  • "There's a lot of fish at Montrose Harbor" (Chicago, IL): Bottled August 12, 2021. Reasonably consistent with my previous bottle, though the apricot felt more pronounced on this bottle today. Of course, the typical high acidity of Cantillon, with just the right amount of natty funk. Delicious.

  • Bottled August 12, 2021. To be sure, if this were fresher I have no doubt that there would be much more fresh apricot profile on the palate, but that said, this is still incredibly apricot-dense (I guess I could always add a drop of Roulot's liqueur to amp up the flavour). High acid, yes, but much more subdued and balanced than other Cantillons, with a very rounded, spherical presence on the palate. I love the aromatics on the nose, and the subtle apricot pit bitterness on the back end -- without the doubt one of the best Cantillon bottlings there is.
