The cork was loose not surprised it is a touch more advance , very creamy classic pure yellow fruits with an elegant palate definitely grand cru material ! 1999 a great white Burgundy vintage and this could be better.

Thirteenth Annual White Truffle Dinner (Chez Weber - Chicago IL): In Chevalier-Montrachet flight. Fully mature apple on nose and palate. Very good density and weight. Good aromas, but more tired flavors. This wine was much better 5+ years ago and seems on a downward trajectory since.

Opened for 13th annual Truffle dinner. While a nice wine in its own right it was out classed by the 1999 Leflaive Chevalier served along side. The Cabotte was slightly faded in character coming off good, but simpler and less interesting.

Chevalier-Montrachet Lunch (Phoenix, AZ): Incredible showing for this wine, just awesome. Perfect balance between minerality, tension and rich honeyed fruit. Loooong finish. Superstar wine.

Twelfth Annual White Truffle Dinner (Chez Weber - Chicago IL): In 99/00/02/07 flight. Ripe apple with lots of sweet spice hints, but this matured quickly in glass in front of us. There had been a problem removing the cork, so this was decanted, which probably didn't help matters. This vintage of Cabotte has rarely excited me.
