Lovely, detailed bouquet of lime blossoms and fresh herbs. On the palate, attacks well with the silky acids and texture of a white with some age and shows a crazy note of lanolin and pickled lemon rind. On the dry and bright ends of things, nothing rich or oaky here, it’s austere and intense and so minerally and citric, it’s the kissing cousin of a trocken Riesling. Terrific lingering, bitter caraway-seed finish. Aging nicely, my kinda chablis.

This has put on more weight and filled out on the palate yet still retains a laser-like tension on the finish. Notes of ginger, lemon but with bright acidity; long fiinish. Excellent - but let it breathe.

Tasted over 2 hrs -translucent med gold -waxy banana citrus stone lanolin -med acidity, med weight fairly complex sweet yellow fruit bitter mineral beeswax, good length -excellent power and complexity but just not a huge fan of the distinctive flavor profile this producer seems to generate that transcends terroir in my opinion

From memory: Wow – still a baby really! Laser-sharp with pronounced notes of crushed seashells and lemon-peel throughout – I don’t think I’ve ever had a wine that smelt as much of the sea as this one. Very little oak to soften the blows, but the fruit is fortunately generous enough to prevent this from becoming a downright masochistic affair. Not for the terrace aperitif – this is a serous, grown-up, old school Chablis that really needs food to show its best.

Quite different showing and nothing like previous bottles. Feeling a bit heavy but specially a very significant bitterness at the finish. Could be the vintage or an off bottle? Held the wine for a few days but it did not improve at all.

Private Tasting (Private Location): A bit withdrawn nose with citrus zest, white, yellow flowers mixed with a hint of butter and oak. Good acidity for a warm vintage like 2011. Moderate oak, medium length. I really liked the kind of frugality, only the better Chablis could deliver. Well made with still some potential left but its no crime to drink it now.

Crackling with energy right now - 30 minutes coming towards room temperature really opens this out to show more nuanced aromas of flint, flowers and lemon peel. Acidity very much to the fore. Excellent.

A very modern, fruit forward version of Chablis, Easily drinkable, and very nicely balanced, just light on the typical steely qualities I sometimes look for in Chablis... taste ripe and round. Drank as a pop'n pour. Maybe time will make this wine more typical of to its pedigree. Very Enjoyable, glad I have 3 more.

Morel Dinner with Big Red & White Burgs and Champagne (L'Etoille du Nord, Bayport, MN): Pale gold color. drank 1 glass over an hour plus. This was just showing so well; an absolute gem with gorgeous fruits, a mix of tropical fruits with kiwi, lychee and plentl of lime and citrus. The palate is bolstered by the fresh acids/cut and the lively tropical fruits. Good long finish. Really good stuff.

I had this a few days ago, but remember it having great minerality but also being quite rich and unlike other 2011s I've had (mercifully). In fact, this is the first 2011 I've had from anywhere in Burgundy I've actually enjoyed! Will take proper notes on the next bottle.

I served this in my wine course. Typical sea shell nose, but with balance between floral and citrus favoring floral more than usual. Mouth is very elegant with more tropical flavors than usual, but a light airy feeling despite plenty of extract. Wine is improving substantially as it warms to about 60F.

Should go great with crab cakes. Great nose of peach, pear and grapefruit. Taste of stone fruit with a light grapefruit flavor. Perfect acid level for food. A wonderful wine.

Light yellow colour with green tints. A very fresh bouquet of greengage, lime, crushed river boulder, minerals, rock salt and lychees. A lovely Chablis nose, with a hint of white flowers. On palate, very pure and rich, with good fruit weight and structure, but real energy, tension and focus. Young and primary, a little clenched in the mid palate. Big boned but with a great mineral and acid backbone. Lime, greengage and peach dominated on the palate but food brought out the richness, the flavours moved more tropical fruit. A long, dry, chalky finish. MoT is my favourite Chablis 1er, and this wine is an excellent example. Give it 3-5 years.

I'd have no hesitation buying more of this! This was easily the best chablis among 3 other btls, mostly Fevre tonight. In fact the two '06 Fevres were almost undrinkable. I don't think you'll find a more consistently great Chablis producer than Billaud Simon and the MDT is always one of the smartest buys in Chardonnay period.

Showing well but not quite ready. Huge potential. The nose is just starting to develop. Very nice and clean ethereal flavors on the palate. Check back in 2 years.

Very clean and transparent chardonnay, minerally fresh-cut pears. Clean as a whistle. A touch of more exotic fruit/marzipan/white flowers swirls in and out. Textbook food wine (oysters, seared tuna salad, even carpaccio)

VG Chablis with acid, fruit and complexity. Drank with another 1st Cru and this one had the Chablis character that I love.
