Bill's Monthly Lunch - January 2012 (Vancouver, BC): Tasted blind - medium straw in colour. Nose of baked apple and toast with hints of yeast and floral notes. In in the mouth this has a soft feel with great acidity and flavours of lemon, apple and toasty bread. A long finish here and while this is drinking very well right now there’s no rush either. Excellent.

Bolts right out of the starting gate. 70% chardonnay/30% pinot noir. Golden color. Chewy, silky texture and mouthfeel. Toast, fig, biscuit on the nose. The pinot noir core shines through with tastes of cherry, almond and orange peel. Beautifully integrated and well within it's drinking window. 2-3 more years in cellar should really bring it all home.

My go-to Champagne. Amazing quality, and outstanding value. Everything here is in balance, with some developing notes of bakers chocolate. The acidity is still racy, but not overpowering, the mousse is fine as can be.

Disgorgement date: January 27, 2006. This was beautiful, with some chalky minerality on the otherwise citrus-filled nose, and broad, big flavors in the mouth, featuring green apple and pear, mixed citrus fruit, and apple peel. Not very yeasty/bready, but it has a nice toasted nutty character. Ample complexity overall, and it's got a nice rich finish. Persistent bead, and seems very young. For this price, this is a remarkable Champagne, and could probably benefit much from aging. 92+

WOW! This Champagne was truly brilliant! Complex, fruity, nutty, round, super aromatic, and dirt CHEAP for the quality. If you like Champagne, this is a must try. VERY WELL DONE. Drinking well today, but I suspect this can grow and evolve for 5 to 8 years.

A very nice Champagne with a broad appeal. A big and bold, yet a tad flabby Champagne that could have used a little more distinctive acidity to really be a topnotch bottle. I'd love to try it in a more classic vintage.

NYC Sine Qua Non Dinner at Eleven Madison Park (New York): Very enjoyable and smooth with a nice finish. I was getting refreshing citrus flavors. Great Champagne and a nice start to the evening. This is one I expect to be a crowd pleaser that I would seek out for a party.

Summer Truffle Dinner (Chicago, IL): Flavorful with good complexity and depth. Well balanced with a nutty, round fruit profile and soft acidity. Long finish has complexity and the full array of flavors.

I'm finishing off the last glass about 5 hours after I opened the bottle. The nose is minerals, yeast, and lemon, in that order. The palate is light and the finish long and complex.
