more than a year later, this requires decanting. however, after 60 min bouquet is evolving (tart fruit, cherry, bark, ground sand), palate with prominent acid profile (bitterness is still present). again, a food wine. a bit more evolved, pleasant and enjoyable.

almost a year later, this still needs decanting, or at least patience. there are some green stem aromata that feed a certain bitterness/ acidity probably hard to get rid of during maturation. very nice with food: tonight venison medallion with orange lemon butter.
