미국, 그것도 스파클링 와인에 이정도 돈을 태울 용기가 있는지를 테스트하는 와인이다. 개인적으로는 새로운 경험을 추가했다는 것만으로도 꽤 높은 만족도를 가졌지만 가성비는 글쎄다. 물론 16빈이니 상대적으로 영빈(?)이었으니 그랬을수도.
노즈에서는 처음에 약간 톡쏘는 듯한 스모키한 향이 코를 찔렀다. 이어서 구운 빵이나 바게뜨같은 향도 이어졌다. 다만, 아쉬운 건 시간이 지나면 지날수록 향이 더 좋아진다란 느낌보다는 원래 없던 과실향이 조금 올라오는 정도.
팔렛에서는 바디는 크게 느껴지지 않았고 산도는 샴페인이라고 해도 믿을만큼 나쁘지 않았다. 약간 짭짤하게 느껴지는 미네랄리티도 나쁘지 않았으며, 시트러스한 과일의 풍미가 피니시에 더해졌다. 다만, 아쉬운 건 시간이 지난다고 더 좋아지는 것은 아니니 빠르게 마시는 것도 추천.

Fantastic bottle. As others have noted, this is the best UM BdN I’ve had to date. Seems to be in a prime spot now. Citrus and mineral notes; a bit of richness balanced by a racy but not aggressive acidity. Paired well with fresh-out-of-the-fryer karaage.

medium champagne color, edgy citrus nose, earth tones, on the palate red flower petals and steely citrus notes, medium bodied with an admirable restraint given all the elements present, lime acids, waves of pure mineral water, with time even a red berry component emerges along with melon, fine long finish, this is quite good.

Dinner at Iki Ramen (Iki Ramen, Los Angeles CA): The nose is classic Ultramarine as it leans hard into the estery quality that I get from Ultramarine along with strawberries, red berries, biscuits, tropical citrus, papaya, cinnamon spices, and peaches. The Medium bodied feel is fresh and lively with racy, high acidity. This is still very primary and the acidity still has some sharpness to it. I feel like this still needs a few years of aging to fully round into form.

Best UM BdN I’ve had yet beautiful cirtus on the nose, yields to a more earthy yeasty note more typically of BdB. Comes together seamlessly with characteristic hint of oxidation.

Medium gold. My first Ultramarine. Aromatically offers some toast and lemon, but ultimately a bit muted -- even with air.
On the palate you get much more red berry, oxidized apple, yeast, and nuttiness. There's something about the mouthfeel... it's almost lightly tannic, or stringy.
It's clearly quite powerful but still in a relatively lean package. Enjoyable, and I definitely still want to try the BdB and rose, but maybe not worth the secondary market value IMO.
Superb but not the epiphany the last bottle was. I think the last bottle was in a perfect youthful spot with tons of energy. All the same flavors as last time but without the “joie de vivre” of the last bottle. Something special about this when very young. I suspect it may be spectacular at full maturity as well.

I feel like I'm becoming the lone dissenter on UM wines. Their magic is wearing off on me. Perhaps not helped that it was served along side a Laherte Champagne. Aggressive, tight bubble structure. A bit heavy. Palate is tight, perhaps it just needs to unwind. It lacked something last night that i can't put my finger on. Maybe it just needs some time as it still showing quite young.
best sparkling wine I've had in several years..toast leather lemon salinity so many taste that just rolled across the tongue..bubbles there but not dominating..the perfect match to our spicy boiled crawfish..cit thru the earthiness and spice like a knife thru soft butter..just wish I had a few more bottle

Bright and fresh and breezy. Yeast and brioche. Bitter tangerine and fresh light strawberries. Cara Cara? Blood orange? An earthy presence as well, the slightest hint of mushrooms. Paired with roasted and raw oysters. 2016 vintage, disgorged 2021. Interestingly sold at the restaurant for far less than what you can find in retail (if you can find it…); 5-year (or longer) waitlist probably has something to do with it @ Gramercy Tavern

Poured into flute and wider bodied glass shortly before dinner (tuna sashimi followed by soy ginger bream). I’m not really a bubbles expert, but this was very good. Nose of orchard fruit. Palate of lemon, brioche, line custard, and hints of apple. After an hour there was less effervescence and fruit with more game meat and toasted notes. Very fine mousse. On the more acidic/sharper end but holds it together. Again, I’m no expert on bubbles but this wouldn’t be out of place in a line up of grower champagne - though the high acidity reminds me more of high end English sparkling wine (Hambledon Hall or Breaky Bottom) than France. 93-94 very well done.

DG 11/18/20...WOW this one starts out like a crisp hard apple cider, fresh baked beer bread, and lemon tarts! More vinous flesh than the 15...really sour tartness, yet creams up wonderfully with a pillow soft vanilla ginger marsala cream mousse...great saline crushed rock minerality...exotics of almond liqueur, lychee florals, red apple skin, Big Cherry Candy Bar, mulled wine spice...just SO refreshingly rich, world class, unmistakably UM, and a helluva lot of FUN to drink! UM reminds me more and more of Cedric Bouchard...(gasp emoji)!

Wild, energetic, zesty, angelic, and ethereal all at once. Tiny bubbles produce a fine, elegant bead and a vigorous mousse. The nose smells of live yeast, earth, citrus and tropical fruits, giving the sense that something magical is happening. A mélange of lemon, guava, pineapple, mango, grapefruit, passionfruit, unripe peach, green apple and red apple dance around on the palate. High acidity that’s a bit electric lingers, tickling the back of your jaw for days. I’ve heard one should let these age or breathe for hours, but I’m not sure why: pop ’n pour and embrace the youthful energy of this badass sparkling wine.

This is not champagne, make no mistake. But for what it is, I really like it. So much fizz it goes straight up your nose and cleans out the sinuses. And then a purity of fruit you don’t find in champagne (or other sparkling) along with a touch of spice. Green apples, something more tropical, I’m not sure. I could drink this a lot and often.

Quite delicious and a step up from the '16 BdB, this has the same pure-and-fresh profile but with a touch of added complexity from deeper tones, minerals, and a whiff of spice. Nice nose. Again, good for release price; not a good value on the secondary market.

Popped the cork and lost an ounce of bubbles. I loved this wine, significantly better 90 min after opening. Initial notes of apple skin and even some green apple that blossomed into complex mushrooms. Lots of umami and fruit skin. Just delicious- maybe something will be gained with time, but I don’t need to wait.

Drank alongside a 2006 Perrier Jouet Belle Epoque and a 2006 Taittinger CdC. First experience with Ultramarine, and it did not disappoint! In a perhaps unfair competition, it finished *slightly* behind the CdC, but was widely loved by the family. So fresh and easy to enjoy. Wish we had more!

Really beautiful nose with some clove/mulling spice and a touch of spice. Soft mousse and extremely “clean” on the palate but only thing missing is that typical yeast/bready characteristic but really doesn’t need it. Beautiful and clean and can’t wait to get more. Opened way to early but not disappointed at all!

Really ripe and sweet orchard fruit, with a little bit of brioche in the finish. Moderately low acid, but enough on the finish to pull it together. Lovely BdN, and probably my favorite UM BdN yet.
Maybe I drank this too soon but it's not very expressive. Subdued "orchard fruit" (this is spot on whoever wrote this before) and a hint of minerals on the finish. I drank the '12 LD version of this wine within a couple days and there didn't seem to be much difference aside from the LD being toned down due to the extra bottle age. I prefer the BdB and Rose over BdN.
Ironically, I love Cruse's BdN and think that has incredible complexity and verve. Guessing the UM BdN is constrained by it's single vineyard nature.

First time trying Ultramarine. Not a lot of domestic sparkler experience, but this one had solid fruity notes, some yeasty/brioche flavors. Overall a touch heavy, and lacked the acidity and energy of a good Champagne. Solid effort tho. I have been told these are better with a couple of years on them.
