first sip was the best. popped decanted and poured - hoped it would smooth out as it opened. instead it actually got massively tannic as it opened. i dont think this will age well as its already 10 years old. the tannins will never die down IMHO. fruit is still there. you can tell its well made - big - but the tannins are not soft - they just overpower after a while. we couldnt finish the bottle b/c it became undrinkable/unenjoyable b/c of the tannins and i dont think age will make it much better.

decanted about 2 hours. straightforward wine that had a minty streak in it, maybe even a bit vegetal. seems like a lower-tier wine from this famous vineyard source.

Cabs Covering 30 Years at Black Sheep Bistro (Black Sheep Bistro Tustin): Heavy nose of oak and chocolate, bit disjointed. Long lengthy palate with lots of espresso and more chocolate. Tannins are a bit late, rough and green. I think it has potential but will benefit from some more rest.

I'm rarely not happy with a winemaker's use of BTK fruit. Maybe it's the weak 03 vintage, but this was pretty disappointing. Red raspberry fruit, medium body. Does have a "fresh" feel but no dark fruit. Too tart and high toned for me.
