Jason's birthday and old Bordeaux

Introduction
Another birthday, another great dinner.
Jason did smoked and grilled tri-tip and picanha. To quote Adam, some of the best meat he has ever tasted!
The meal was centered around 6 bottles from the "amazing cellar" in Minneapolis, just stunning Bordeaux.
Flight 1 - Champagne (3 notes)
A nice troika as we mingled and everyone arrived.
Flight 2 - Old Bordeaux (3 notes)
This was the lesser flight, although 2 of 3 were stellar.

1957 Château Pavie
France, Bordeaux, Libournais, St. Émilion Grand Cru
Funky and slightly lactic, mmm, some tobacco comes to the party. Mmm, so mineral, graphite laden. This one sadly cracks up very quickly in the glass, bitter and astringent on the finish. Quite nice though when poured.

1955 Château Ducru-Beaucaillou
France, Bordeaux, Médoc, St. Julien
Sharp, edgy and medicinal. Wow, pure cherry, bright, great acidity, minty notes. Mmmm, leathery on the finish, gamey, good funk!

1955 Château Haut-Brion
France, Bordeaux, Graves, Pessac-Léognan
Smoky chicory and ashtray. Some people were thrown by the overt smokiness, but to me this was prototypical Haut Brion. Holy wow, this is brawny, dark and brooding. It kept opening with time and on a later pour.
Flight 3 - 1959 First Growths (3 notes)
Just unreal. I put in scores as just a measure of calibration. Any one bottle would be a wine experience of a lifetime. The three together were just beyond and such wonderful expressions of each.

1959 Château Latour Grand Vin
France, Bordeaux, Médoc, Pauillac
Savory, black currant, meaty, cigar box. Stern and tannic, crazy dark, somehow still not ready. Just textbook cedar, textbook Latour. It was REMARKABLE, as perfect as Latour gets. Unreal.

Wow, what a palate, red fruit, silky, stunning fruit, length, racy and that texture. I usually never notice texture in Bordeaux, but this was special. Iconic.

Mmm, bretty and chewy, a perfect steak wine. I love the mid-80's Cordier wines when they are on.

Spicy cinnamon red hot. Always a sexy wine.
Flight 5 - 2000 Bordeaux (3 notes)
The 2000's are really going to be wonderful in time.

Bell pepper, spicy, like a ripe Chinon. I loved it!

These appeared as we were having some of Tracy's amazing chocolate chip cookies. Just going to say, amazing pairing!
