D5 DipWSET FORTIFIED WINES with Adam Chase and Matt Gaughan; 4/9/2022-4/10/2022 (St Francis' Yacht Club San Francisco): A: Pale amber - [clue to oxidative ageing] N: Medium (+) burnt brown sugar, walnut, bruised cooking apple. The wine is simple. P: Dry, medium (+) intensity , low acidity, high alcohol, medium (+) body, medium finish (lots of burnt sugar on the finish and not much else) C: Well integrated alcohol and though acidity is low, its part of the style. Good quality with better examples giving more complexity and an enduring finish. Not suited to ageing as aged before release and designed to be consumed soon after release.

This bottle appealed to me much more than my first one three years ago. The nuttiness/walnuts came out much stronger, making the experience much less "spirity" and far more pleasant. Maybe it helped to let it sit in my cellar for three years. Otherwise TN as before. Would buy again.

Reaffirms my already-rock-solid faith in the ability of the Spanish to produce magic through yeast and oxidization. By all accounts, including its $22-dollar price point, this is a "basic" dry Oloroso. It's lighter in color and body than many Olorosos, but all of the elements of greatness (or, at the very least, very, very good-ness) are in place: a nose of linseed oil, walnut shells, prunes, and dried apricots; an unctuous texture; a palate chock full of roasted hazelnuts and almonds, and a persistent finish. A superb accompaniment to an improvised cazuela of chorizo, mushrooms, and caramelized onions.

I am going to finish this bottle tonight having observed it over 9 days since February 1. It seems to peak around day 3, but ultimately it's just a little too caustic.
A nice nose of the usual oxidized sour prunes in the middle of a heap of damp rotting leaves, pretty elegant and beguilingly "spirity". Palate is true to that but doesn't quite satisfy the nose's promise. It emphasizes the oxidized note to an extreme, like drinking liquified rusty nails without sufficient nutty balance. Any idea of sweetness is a fruit-illusion.
I find the Alexandro Oloroso better on the palate as a basic Oloroso, even though it is cheaper. It's nuttier.
I feel like if coffee and white wine had a love child, this would be it. A complex, rich nose of espresso, brine, raisin, caramel, apple crisps, and malt. Dry and mineralic on the palate, with a interesting rhubarby sappiness. The nutty finish lingers on at length.

Upon opening, this wine is very dry by Oloroso standards. I get flavors of iodine, sea-salt, leather, and, more faintly, toffee and coffee. Later, notes of rubber/burnt rubber emerge. The finish is a bit short, and reminiscent of beefsteak char. I'll leave this one open and drink it slowly, and add notes as necessary.

Off list at boqueria. Very good value. Luckily, I was allowed to take the last 1/3 of the bottle home as it really blossomed on day 3. Solid, if not overly complex oloroso. Definitely worth drinking over several days or opening early.

Nutty, salty with some caramel flavors. Probably a good example of an Oloroso, but I think I'm just not crazy about this style of wine. Too heavy and overwhelming for me.

Wow, I really like this, and I think for a little over $20 it is a really great value. Been drinking it over 4 or 5 nights -- open maybe a week -- and I am enjoying it more every time. Wonderfully balanced. I haven't drunk a lot of Sherry, but sometimes it seems like the oxidation is all you get. Not so with this. Wonderful nutty, salty, bitter caramel undertones, and a finish that lingers for a while. Love to try this with a good bleu cheese. Beautiful amber/brown color.

a it simple on the first day, but this wine needs several days open to reveal a of its charms and complexity. orange peel, bright and fresh, nuts and coffee, great detail and finesse. i haven;t yet learned to love Oloroso as a category, but this is a convincing wine.

Proper notes of fig, leather, hazelnut, and walnut, maybe some black tea. A bit hot, but not too much. Reasonable finesse, but that's not really what oloroso is about, anyway. Very good for the price/age.

Complex aromas of nuts, caramel, coffee, dark chocolate. Taste of rusty metal, nuts, slight hint of fruity vinegar. Very long nutty finish and great complexity. Oxidation taste quite obvious and may be off putting to some. Need to linger over it to appreciate it, not immediately delicious but it grows on you.

Fine oloroso with olives; great with cockles. Oloroso is, in many senses, the authentic flavour of Sherry wine, despite my favorite is Palo Cortado. Oxidized, firm, creamy but sharped, bitter orange peel, burned caramel and lovely aftertaste. Just an ugly and unpleasant colour distorting a nice moment. Tasty oloroso for Sherry lovers.

Jerez 1: Bodegas Emilio Hidalgo and Tradición (Jerez de la Frontera, Spain): Medium to deep gold color. Nose of fine woods and caramelized almonds. Very sweet and complex. On the palate, shows itself off as a dry (seco) Oloroso, very pungent but with honeyed flavors. It is really quite a tremendous surprise to find these sweet flavors in a wine with no detectable residual sugar. Elegant and delicious.
