(Vilmart & Cie "Cuvée Création" Brut) ($120.00) The ‘99 goes from strength to strength; it smells like cheesy puff-pastry snacks but shows a new and stunning fruit, as the best ‘99s slim down and get quieter and more refined. The complex finish would hardly have seemed possible. The vintage is maybe ready to make fools of us – us – who insisted it was ineluctably simple. In fact this wine is on the way to being – maybe even – sublime.

Neighbourhood friends late night at home. From magnum. Drank in Gabriel Standart.
Appearance is clear, pale intensity, light salmon pink colour. Thin legs. Good frothy bubbles.
Nose is clean, medium intensity, with aromas of oyster-shell, light strawberries, red cherry, citrus cream. Developing.
On the palate, dry, medium+ acidity, medium- alcohol (12%), medium body. Medium+ flavour intensity, with flavours of strawberry, red apple, red cherry, pomegranate, citrus + cream, pink flower, oyster-shell + stony minerality. Sweet and soft mouth-feel, but long clean finish.
Very good quality. Still very fresh and nothing oxidative here. More age in magnum format might yield this into a lovely vinous nutty creamy treat.
