Surprisingly light color and surprisingly vibrant for its age. Quite mineral with stony fruit and lemony aftertaste. Quite full bodied, complex with nice balance between high acidity on the one hand and fruit and alcohol on the other. Well worth the cellaring.

Chilled, popped and poured. Whitish gold color. Nose of shist, oyster shell, citrus. Stony and laden with minerals on the palate with hints of white peach and grapefruit. Great purity and cut, notable for refreshing acidity. Very dry. Moderate finish of grip and mineral. Delightful wine, particularly when paired with seafood.

Quite a nice wine, like a combination of Chablis and Sauvignon Blanc. Plenty of minerals, along with citrus (grapefruit), backed up by more than adequate acidity.

Straw yellow. Pronounced chalky minerality, flint-stone, citrus fruit and hot rocks. Medium-bodied, crispy and vibrant, with bright fruit, intense minerality and high acidity. Long, chalky aftertaste. At this stage, this is an archetypical Santorini, at its peak.

Much better this time, although there is still sulfur. Some of this might be smokey lentilly volcanic scents, though. The wine tastes great on day two, with lemon and salt and yeast and rock.
