Dom Perignon P2/P3 Dinner (New York City): I had 88 P1 a couple weeks ago and it was so giving and delicious. The P3 has so much to offer and is seriously good right now, but I would wait a long time to open. What was instructive, after opening so much wonderful DP before trying this wine, is just how clear P3 can separate itself in terms of quality. The texture and weight are just clearly better than their cousins. A triumph.

DP Extravaganza! (Friend's place): Fresh and deep. Vanilla. Green apple. Really delicious and drinking in a nice place right now with many years to go.

While I won't/can't deny that this is a very well-made, highly enjoyable champagne, I could list no less than 20 other champagnes that got me far more excited for a fraction of the price point on this one. This vintage can easily hold for another 10 years. I imagine it will improve with further cellaring.
PALATE: Sweetness: dry Acidity: medium (+) Alcohol: medium Body: medium Mousse: delicate Intensity: medium (+) Flavors: flint, smoke, lemon, lemon zest, toast, apple, toasted hazelnut, hay, hint of baking spices and honey Finish: long
CONCLUSIONS: Quality level: outstanding Potential for ageing: can drink now, but has good potential for further ageing

Light gold tint. Nearly still wine. Rich and full. Placid, relatively sweet.

Way too early to drink. Bright and fresh but not complex. Save it for a while
