Tasted over 6 hours -translucent light-med gold -some reduction, ripe apple, opens up as it warms to room temperature -med/med+ acidity, med/med- weight intensely sappy mineral and dense yet faded and somewhat unidimensional ripe apple and citrus fruit, good length -this last bottle is still in fantastic shape barely losing any of the blazing intensity it had in its youth even as the fruit evolved from citrus to apple as wines from this Domaine seem to do with maturity

Transparent gold, Splendid acidity and very very long backend. Iode, slightly saline, and super dry mineral. Not so much flowers nor honey, but I much prefer that way for a Chablis. Wow this could be a Sabre from a top Samuraï... if one can get what I mean.

Tasted over 2 hrs -translucent med gold -subtle ripe honeyed sweet lemon slight lanolin -med+/higher acidity balances well with searing minerality and markedly sappy extract, med weight ripe apple almost apple cider little bit of lemon pith -this bottle drinking beautifully now and probably at peak without any excessive oxidation for its age, showing some maturity but retains all of its energy, very '07 and very Dauvissat, easily has 1er cru class and intensity

PopnPour, tasted over 2 hrs -translucent med gold actually becomes lighter/paler over 2 hrs -reticent, sulfur slightly advanced nose -med+ acidity, some mature elements peeking in trace lemon initial slight oxidative note dissipates over 2 hrs -still structured, fruit fading, mature; seemed a bit oxidized initially but righted itself with some air

Holiday Dinner at Nathan's (Nathan's House - Chicago, IL): Baseline chablis my arse! Like drinking seawater, this was gritty and fresh with lots of cool fruit. This still had some of the good freshness they can have upon release, but this had some of the fun secondary oceanic tones that some of their 1ers and GCs get with more time. You're a clown if you're not cellaring these.

I'm hoping that this was an off bottle. While it wasn't oxidized, it was flat. It showed that "old wood" and hazelnut that is very Dauvissat, but there was a hole in the midpalate and the wine didn't seem very together.

PopnPour, tasted over 2 hrs -translucent light/med gold -some initial reduction funk, slight lemon -bracing acidity, quite sappy and almost creamy textured mid-palate with an essence of lemon, intense piercing finish with moderate length -nearly explosive energy and tension, on the citrus side of classic Chablis, only a lack of complexity belies this is a humble Villages, baby fat has melted away and on a beautiful drinking plateau now

As Deb has taken a recent liking to the 2008 version of this wine, we've been drinking that one frequently, and it seems ready to go. The '07 is far more serious and multi-faceted. Initial notes of matchstick that stay with this wine over the course of a few hours, along with more noticeable dry extract, much more tangibly so than in the '08. Lemon-tinged palate, showing great energy and cut. So much better than the '08 right now. With air, some saline, minerals, really deft and proportioned, with a very long finish that gives impression of freshness, clarity, minerally, almost wintergreen cleanness. Just wow.

Pale with green glint. Unmistakably "fishy", iodine Chablis aromas. Light, unerringly dry, chalky, excellent acidity and underripe lemon tartness. After an hour, some floral aromas rise out of the glass. Surprisingly young and classic, with a style and weight that bring to mind the way 2004s are structured. No rush.

have drunk 3 bottles of this over the past few months, as it is really coming into a great place for enjoying now. The wine has shed all the tightness, and is much rounder and drinkable without having lost the acid and fruit. Floral, mineral, peachy, perhaps a touch of oak but not overwhelming. this has now become my top end "house" white for the next year or so.

Good showing. Clear on the palate with tinges of a tan hue and light lemon. One can tell that this has seen some wood, but the influence is light and the wood has integrated well. No hard edges, there is a savory, more sour than sweet component, good underlying tension and impressive grip. Drinking well now.

Crisp and steely with some nice citrus notes and surprisingly delicate peach flavors lurking under a mouthwatering acidic core. This is not particularly complex, but is a very nice village level Chablis

Tight, painfully acidic still. Saline, stone and grapefruit flavors. Left it open for day 2 - it was still very tight, but had opened up. Slightly more floral. Once again, a wonderful wine, especially with food, but it is nowhere near ready to drink. Amazing. I guess I should go back and read my own tasting notes before I try to open another bottle in 2 months - but this one was the Dauvissat-Camus label and I had it listed in a different spot.

Immediately very expressive with terrific Chablis minerality and powerful, fresh fruit. A lovely structure that succeeds in being both smooth and serious at the same time. The balance is just about perfect. The wine was still drinking well 3 days after opening. A great village Chablis.

Amazing - this wine is not at all ready to drink. Intense, minerally, citrus, diamond hard wine shows all sorts of promise, but it is just too young to drink now. Much more open on the second day, but it would have been interesting to leave it another day longer. Be glad you have it, just don't drink it yet.

So the '07 Fevre Fourchaume just wasn't up to Deborah's standards, so she opens this. Ok, they both rock. This one a bit rounder than the laser-like Fevre, with a touch of creme underneath the crystal-clear fruit. Terrific sweet/sour balance, very clean fruit alongside salinity. Better on the second night, more open. Terrific base level Dauvissat, more precise than the '06 and younger and clearer than the '05 base level Dauvissat Chablis.

Great clarity is my first impression, and then I wonder whether there are tannins showing in this Chablis. If so, they are talcum-powder-like, fluffy tannins; really interesting texture, like the '05 I brought to Brooklynguy's place two weekends ago, but more youthful and primary. Terrific acids and salinity on the palate. The finish is impressive, with screeching minerality and a note of creme fraiche, not oaky butter cream. The palate shows a touch of apple juice. With more air, again impressive clarity, the apple juice recedes, and we're left with very nice white fruit, minerals and acidity. The nose is "cool", pure mountain after-the-rain air; wow.

Beautiful clear pale yellow color. Nose offers dull notes of citrus fruit and mineral. On the palate this shows nice fruit concentration but with a heavy dose of acidity. Finishes very nice with zingy acidity and nice flavors lingering. This is nice enough, but I'd recommend buying the higher end versions of Dauvissat in 2007.

Oh boy ! This was pure rock juice ! Incredibly mineral : flinty and chalky. Nose is dirty with smoke and underbrush/lemon/green pea Started with some pineapple on the palate to evolve to lemon notes with the slightest butter note on back palate. Nervy acidity but balanced. Finish is a little short but got better day 2. Austere, this is an outstanding Chablis showing the piercing 2007 acidity and will not please everyone for sure.

Much like my experience with 2007 Fevre Champs Royaux. Restrained fruit on palate. Restrained bouquet. Must be my personal taste, but I don't get the excitement about '07 Chablis. Hard to pay 30 bucks for austerity. Time for me to move on to another white grape experience!
