(Piero Busso Barbaresco Santo Stefanetto) A slightly-warmer-than-usual vintage for this grape and region is a boon to those restaurants not in possession of 10-to-15-year-old, classically structured Barbarescos. This is not your typical, monolithic, can’t-wait-to-taste-it-in-2020 Barbaresco, but with an hour of decanting and a bit of fat in the dish to bind the tannins, this Busso will wow those looking for a riper, darker, dried-fruit style of Nebbiolo—with all the requisite shiitake mushrooms, weathered saddles, and crushed seven-day-old violets thrown in—tonight.
