First experience with this top sherry, and I loved it. The sharp acidity really appeals, especially relative to the less-acidic sherry that was used in the salad dressing. Fantastic.

Palo Cortado Sanluqueño procedente Pedro Romero. Color caoba con destellos rojizos. Un vino con una nariz racial, intensa, bien perfilada, con notas de azúcar quemado, barniz de mueble viejo, frutos secos caramelizados, salino, con matices de especias exóticas... En boca entra muy intenso, es un cuchillo, afilado amargos intenso, impactante, largo y con increíble profundidad. Vino de reflexión. No es fácil de maridar, pero acompañó muy bien un gamoneu.

Wine Tasting Group - Sherry/Madeira - Mar. 10, 2019 (My house): Addition from Brian. From the cellars of Gaspar Florido / Pedro Romero. Saca Dec 2013. 22% abv. From wines definitely >30 yo. Wildly complex and very intense that's hard to describe. Nuts, strong walnut skins, herbs, burnt caramel, fresh briny seaweed/kelp, moderate oxidative notes, and a hint of honey to balance all of the swirling flavors. Excellent acids freshens the wine to get almost a paradox of old and fresh sensations. In many ways, more intellectual than sensual for me and a wine that I need to sit with longer than the time that we had. 94+.

A Medlar Dinner: Everything dialed up to eleven. It's concentrated, intense, painfully so. So complex and nuance and it keeps going. One for sipping and contemplating, perhaps garnering respect rather than love. 80 years old, and monumental. *****

Equipo Navazos Tasting with Jesus Barquin and Eduardo Ojeda at Morrell Wine Co.: Funky, less expressive than the 41, salty and nutty on the nose. mid is bright, lively with acidity and quite fresh. big salty punch here - perfect for meats or cheeses. fresh acidity on the finish, long chewy notes. very intense and complex. powerhouse. single cask, 80+ years old.

We shared this with friends who came over for tapas on 5/28/16. It had an absolutely astounding bouquet of toffee, caramel, almond, tea and ocean aromas. The palate was ultra-intense, sharp and concentrated with flavors of caramel, almond, salt, minerals.

Gold to deep carmel. Penetrating nose of singed dried fruit, salted nuts, molasses, and spicy olive oil. The palate is super concentrated, almost corrosive, but delicious, sea salt, burnt sugar, tart preserved dark fruit. The finish spreads warmth from front to back, and is "relatively" sweet-flavored, and very long. This wine stands as a showpiece for what can be accomplished within the solera system, but is too intense to be called refreshing. Fascinating as an aperitif (in miniscule quantity), but almost certain to overpower any food.

No formal notes. Not as complex nor interesting as the 18/04/14 bottle. Initially showed some acetate but nevertheless this was a good, almost spectacular bottle with plenty of concentration, salinity and almonds. A joy.

Super complex aromas of dried fruits, salt, antique furniture and freshly shucked oysters. Dry and salty in the mouth with faint suggestions of fruit tempered by dry savoury elements. Length of flavour is incredible.

JB @ 28-50 (28-50 Marylebone): Deep, intense tangy, smooth, long, everything. This seems to have lost its slight feeling of heat and now shows a wonderfully concentrated but rounded profile. More oloroso to me than my typical view of PC, this is wonderful. Hugely concentrated, rich, deep but balanced. Goes on and on. In the region of seventy or eighty years old apparently. *****

Wonderful on the nose - intense and aromatic, but just too much wood, too chewy - real test tube wine. I can imagine it going down well in a tasting but we couldnt drink half a bottle between two sherry lovers.

Raisin, caramel, burnt almonds, salinity, coffee and many many more things on nose. The weight on palate it's plain ridiculous... it sits on mid palate and it expands, it's mouth coating but at the same time it's light and leaves an eternal and again ridiculously long aftertaste. Incredible wine and maybe the most impressive I've ever had. Drink with caution, this is addictive.
