Really beautiful Chablis, in a great spot. Balanced, elegant with citrus and mineral character, but age has softened it a bit. In my opinion this is even more interesting, and more pleasing, than it was a few years ago. Softness suggests it may be on the downslope, so I plan to finish my remaining bottles now, while it is still outstanding. As expected, paired well with veal Milanese, linguine vongole and shrimp scampi.

The color is lighter compared to the bottle I opened in February. Intoxicating, intense nose of lemon juice, sea salt and wet stones. Broadens out on the palate with intense marks of green and yellow fruit, brine and stones. There’s also a good dose of spices in the mix. This is rolling out now, with volume and complexity. As good as it gets at this level I think. Textbook Chablis.

On the move, color has turned to medium yellow. Some evolution on the palate, more relaxed now, though still with notes of wool, lemon and stony fruit. Has gained in complexity, shows more complexity with marks of Asian spices on the back. Lovely, classic Chablis.

Tasted over 2 hrs -translucent pale gold-green -lemon wet rock -high acidity, med- weight all lemon and stony minerality, good length -licking lemon juice off a rock, classic Dauvissat structure with the blazing acidity of the vintage, this is quite remarkable - still fresh no oxidation no overt mature elements only the fading fruit belies its age

Takes a full 24 hours to open up and then another couple of days to show its best. Darker compared to the 2008 Brocard Vaulorent, more depth, a more serious wine. Notes of lemon, sea shells and chalk. More complexity to come.

Light yellow. In the nose, this is great, quite creamy, green, herbal, citrussy, very concise, fresh and kicking. In the mouth, it‘s tight, dense, acidic, creamy again, slight adstringend, very finely woven in the finish. Outstanding Village Chablis.

Truly enjoyable Chablis, drinking great right now. Some sulphur on the nose, which blew off quickly. Very well balanced. Good balance of mineral and sweetness. Salinity was the most pronounced characteristic, and that made it an excellent match for the ceviche with salted avocado. Also paired well with oysters. Very light oak character detectable, but integrated well and not at all overwhelming or off putting. Very good showing for a Chablis at this level.

Ultra classic Chablis here and as I have experinced numerous times with Dauvissat's wines before - it firms up after a night in the fridge. Citrus, stones and salty ocean on the nose. So much material here, so much depth on the palate, this has so much character. A very young showing, delicious now, but there is more to come. Impromptu night at home with Niels.

Medium yellow. Swirling aromas of iodine, sea shore, and citrus. Marvelous combination of underripe lemon/lime, salinity, and driving acidity with the texture of a fine Premier Cru. What a pleasure to drink this overperforming village wine now, although this showing makes me feel confident that it will easily go on for another 5+ years. Fantastic Chablis.

This hasn't moved much since my last btl 27 months ago. Still highly dominated by grapefruit, biting acid and a bitterness on the finish. Minerality is very good but overshadowed by a lack of overall balance. A little better with food. Intense but out of balance. This was too often a chore to drink. As someone else mentioned, almost unripe fruit. Disappointing for the $32 I paid on release and would be even more so at today's release prices hovering around $50 for the 2013. Only positive, no sign of premox. I'm largely off the Dauvissat bandwagon. Some btls rock, many don't for me and the current pricing is crazy.

Nice expressive nose of lemonade, hay, and a lots of iodin. Perhaps some disturbing animal notes behind. Mouth, salty, superdry, fresh, energetic, structured as it would have some tannins, highly mineral with some meringue notes, and fresh cutted grass. This wine is close to a strong champagne. A masculin style, very good indeed. A bit early.

I've been pretty down on past bottles of this wine, but I think that this wine is finally in a good spot. I was sipping a glass toward the end of a nice summer Saturday, when Deb took a sip and was instantly impressed. So we grabbed another bottle, ordered some sushi and headed to the beach. Really good showing, clear palate with shades of tan, nice lime-tinged fruit, notes of salted butter, a touch of creme fraiche and rounded sides. This seems to be at peak and I would drink short to mid term. Tasted thrice recently, with consistent notes.

Pretty similar to my tasting note from last month. Good, but nothing special. Performs only average for a 2008 Chablis, even lower when you consider the producer. Much better options from '08 Chablis at its price point.

Better showing than a bottle this past December, this one cleaner and more enjoyable. This comes on more tan shaded than clear, light hazelnut notes, round in the mouth, seemingly ready. This is good, but could use better cut and energy. Somewhat disappointing in that, but for the name Dauvissat on the label, I would have written this wine off as a decent but uninspiring bottle of '08 Chablis. The name on the label makes me think twice, but then I get to the same conclusion. Opened two bottles, with family, celebrating SJR's birthday and R and O's engagement.

This was actually difficult to enjoy. Light gold color, decent clean nose. Chewy, pungent grape fruit and a bitter finish was largely all we got on the palate from this one note btl. We had almost a glass leftover and that, rarely happens. Not a great value at $32. Tried the left over glass again about 3 hours later but it had started to take on oxidative notes and was too warm.

Not great, overall. Clear fruit, with a hint of yellow. Hint of whiskey barrel. Is this oxidizing already? Is it just showing its oak more than in the past? Was I wrong to buy 1.5 cases and not drink them up right away? Open another bottle soon and re-evaluate. A bottle earlier this autumn was much, much better.

Hard to believe it's more than 2 years ago I tasted this wine last. A very saline nose with orchard fruit, white flowers and citrus lurking in the background. Lovely. Generous palate, key lime pie, a slight hint of apricot. Precise and piercing acidity, superb balance. This is a beautiful wine. Will follow over a few days.

Good showing. Very clear palate, clear fruit, lemon, huge minerality and tangy acidity, with just a trace of old oak, an attribute I often get in Dauvissat's Chablis but here it is just a background note. The palate feels weightless and the wine is long in the mouth, resonating with minerality and acidity. This appears to be right in the zone. Goes down exceedingly easy. Update: One glass remained over night. It was excellent after 24 hours: clear palate, minerals, acidity and a very intriguing and pleasing sesame-like taste to the palate, like Halva.

Rather simple on the first night, with apple juice notes. Left 4/5 of the bottle for the second night, when it showed better. Palate gives more of a tan impression than clear or white fruit (although the wine as a whole is very clean), along with light hazelnut, salted butter notes and old wood. Not as much in the taut, acidic, mineral and tensile style; mellower, seemingly in its drinking zone. Good texture. Alcohol sticks out a drop, like a well-made eau-de-vie where one smells fruit but trace alcohol as well.

Edgemont Guys Come to Westport and We Drink Chablis: Just as good as the 2008 Billaud-Simon Chablis Vaillons that preceded it, but not as assertive, more somber. Good focus, good minerality, but here the oak is noticeable, although it seems like old wood and imparts some bottom notes of butter cream, and is a major part of the palate but not a dominant part. More bass than the high alto notes of the Billaud.

I had no intention of opening a bottle of this wine, until I saw some more on sale and thought I should open one to see if I should order more. Palate shows simple apple cider at first, but then grows in strength. The fruit comes across as more golden than clear, with a prickly texture, both of which I suspect are the result of some oak. But the oak is not excessive and the wine is just great, with many dimensions to its exterior, and a vibrant, energetic, expressive palate. Terrific, juicy acidity contributing to the energy. Sea air notes. Long finish. Lots going on in this young wine, already. Very easy to drink the entire bottle in one night, something I don't usually do. So, I ordered another case.

Decanted and poured, this wine required about thirty minutes in the decanter to show its best. Unlike previous bottles, airing brings out more accessibility and better integrates the acidity on the finish. This should improve with an additional year or two of bottle age.

Popnpour. It shows some flowers and fruity lemony notes. Some mineral. Palate is very fresh with immidiate acidic drive that keeps it dancing on its toes. Fruit is citrus but balancing on some yellow stone fruit. Mineral note is there but not pronounced. Finish is of medium length with tart nectarine fruit.

faint gold with green reflexes. nose not very intense, keeps changing in the glass. White peach, apple, melon, pineapple, but mostly pebbles. crisp acidity but still some roundness in the mouth, lont finish on minerality. terroiristes will appreciate the pebbles juice, I would prefer a bit more fruit.

All right, so Pknut convinced me to pull the cork on one of these. Pale yellow color with a hint of green. Very, surprisingly, expressive nose of salty ocean, something more ripe and sweet than lemon (tangerine/orange) and a whiff of mature cheese. Smooth and almost silky on the palate with a creamy texture. Not your mainstream type of Chablis - there is more nuance and complexity here that goes well beyond the lemon/mineral flavors. The wine possesses a certain spiciness which is quite intriguing. I'm surprised about how well this wine is drinking now and I wonder if it will shut down in the near future. Enjoyed with grilled wild salmon marinated in lemon juice, olive oil and thyme. Great wine.

This wine was decanted and poured. It is the second experience with the 2008 Dauvissat Chablis. At this point the wine requires a few hours in the decanter to show its best. Initially this wine is tense, backwards and unyielding with acidity dominating on the palate. Airing softens the wine and brings the components into better balance. This will require a few years of bottle age to show its best.

A very fresh, mineral nose, with citrus. You can tell right off the bat that this is a very lively, vibrant wine. On the palate, notes of green spices (cardamom, anise), with extremely focussed acidity and certainly the citrus quality of Chablis. Lacks the chalkiness that I enjoy, but there is certainly minerality here. This would work very well as a palate cleanser.

Blind tasted. Chardonnay nose with grapefuit, quince and some alcohol poking through. Extremely mineral with sharp grapefruit acidity. I can see how mineral lovers will like this but this vintage is too austere for me...

Nice expressive nose of lemonade, hay, and a lots of iodin. Perhaps some disturbing animal notes behind. Mouth, salty, superdry, fresh, energetic, structured as it would have some tannins, highly mineral with some meringue notes, and fresh cutted grass. This wine is close to a strong champagne. A masculin style, very good indeed. A bit early.

Nez assez intense, minéral et légèrement citronné. Bouche dense, délivrant des notes imprécises de vieux bois. Malgré ce petit défaut aromatique, le vin montre un grand équilibre, avec une acidité bien intégrée. Il s'est montré aussi plus ouvert que les précédentes bouteilles.

This seems to be at peak and I would drink short to mid term. Tasted thrice recently, with consistent notes.

This was actually difficult to enjoy. Light gold color, decent clean nose. Chewy, pungent grape fruit and a bitter finish was largely all we got on the palate from this one note btl. We had almost a glass leftover and that, rarely happens. Not a great value at $32. Tried the left over glass again about 3 hours later but it had started to take on oxidative notes and was too warm.

Update: One glass remained over night. It was excellent after 24 hours: clear palate, minerals, acidity and a very intriguing and pleasing sesame-like taste to the palate, like Halva.

Rather simple on the first night, with apple juice notes. Left 4/5 of the bottle for the second night, when it showed better. Palate gives more of a tan impression than clear or white fruit (although the wine as a whole is very clean), along with light hazelnut, salted butter notes and old wood. Not as much in the taut, acidic, mineral and tensile style; mellower, seemingly in its drinking zone. Good texture. Alcohol sticks out a drop, like a well-made eau-de-vie where one smells fruit but trace alcohol as well.

Palate shows simple apple cider at first, but then grows in strength. The fruit comes across as more golden than clear, with a prickly texture, both of which I suspect are the result of some oak. But the oak is not excessive and the wine is just great, with many dimensions to its exterior, and a vibrant, energetic, expressive palate. Terrific, juicy acidity contributing to the energy. Sea air notes. Long finish. Lots going on in this young wine, already. Very easy to drink the entire bottle in one night, something I don't usually do. So, I ordered another case.

Decanted and poured, this wine required about thirty minutes in the decanter to show its best. Unlike previous bottles, airing brings out more accessibility and better integrates the acidity on the finish. This should improve with an additional year or two of bottle age.

Popnpour. It shows some flowers and fruity lemony notes. Some mineral. Palate is very fresh with immidiate acidic drive that keeps it dancing on its toes. Fruit is citrus but balancing on some yellow stone fruit. Mineral note is there but not pronounced. Finish is of medium length with tart nectarine fruit.

Very, surprisingly, expressive nose of salty ocean, something more ripe and sweet than lemon (tangerine/orange) and a whiff of mature cheese. Smooth and almost silky on the palate with a creamy texture. Not your mainstream type of Chablis - there is more nuance and complexity here that goes well beyond the lemon/mineral flavors. The wine possesses a certain spiciness which is quite intriguing. I'm surprised about how well this wine is drinking now and I wonder if it will shut down in the near future. Enjoyed with grilled wild salmon marinated in lemon juice, olive oil and thyme. Great wine.

This wine was decanted and poured. It is the second experience with the 2008 Dauvissat Chablis. At this point the wine requires a few hours in the decanter to show its best. Initially this wine is tense, backwards and unyielding with acidity dominating on the palate. Airing softens the wine and brings the components into better balance. This will require a few years of bottle age to show its best.

A very fresh, mineral nose, with citrus. You can tell right off the bat that this is a very lively, vibrant wine. On the palate, notes of green spices (cardamom, anise), with extremely focussed acidity and certainly the citrus quality of Chablis. Lacks the chalkiness that I enjoy, but there is certainly minerality here. This would work very well as a palate cleanser.
