  I've had a lot of fresh Fou and generally prefer it fresh because the fruit character is at its best balance with the inherent Cantillon funk. This is waaaaay less fruit-forward than other fresh Fou I've had. Still great, still Cantillon, still complex, but I really do prefer a more fruit-forward Fou presentation.
