Very apples; green and red backed by a touch of minerality, with time a little custard apple note joins as well as that earlier sponti note. More of the same on the palate, off-dry but the acidity kept things fresh. An excellent match with charred pork jowl and papaya salad.

Coravin fun - Bordeaux and Mosel (My place, Kent Street): from Coravin. Medium plus intensity aromas show green and red apple, again that slaty minerality, pretty floral notes and, with time, a touch of Sponti (thanks Acyso). The palate a reflection of the fruit from the nose; green and red apple, with a little textured burr, off dry, medium plus length. Yum.

AP 08 20 Beau bouchon, mais curieusement mou et, au final, insuffisant : un peu de vin a coulé et le haut de la bouteille, au dessous de la capsule, est collant. J'ai donc dû déboucher cette bouteille au nom transcendant (Himmelreich, l'empire des cieux - l'un des meilleurs, à mon avis, parmi les terroirs mosellans), que j'ai dû chasser à travers tout l'Allemagne (à vrai dire, je cherchais Wehlener Sonnenuhr Auslese, qu'on pourrait surnommer "l'Arlésienne" : introuvable) et dont je me promettais beaucoup de joies, bien avant sa maturité. Or pâle Au nez, fleurs blanches et fruits exotiques (mangue, fruit de la passion) En bouche, idem avec au départ une belle attaque de miel d'acacia. Grande acidité salivante, grande longueur en bouche, des vagues successives de goûts qui évoluent... une danse indescriptible. Ce qui me frappe le plus est la finesse, la subtilité dans un équilibre parfait, comme un équilibriste sur son fil. Rien du massif ni du surpuissant que la réputation du vinificateur me laissait imaginer. Un mien ami décèle en fin de bouche une légère amertume, signe du début d'oxydation auquel on pouvait s'attendre.
Defective, not flawed. Dommage pour le bouchon... vive les bouchons plastique, décidément, même pour une bouteille de garde comme celle-ci.

German Riesling (Five Way Cellars, Paddington): Peachy, very slight custard apple, a little pain d'epices. Medium plus intensity acidity, tangy, fleshy, peachy fruit is joined by other stone based fruits - nectarine especially, off dry, rich but balanced residual sugar and acidity. Medium plus length. Yum.

Poured into a Glasvin Universal. Natural cork. 7.5% alcohol. AP 08 20.
Sort of a closed off nose with a whiff of petrol that blows off pretty quickly. White flowers, and a hint of fruit, but with aggressive swirling the fruit really deepens and is redolent of honeyed apricot and juicy peach. The palate entry is phenomenal, leading with a salivating zip of acid that is immediately followed by an immense wallop of honeyed, ripe stone fruit and cream. There is a platform of mineral coursing through this wine that brings the fruit back from being cloying, and the immensely long finish is a laser beam of acid. Nothing is out of place, but I suspect time will bring the aromatics back, and integrate the sweet and acid a bit more seamlessly. Edit: 4 days in and this wine is fresh and zippy. Every edge seems smoothed off, and the fruit has even picked up a slightly less ripe apple character. The finish has lengthened and picked up minerality. My favorite part is that despite the sugar and clearly concentrated fruit, it floats over the palate, not an ounce of fat or flab or heaviness.
