Vinum WSET3 Celebration: [Vinum WSET Passing Celebration] From magnum. Cork came off without much resistance, but wine turned out just fine. Gold rims, lemon core. Candied hazelnuts, salinity and minerality, dried aromatic lemon peel, toast and pastry, hazelnut noisette. Still showing a faint, but incredibly fine mousse, bubbles are fading. Really well balanced, complex, and just delicious. Has all of the candied oxidative notes for this style of Champagne that you want with age. Fruit is still showing in balance with the tertiary development, definitely has not gone too far yet. Really delicious!

Beautiful wine. Bubbles in column. Fresh with light but delightful toast and brioche flavors. Medium body without any heaviness. Some zesty lemon notes. Very nice finish.

Fully mature, this explodes out of the glass with toffee, coffee, roasted, caramel notes. 1989 was a very hot year and it shows in the level of maturity in the fruits you get on the palate. This is drinking well now, no point in keeping this much longer, as the acidity level is not super high.

Disgorged in 2016 so essentially an RD 1st bottle not showing well, 2nd not great but better: Mushroomy nose with a bit of orange, light and citric on the palate, some VA, sharp and a bit one note but opens up after time in the glass with some meatiness and creme brulee on the finish. Still a bit disappointing

Bollinger 1953-2009: From magnum. I am not sure how to describe it, as it had all the typical best qualities of a mature champagne and it had them in spades, alas I am not a poet. Brioche, toast, caramel, excellent balance and lenght, salty feel on the palate. Once it is in the glass, you just marvel at it silently, a sign of an outstanding wine. Unforgettable showing, my WOTN. It was compared to Sean Connery as a James Bond - charm above all else.

Light gold. Smells and feels a touch tired at first but quickly springs to life with big citrus acid and excellent minerality. Showing great brioche, sweet caramel, and baking aromas while still delivering good power and depth. Like green apple but with rich almond butter spread on top.

Dry and refreshing on the medium to fullbodied palate with fine grainy acidity and slightly fading moussé. Shellfish, apple, stonefruit and some beans. Long. - Small pearls. It's balanced with a full body. Polished texture - (Lieffroy, DK) Wow. What a breathtaking bottle. Almost perfect. Bubbles faded ofcourse due to age, but a sloght mousse persisted through the whole buttle. but the rest!!! You need to appreaciate mature Champagne. But if you do, drink these bottles now. brioche, peach, abricot, nuts, sherry in a wonderfull blend. Dark, honeyed color.

Mature and showing very nicely. Honeyed yellow color. On the nose, yeasty, with honey, toffee, and apple notes. In the mouth, big and powerful still, showing some oak influence and dominated by viscous, rich honey and toffee flavors, along with a surprisingly refreshing tart apple fruit and acidity. Long finish. Very pleasant, but a bit more mature than my palate prefers. A-

1993 Burgundy Lunch (The Ledbury, London): Sweaty nose, toffee, cream, and on the palate a sherrylike marmite savouriness - but it grew fresher in the glass, and tasted a lot better with the calamari canapé.

WIMPS 1993 Burgundy Lunch (The Ledbury, London): WIMPS 1993 Burgundy Lunch- medium gold color, nutty biscuity nose, plenty of nice small bubbles. at first visit some oxidation on the nose and the mouth. leaving it in the glass helped as it began to show more freshness and some honey. i thought better in the mouth than on the nose. a nice glass of champagne but not great. Dinner at the Blanchards (Newburyport, MA): Incredibly vibrant with no signs of age at 17 yrs, the color was golden with fine bubbles. Nose was pure pear. On the palate I tasted pear, vanilla, and a hint of toast. The finish--long and subtle. This was the most memorable experience I have ever had with a champagne.

Classic warm, relatively full straw yellow, slightly ruddy; deep, mature Pinot Noir nose, biscuity, oak beautifully integrated with freshness and fruit; rich and juicy, excellent weight and balance, very harmonious, satiny texture, lovely ripe acidity; very good length. A very rich Grande Année, for which I would tend not to wait too long.
