Ruchottes-Chambertin Grand Cru Dinner (Yan, National Gallery, Singapore): A very pretty Champagne. This had a charming nose of white fruit, cream and flowers with just the tiniest hint of spice at the sides. The palate had a fine, polished feel to it, with a refined mousse and lovely crisp acidity wrapped around a nice tight flow of fleshy white fruit and a touch of cream, and juicy lemons, all this leading into lightly mineral finish. Plenty of depth, yet so focused and balanced. Lovely - a really stylish showing.

(Pierre Gimmonet Extra Brut Blanc de Blancs "Oenophile") This really put the extra in extra brut. Drier than licking sandpaper but more like licking a seashell. Pure and minerally with some nice green apple fruit. There also was a nice sligtly bitter green fruit skin note and some chamomile aromas that developed with aeration. Lean and austere but oh so concentrated and gutsy. That is the perfect word to describe this wine, gutsy. Really improved throughout the night. The purity and depth were amazing. Such a lovely wine with a nice salty kick on the finish.

Just not my style. Steely, acidic and unforgiving - drank with Chinese food on Xmas day. I prefer a more balanced wine.
