre. Evigvarende mineralsk avslutning med en noe honningaktig sødme.

Wow! This wine just won't quit. No sign of pmox. This beauty attacks crystalline pure with oyster shell, bone meal, dried lemon peel. The swallow is deep, with bright acid, minerals, and more lemon peel. Solid Grand Cru wine with a few years before peak... although this bottle is hard to resist in its present state.

Chablis Grand Cru Dinner (GT Fish & Oyster - Chicago IL): Big and ripe fruit showing lots more ripeness than I expected. Bit of oxidation comes through from the middle to the end, not terrible, but still noticeable. Impressive mineraility shows lots of oyster shell and crushed stone. Wish there was more acidity, but that might be the oxidation.

Light yellow. Here is the mysterious nose of Chablis, full of herbs, broth and notes of the sea. Light, agile with some faint orange tones and great acidity (especially for the year). Finer, livelier and more complex than the excellent Raveneau Premier Cru we has alongside this. Probably more ready and approachable than a bottle a year ago. Not a powerful wine but still as good as it gets. The purity and focus in contrast to the Raveneau were quite striking tonight.

Very atypical for 2002 in that it is lean and delicate without any sense of fatness. As is often the case, a totally different wine than Les Clos in its weight, but an equally great expression of Grand Cru Chablis. This '02 and the '04 Preuses we tried earlier this month were both stellar and played to the strengths of the disparate vintage styles. Taste: Vibrant and lively the palate was in a constant state of flux that made it difficult to identify anything other than the lasting persistence of crushed rocks, green apples, and honey. Possibly one of the more profound experiences I've had with Chablis.
Overall: A magical bottle of Chablis that reminds me I need to be buying more of than I have been. Compelling, delicate, powerful, graceful, and intoxicating. With good storage this bottle has 5-10 years ahead of it.

Long on the palate with an initial bite of semisweet granny apple and compelling acidity, then a sudden drenching with mineral-laden, flinty flavors of lime, grapefruit, and some petrol thrown in. An utterly compelling wine! This wine had a sweet fruit profile, but it was light, lithe and nimble. It was unctuous, but had an ethereal side that almost floated to the heavens. There was also a little tart typical Chablis mineral, zesty citrus, and crispness; but this wine had a finish to die for. It lasted forever. It was present, but never invaded the mouth. I love it!

Color is medium pale gold. Nose shows lemon tinged mineral, lanolin, and a hint of sea air. On the palate, juicy lemon, stony flavors, and a hint of salt combine with a good vein of acidity. Was not decanted and should have been. Has years to go.

Ordered from restaurant wine list, this Chablis is drinking surprisingly well already. On the nose there is chalk/talc, lemon curd, honeysuckle, and a whiff of fresh white mushrooms. In the mouth the citrus becomes richer and heads towards grapefruit-orange peel flavors. The close is complex, very spicy, and quite long. While minerally(?) throughout, these flavors do not dominate today as I imagine they did a couple years ago.
I am probably under-rating this and it will surely be better in a year or two.

Rousseau Dinner (Knightsbridge - Northbrook IL): Tasted blind alongside its 2000 vintage counterpart. Incredible minerality and crisp fruit. At first, people guessed Meursault because of its rich fruit, nutty hints and incredible acidity. Nice citrus trace on finish. This showed great fruit purity and no oak manipulation. For me, close to an excellent wine. Group was evenly divided between the two wines.

Lieu-dits-cru Rousseau Dinner (Knightsbridge): LIght yellow color. Bright clean light aroma of white/yellow fruit and hints of mineral. Wow - great clean bright acidity with white grapefruit on the palate. Very clean finish.
