Crisp, clean, almost sharp acidic apple, low toast-yeast. Very good aperitif wine, but with the 25 others this got a bit burried. 8g/l but doesn't show it, 4 yrs on lees, young with 2010, 2011 vintages. 89-90

Informal evening @ Roel's (Netherlands): Yeast in the nose, fruit-forward, toast, lemon-peel and -juice. Chalky minerality, whiff of saline aromas like seashells, seabreeze. Well balanced and correct.

Champagne: Metallico, lastra di sale, tagliente, pare il profumo del vento al mare, gomma bruciata, agrumi, bianco del limone, fiori bianchi, bacon abbrustolito. Evapora in una nuvola di bollicine lasciando una lunga progressione prima agrumata e poi minerale, persistente con l'alcool al posto giusto. Semplice ma incisivo, lascia il segno.

I like this Champagne very much, and I called it "adult 7-Up". Notes of white bread and red apple. The bead is coarse at first and then becomes fine. Interesting red apple notes in this BdB. Very good. Brought from my cellar to Cayman.

(12%) No formal notes as I drank with friends. That said I recall it being light and gentle. While enjoyable, I didn't find it memorable. Given this I'd be more inclined to try something different rather than re-visit here...

Really lovely Blanc de Blancs, with white fruit and white flowers, very lithe. Light on its feat, feminine. Good purity, too. Linear, no excess here. Very fine. Loved it.

This is really lovely. Gentle pear and white peach flavors on a firm acid spine. The finish shows a bit jagged initially and yet it is remarkable long. Really enjoyable. I'd like to see what a few years in the cellar does to the jaggedness.

Opened at 10 am but I believe really hit its stride around 2 pm. Which goes with my thought that the older a Champagne is the more air it needs to freshen out.
Here, at 2 pm, crisp, with great crunchy acidity; lemon zest but with a richer choclate note at the end. And hazelnuts. Very well defined. Lovely to sit with.
