Ninety-minute decant as a result of a lesson learned on 11-18-2021. This sped up the development of the wine at the table but otherwise in line with the profile of that note.

Forty-five minute decant through a screened and aerating funnel. Very slight amount of sediment. Soft red fruits during decant. After resting in the decanter, the wine was bright ruby in the bowl all the way to the rim. Initial notes showed a typical red-fruit grenache nose of strawberries and unripe raspberry with some soy sauce. Similar flavors in the mouth, and a very soft finish that was commented by all at the table. About 20 minutes thereafter, the wine changed. Bretty and almost mildewy aromas popped up and the wine firmed up as well. But wait, there is more....about another 25 minutes thereafter, the brett and mildew disappeared and much stronger red fruit aromas arose. In the mouth, wine showed deep and powerful raspberry fruit with black cherry and had acquired a nice acidic backbone, milky smooth texture and a long and lovely black licorice finish. The final stage lasted through the rest of the meal and more than held its own with a smoky Tabasco-based marinade. This bottle still had a couple of years in the tank. Next time, I will decant for 90 minutes before consuming.

My last bottle of this delicious CdP drank with a grilled pork loin chop. Concentrated dark fruit, licorice, smoke and earth. A real WOW bottle. I believe this is at peak. Drink or hold.

2007 Châteauneuf-du-Pape Tasting at Winetasters of Toronto Club (North York Memorial Hall): 2007 Patrick Lesec Châteauneuf-du-Pape Pierres Dorées was clear and medium ruby in colour with a noticeable amber rim. The nose showed its maturity with bouquet of Worcestershire sauce, forest berries and earth. On the palate, the Rhone blend was spicy, medium-full bodied and medium-high acidic. The tannin was quite grippy and youthful at this stage, in contrast to the bouquet. Flavours of berries and minerals led to a finish of medium-long length. The personal rank was the fifth out eight, and the table rank was the third. The negociant bottling had an annual production of 1,100 cases. The blend composed of 65% Grenache, 20% Mourvedre, and 15% Syrah, and the grapes were not de-stemmed in fermentation. The stem inclusion might have contributed to a boost in tannin and the extra tannic grip.

It's been two years since I opened the last bottle. The color is still very dark red. The palate still comes across as a bit "stewed" and jammy. Compared to the many CdPs I've had over the years, this one just seems not quite right. The tannins seem completely, or almost completely, resolved at this point. IMHO, drink up.

In a good drinking window. Dark hues. Average nose. Full bodied smooth wine with overflowing dark purple and red fruit. Long finish. Would be happy having a case of these.

Let breathe for about ninety minutes. Plum to opaque. Decent old world nose. Black and blue fruit, full bodied. Not your muted French wine with over 15% alcohol (and yes I know that this is from the Rhone near Avignon, for those who have criticized me in the past) but also not overly complex. Good finish.

Delicious CdP. The wine is an inky black. Big and bold. Dark fruit liqueur, eucalyptus, forest floor, iron, tar, some spice. Tannic backbone. Looong finish. This is drinking well now but will last many years.

A fine wine for discovering why Chateauneuf du Pape is rightly world famous. Dark purple and delightfully perfumed. Gentle mouth entry with enough acidity to be refreshing and enough tannin to not be flabby. Very tasty Grenache flavors closest to red raspberry and red cherry. A softly caressing texture and a smooth and flowing swallow. Nicely aged, still in superb shape, drink anytime but no hurry to consume.

Popped and poured. Very different than the first bottle a few years ago. This has opened up and is ready to go. The fruit is sweet, but not very complex. It's mostly red fruits with a bit of herb. The finish is somewhat short. The wine is not very tannic, making it very approachable. I think this has another 5-7 years before it starts to go over.

I unlike most think this wine has plenty of fruit. This wine tastes of plum, fig, cherry, oak slight hints of leather and menthol. I think 5-7 years from now this will taste like a sweaty wet saddle. IMHO what else can you ask from a Rhone. This wine is young probably won't become complex but will evolve into a solid drinker for years to come. I decanted this for 6 hours and accompanied by a simple strip steak with creamed spinach and sautéed mushrooms

PnP. Dark purple in the glass. Huge nose! Soy, dark fruit, tar, meat, olive. On the palate starts off smooth, well integrated, with dark dark fruit, salinity, savory herbs followed by a long finish, heat, slight tannins. Shows off the ripeness of the vintage without going overboard. A very powerful wine that's drinking well right now but definitely has years ahead of it.

Not a rough edge to be found on this one. Some fruit and spice on the nose. New Years Eve dinner with grilled lamb matched perfectly. Texture was really impressive, like a satin pillow on my tongue. Flavor was quite good, as anticipated, but it was a bit gentle. I like my reds with a little more ego and less sophistication, but this did not stop the wife from finishing the bottle. I'd buy a case if I caught another bargain on this one, especially since these can live in the cellar forever.
