Sushi wines (Chicago, IL): Extremely taut. The nose is tart citrus and saline, but it feels like there's more fruit behind it waiting to emerge, and even though air helped to dislodge some of it, this is a wine that is still obviously very much closed up. More a wine of potential than one worth opening now; for drinking today though, I preferred the 2014 Dauvissat Vaillons alongside.

Somebody faked this wine. They crushed up a bunch of rocks, added a ton of lemon zest, and then topped it off with mineral water. There’s no way this came from grapes.
Mineral laden beast, fresh lemon, crushed rock, and generous fruit as well. Has everything in spades, but the mineral impression here is sublime, and truly at another level. Great elegance and weightlessness, an ideal pairing with seafood. About the most perfect Chablis I can imagine.

Loaded with crushed rocks and oyster shells. Bright lemon citrus fruit. So fresh and clean!
