Deep golden yellow color. tight cork, bottom of cork fill level. Pristine bottle. Decanted this wine for 30 minutes before serving, and drank over 2 hours. Initial flavors of guava (which I find very typical Chablis), wet stones. Lemony citrus, which opened up to buttered toast as secondary flavors. Indolic jasmine notes and taste, with the earthy, animalic aromas that this implies. Intense minerality, great acidity. This is an outstanding bottle of wine, and shows what even a premier cru Chablis from Dauvissat can do in a great year. I have one bottle left, and am looking forward to drinking the last one side by side with the Raveneau Vaillons that I have from the same year. Hard to believe that the Raveneau can give this one a run, but we shall see.

Much better bottle than the last one. This one was not old at all. Medium golden yellow color. Not much on the nose, but a rich, cream soda, vanilla and grapefruit flavor with plenty of acidity. Reaches into every corner of your mouth. Really elegant and lovely wine. Well balanced. Amazing level of acidity all the way to the end of the bottle.

Definitely getting a bit long in the tooth, but still enjoyable to drink. It would have gotten a higher rating 5 years ago. Time to drink these up, but it won't make you unhappy.

Two Older Dauvissat Chablis Chez Dauvissat (Chablis, France): This completely changed my mind about this cuvee being only for relatively early drinking. I have had Forest at this age and older, but not Vaillons. Pale, limpid and with more complexity than I've ever tasted from this vineyard, it was excellent.
