  • Absolutely stunning, light yellow color, liquid stones, lime juice, seal salt. Super expressive, wide and broad, piercing. Good clarity of fruit. In a great spot even if this has years to go from here. At Palægade with Per Ø.

  • This is my third evening with this wine, and it has got better and better. But what a sobering (horribile dictu!) thought that you have to keep a wine of this quality for eight days before it delivers its best. Where do we put the bottle for the other seven days. Where do we find the Selbstbeherrschung to leave it alone? Imposssible.

    But we are now there, enfin. What a wonderful dense and compact nose - typical Fevre where full fruit is matched by structure; on the palate, an almost herbaceious (is that how you spell it?) intriguing combination of flavours - mineral, pear, green tropical, but all held together by a formal precision that speaks of wine making skills that are exemplary.

  • So, six days later and this wine has shed its fleece of impermanence. The nose now is fully intergrated with good bright lift; the palate is of sweet mineral, something with slightly tropical flavours, but all held is
    held in check by determining if understated acidity.

    This wine will go on for a long time yet. But in my experience, when it goes down, it will go down quickly (farmyard, woof, woof, is not far away).

  • I think Fadincvaros (please see below) is right: I am drinking this wine too young. But now that I have said this, my feelings are that the wine does not quite have the generousity of fruit (because of the vintage?) that would warrant much longer storage. But in the meantime, we have wonderful bright colour in the glass, those classic Chablis hues of burnished gold. On the lift of the nose, very nuanced combination of flint, lime, pear. Wonderful balance in the mouth, where fullness is restrained through good acidic structure. The wine is taking a bit of time to gain complexity in the glass, but that is slowly coming through (I often wonder whether I should be decanting wines of this quality).

    I'll keep the rest of the bottle until next week, and come back to it.

  • Lovely nose of chalk and flint with just ripe lemon, apple, pear; med. body, excellent concentration, long, lovely well-balanced. 93-94. Newport Seafood Lunner after party.
