Looked like a wine that had plenty of whole bunch, but when the de-stemmed Cathiard was revealed, we knew we had been tricked by the vintage. Loads of rose petal and dried flower action. Red of fruit. Some beef stock and Hoisin development sneaking in. Silky and layered. Drinking somewhere near its apogee.

Cathiard Malconsorts Vertical (Longo Seafood): Where the 2001's strength was on the palate, here on the 2007 it was on the nose. Beautiful, multi-dimensional fragrance from pop n pour that continued over the three hour tasting. It's a wine that shows its class, but also clearly shows the vintage, with lots of elements coming together in a fresh and seemingly finished package. The wine is laced with herbs (causing some to guess stems), soil/spice, and has a more reserved fruit expression similar to the 2001, but with slightly sweeter fruit and less assertive acidity. Not especially long or complex on the palate, it still possesses an aristocratic air to it, and unsurprisingly, acting like an excellent 2007.
Served second in a vertical with a 2001, 2008, 2014, and 2019 this showed the best aromatics, my overall #2 of the tasting.

Sixteenth Annual White Truffle Dinner (Inovasi - Lake Bluff IL): In 02/07/10 vertical. Complex array of red cherry, red berry, black cherry with rich baking spice. Great balance and charm with good weight. At its peak. My favorite of the vertical for enjoyment today, but the 2010 will eclipse this 2007 in the very near future.

The 2007 Cathiard Malconsorts is drinking gorgeously. High-toned and distinctively sleek red cherry and sweet spices. Admirable purity and delineated floral note. Medium bodied, well-balanced ith a good sense of energy. Delicious. (93/100)

New Year's Eve Dinner (Herald & Teni's Place, Hong Kong): Semi translucent almost black-red. Nose is almost pencil lead precision, forest floor, fresh large strawberries, very small red berries. Palate is absolutely fabulous... quite stunning, the epitome of forest floor, crisp acidity, gorgeous integration of fruit, oak and lovely early secondary elements starting to show. Very whole but with a decade or two ahead of it to fully develop. 92 for now but will clearly go considerably higher in the future.

We opened this knowingly that it would be early and on the young side. But a 27th Anniversary demands something as great and having paid 20% of current value back in 2010 made it even sweeter. We have a total of 6 and we plan on spacing these a bit over the next few years. Opened and left to rest for a good 30 minutes. Young indeed but not austere and really elegant and on the fruit. Soft red fruits, some roses , dark undertone. The elegance of a ballerina here, nothing overdone, all in harmony and although we only caught a glimpse at this stage of its potential a super wine. 3rd of 3, decanted 45 minutes, perfect cork and level, distinctly browner than last bottle, on nose and palate still some youthful edginess as if just waiting to come together properly, nice enough if not quite as good as a Cathiard Malconsorts should be, no rush to drink but lacks grip. Burgundy Dinner with Friends (S.K.Y. Restaurant - Chicago IL): Slightly reductive start. Ripe black and red cherry aromas and flavors with both sweet and savory spice. Unmistakably Vosne styling with an intense semi-modern, slightly oaky character. Perhaps less nuance than I recall from the last few times tasted a few years back, but this kept hinting at its greater potential.

Top 1er Cru Burg by Benchmark Producers (Imperial Treasure Fine Teochew Cuisne @ Tanjong Pagar Center): Single decanted at 630pm, serving at 815pm. Pale garnet. Very complex and rounded aromas of Autumn leaves, cinnamon, hoisin sauce and sweet blue fruits. Good sweet ripe fruits lushness on the palate, with very perfume spices in the mouth. Long, silky fine tannin but still firm for the good backbone. Lovely wine and drinking fabulously tonight. Not the typical powerful malconsorts but rather, a subtle, elegant one.

Coche and Cathiard: A replacement for the 2001. Stalk, earth, strawberry, pretty musky floral perfume and cherry. Pure on the palate, the fruit has excellent delicacy and super persistence. A delicious wine, full of joy and energy.

Really hitting it's peak now. This is what the Burgundy fuss is all about. Beautiful dark hue, a nose with v little barnyard and good rich dark fruits coming through. Long long complex flavour with hints of violets. Bravo

Had this at Goodman London during a nice long evening of various fine wines. I am not a huge Burgundy drinker as I do find the region tricky to navigate and have had few truly good red Burgundy so far. This bottle I must say was hands down the very best I have ever had. It was so pure, the fruit was so silky, it was absolutely open for business, a pure delight. I believe it was decanted for ~3 hours prior to serving. It was really singing. And as with all truly great wines it was hugely drinkable, so much so that two people on the table out of three (myself including) thought the personnel at the restaurant had removed the decanter and there was wine left - although in fact it been fully poured between the three of us. It certainly is not a wine of huge complexity and some may argue that this precludes it from scoring very high. To me though it more then made up for it by its sheer purity. Now I understand why a Premier Cru Burgundy from not even a top vintage sells for the price of a Mouton 05. If only that weren't the case I would stuff my cellar with it... 1st of 3, pnp, perfect cork and level - limpid, translucent plummy red, some development; attractive, quite complex, red (currant) fruit driven bouquet, touch of meat, iron and spice; medium bodied, long, persistent and balanced, more fraises du bois than currant, involving, ready. F+ (18)....all the virtues of 07, pretty and attractive, if without the heft of a top vintage, more pleasurable on night than Roumier BM 01!

Vosne 1er Cru Dinner (Nikki's): An absolute revelation - this was about as beautiful and preocious a young red 1er Cru as I can remember ever having. Wow. There were just fireworks on the nose - sweet flowers first, then wram, earthy spices; after that, a tiny remnant of vanilla and cream from the new oak; then a touch of earth, twist of dried herb, and wafts of sweet dark cherries. A glorious bouquet. The palate was wonderfully fresh and open, with a surprisingly soft and silky mouthfeel, almost caressing the palate with a glowingly pure robe of cherries and sweet red berries. There was some of the power of the terroir on show here, but it was all wonderfully effortless, with weightless, transparency to it all. Great back-palate too - powering into an effortlessly long finish with a slight bittersweet twist of herbs, cardammon, cloves, all riding on a gentle chew of the finest tannins. Wow. A truly top class Malconsorts, this married power with delicate finesse. It has the bones to age really very nicely, but given how ridiculously well it is drinking, I would happily down all of this right now. On a night filled with wines from more heralded vintages, this bottle stole my heart.

Dinner with JonnyG, again: Blind. Very perfumed with strawberry, cherry, rhubarb and redcurrant, with five spice and musk in the background. Continued to lift and improve in the glass. Very good texture on the palate, there is bright fruit and the acidity feels spot on. Really impressive.

Alcohol :: 13.5% Opened for 9hrs. This is a richer version but no necessarily better focus. More on fruits complexity with red floral and savoriness, also touch of autumn leaves. Medium bodied. The tannin is silky but also firmer, integration is equivalent to the Dujac. The richness is off the chart, while not bring heavy. Still primarily fruits driven but the secondary complexity is started to form. Super rich, intense finished and persistently long and sweet. Excellent. 93-94+

Opened, but not decanted, roughly 3 hours before serving. Another fantastic showing. A very dense, highly spicy nose of red and black berry fruit intermixed with some oak. The same fruit comes through on the palate as well. Great texture. Very fruit forward and seemly not holding anything back. Medium plus body with a long, spicy finish. Although this should continue to hold for awhile yet, I don't see my bottles lasting more than another year or so.

Slight decant. Red fruits and spice on the nose with some floral. Sappy red fruit on the firm palate that definitely needs some air or more time in the bottle to come around. Mineral backbone with great acidty. Medium body and finsh. I look forward to seeing how this evolves and I don't plan to open any of my bottles for at least another 5 years.

Another Saturday at Knightsbridge - mostly blind (Northbrook, IL): Lots of red fruit with some nice spice. Bit of rose petal started to emerge after open a bit longer. Oak seems a bit prominent right now, but will certainly integrate nicely in a few more years. Better when tasted an hour+ after first poured. Slightly sappy fruit, somewhat dominated by acidity right now, but I think it will be very interesting as it gains weight over the next 4-8 years.

Yep, he's done it again. This is truly impressive, the concentration is amazing. Had it blind and I was given a clue that led me to Cathiard. Given his range of wines, I thought this could only be either Malconsorts or Romanée-St-Vivant. But it did not really have the structure of a RSV at this level, so I leaned towards Malconsorts.

Decanted and consumed over the course of an hour. Started off very light in color and transparent, but picked up color over the hour. Aromatics of crisp, dark red fruits, some wood toast, and brown spice (which developed into a definite cinnamon over time) on the nose. Violet and rose petal notes began to emerge after about a half hour or so. Crisp fruit on the palate with a firm mineral backbone and great acidity throughout. Long finish. A very pretty wine that just kept getting better and better. Would definitely recommend a decant if drinking now.

Tanaro Wine Dinner (Palate Food + Wine - Glendale, CA): The level of concentration is almost new world here. While still exhibiting some of its oak, this muscular wine boasts gamey notes of black cherry, forest floor, wood smoke, black plums, smoked meats. Earthy and persistent on the palate with impressive depth.

Selection Becky Wasserman Tasting (Tribeca Grill - New York, NY): Tasting, brief note. A sensational 2007. Great floral start with ripe red fruit. Comes across as slightly delicate to start with a lacy texture, almost Chambolle-like. Picks up sneaky power and heft in middle, but I expect this will pick up considerable weight with time in the cellar, partly as the oak softens and integrates. Great spice on finish. Elegance in a bottle.

Coche & Cathiard -- Go Big Then Go Home (Double Bay, Sydney): My second chance to taste this. Still fairly primary, with bright rhubarb and cherry notes alongside some waxiness. Balanced and energetic, great stuff indeed.

Lots of fresh red berry aromas and flavors. Bright and vibrant with baking spice throughout. Simply delish. Moderate depth. New oak still slightly pronounced, but other than that this is drinking perfectly.

Dinner with JonnyG, again: Blind. Very perfumed with strawberry, cherry, rhubarb and redcurrant, with five spice and musk in the background. Continued to lift and improve in the glass. Very good texture on the palate, there is bright fruit and the acidity feels spot on. Really impressive.

Opened for 9hrs. This is a richer version but no necessarily better focus. More on fruits complexity with red floral and savoriness, also touch of autumn leaves. Medium bodied. The tannin is silky but also firmer, integration is equivalent to the Dujac. The richness is off the chart, while not bring heavy. Still primarily fruits driven but the secondary complexity is started to form. Super rich, intense finished and persistently long and sweet. Excellent. 93-94+

Opened, but not decanted, roughly 3 hours before serving. Another fantastic showing. A very dense, highly spicy nose of red and black berry fruit intermixed with some oak. The same fruit comes through on the palate as well. Great texture. Very fruit forward and seemly not holding anything back. Medium plus body with a long, spicy finish. Although this should continue to hold for awhile yet, I don't see my bottles lasting more than another year or so.

Another Saturday at Knightsbridge - mostly blind (Northbrook, IL): Lots of red fruit with some nice spice. Bit of rose petal started to emerge after open a bit longer. Oak seems a bit prominent right now, but will certainly integrate nicely in a few more years. Better when tasted an hour+ after first poured. Slightly sappy fruit, somewhat dominated by acidity right now, but I think it will be very interesting as it gains weight over the next 4-8 years.

Yep, he's done it again. This is truly impressive, the concentration is amazing. Had it blind and I was given a clue that led me to Cathiard. Given his range of wines, I thought this could only be either Malconsorts or Romanée-St-Vivant. But it did not really have the structure of a RSV at this level, so I leaned towards Malconsorts.

Decanted and consumed over the course of an hour. Started off very light in color and transparent, but picked up color over the hour. Aromatics of crisp, dark red fruits, some wood toast, and brown spice (which developed into a definite cinnamon over time) on the nose. Violet and rose petal notes began to emerge after about a half hour or so. Crisp fruit on the palate with a firm mineral backbone and great acidity throughout. Long finish. A very pretty wine that just kept getting better and better. Would definitely recommend a decant if drinking now.

Tanaro Wine Dinner (Palate Food + Wine - Glendale, CA): The level of concentration is almost new world here. While still exhibiting some of its oak, this muscular wine boasts gamey notes of black cherry, forest floor, wood smoke, black plums, smoked meats. Selection Becky Wasserman Tasting (Tribeca Grill - New York, NY): Tasting, brief note. A sensational 2007. Great floral start with ripe red fruit. Comes across as slightly delicate to start with a lacy texture, almost Chambolle-like. Picks up sneaky power and heft in middle, but I expect this will pick up considerable weight with time in the cellar, partly as the oak softens and integrates. Great spice on finish. Elegance in a bottle.
