I love this. It's a step above the average NV brut Champagne for sure. If yours is the kind of house that can afford a "house Champagne" this would be as good as it gets.
White flowers, ripe apricots, ripe pears, ripe yellow apple, cotton candy, and a little bit of autolytic yeast on the nose. Medium + intensity of aromas. The palate is a little different. It starts with lighter spices - coriander and white pepper - then shows chalk, limestone, bitter herbs and ripe yellow apples. Medium + intensity of flavors.
Medium body with medium acid and a medium + mousse. Very much worth seeking out, and I can't wait to try their other wines.

Very pale transparent beige, maybe with tiniest bit of moss color On the nose, lime, ripe Granny Smith, jasmine On the palate, also some apricot and carrot Wet stone gives matte satin texture Enjoyable
Saturday Night - Sushi and What we do in the Shadows; 11/4/2023-11/5/2023: Served from half. Cork noticeably more compressed than previous bottles from the same case. Pale colour - not quite straw. Really engaging nose - honeycrisp apple, slight oxidative note, hint of incense. The palate doesn’t quite maintain the level of interest but great fruit, lovely sherbet and chalk on the mid palate.
