Meals in France; 3/21/2022-3/26/2022 (France): Started as musty, then cleaned up & improved over the next 20 minutes. Also more firm to start, softening with air. This emerged as an enchanting earthy, meaty well aged Burg with lots of spiced and earthy nuance and wonderful textures. Stayed wonderful for the next 30 minutes it stayed in glass.

Loose capsule. Less than 1" ullage. No signs of seepage. Used Durand but cork was in fine shape. Quite a surprise. Very expressive nose upon opening: red fruit and complex secondary aromas. However, first taste was quite acidic. Not flawed, but pushing the edge of pleasure. After 4 hours in open bottle the nose was more complex and shifting. Put on some weight to counter the pronounced acid. An altogether lovely bottle that went very well with a 'cowboy' steak. I don't know if the acidity means much more life ahead or heading south. I would be inclined not to gamble. Remarkable 35 year old Beaune 1er and what the hunt is all about. 92 points.

Need 1 hr to breath, but lasted for 30-60 mins. Edge not so round. In downward slope, and so need to be consummed. Very interesting experience.
