DAY 1
👃Pretty red fruit & roses, dried fruit, tea, tar, & menthol. Beautiful 👅Cherry & blue fruit, tar, earth, mushroom, tea & herbs. Some tannins but this is silky. Long finish with a touch of bitter. A bit of VA in the form of acetone but not distracting.
Medium body. Composed & elegant

Such a treat to share this legend with friends. Sorry Vinloq, nothing to preserve as we emptied this🍷🍷

👃Apples:very ripe and bruised also.
Biscuit, butter, lanolin, honey, & florals. Bold & elegant
👅Quite vinous champagne. Enough substance, backbone, & flavor to deliver a great drink. Fruit from start to the long finish: Apples, lemon, orange liquer, & pastry

Great with an aged gouda and a robusto
Solid performer at 22 years from a champagne vintage without laurels. Bravo!

👅Lemon oil + white pepper & spirited minerality. Rounded fruit. Salty. Great acidity. The oak treatment is spot on

👃👅Glorious nose. White florals + peach. Flinty & expressive. Long dry mineral laced finish. Lovely on both occasions

👅Apricot, smoke, citrus & marzipan.
Less sweet than some dessert wines. Elegant

👅Pretty & lovely to drink. Love the honey, apricot & white tea notes.
Good concentration

Unchanged over 15 days. Would pair well with almond pastry or cheese

👅Candied fruit, smoky minerals & herbs. Peach & mango. Juicy. Solid acidity. A joy to drink. Great balance

👅Silky, plush mouthfeel of the sweet fruit is really easy to drink. The fresh meshes beautifully with the oak notes & structure

In a solid spot but will continue to improve as the tannins resolve

"Slow Decanting" this young spatlese over a couple of weeks with the Vinloq System

DAY 1
👃Careens from the chilled bottle with limes and apples plus minerality & petrol
👅Sweetness leads. Fruit, florals and acidity follow. The minerality is there for the finish. The acidity is fresh and palate cleaning. Lip smacking, if you will

The remaining wine was Slow Decanted for 18 days in my refrigerator

DAY 18
This hasn't budged during the interim. Apple, peach, pear with lime on the finish. The standard hallmarks of Falkenstein are present with the extra midpalate density seen in so many 2019 German riesling. Classy. Fresh. Clean

This 2019 is just getting started. It is delicious in this youthful, energetic state. I cannot wait to see where this goes as it develops over time in the cellar🥂

Served this with the Vinloq System and followed it over 13 Days

DAY 1
👃This was bold and definitive on the first pour before it had even warmed. Excellent slatey minerality with lime, peach and white pepper
👅A totally stuffed midpalate of juicy fruit, nicely complemented with both herbals and white florals. There is significant sweetness (and baby fat) but it retains crispness and great minerality

The remaining wine was "Slow Decanted" and preserved with Vinloq nitrogen in my refrigerator

DAY 13
Spot on vs Day 1 with maybe some additional energy and fireworks.
What a stellar wine! The flavor profile here is delicious. The main elements are peach, apricot, citrus, minerality, herbals and honey. They last all the way through the lengthy finish.
It's a flavor explosion but the wine retains impressive precision and clarity

This 2020 should make from a long lived wine and will likely be fantastic at every stage🥂

👅This is a great summer champagne and it combines crisp flavors with a touch of oxidation and solid minerality.
Honey crisp apple, even cider, and bruised apples are featured. Quite powerful personality. Lemon peel sweeps the palate clean on the finish.
Develops some creaminess as it warms

Pouring a glass with the Vinloq System
DAY 1
👃lodine, seawater, a touch of oxidation, and salty minerality
👅Brine leads the way with iodine, nuts, herbal notes, and other flavors that are hard to pin down but are enjoyable. These flavors lead to some bitterness before the very long and enjoyable finish. This is full bodied and amazing

The remaining wine was Slow Decanted in my refrigerator

I returned to this wine multiple times over the following weeks. My experience was similar each time. For example:

DAY 20
Same aromas, flavors and intensities as day 1. So rich and resonant. The finish is deep, mineral laced, seawater, nuts & herbals. No signs of fruit. Extremely long finish

That a sherry aged under biologically active flora stays fresh for days & weeks is not surprising. But I still protect them with nitrogen because it is not a wine that I prefer in large servings. Rather, I enjoy a small glass frequently. They are super food friendly and a perfect match with many foods including aged cheeses, cured hams, and even sushi. Also superb in the correct cocktail🍸

This was a total delight each time over 4-5 weeks💕

Gave this multiple hours in the glass before tasting
👃Traditional barolo notes of tar, roses, maraschinos, cigar box, cedar, smoke... Love this
👅Same flavors but slightly restrained. Dark cherries and smoke. Light sweetness. Good brightness and acidity. Soft silky tannins. Sharp yet clean on the dry finish

Refrigerated and "Slow Decanted" the remaining wine for 10 days with nitrogen protection

DAY 10
👃Cherries and cherry liquer, tar, cedar, smoke, florals and earth. Classic
👅Cherry and strawberry, fresh tobacco notes, smoke, and cedar all blend seamlessly from start to finish. Silky texture with some tannic grip on the finish. (Not as much time in the glass vs day1) The Ginestra is interesting, flavorful, and easy drinking

The wine was slightly more expressive and relaxed on Day
10.
This is really good barolo at 15 years and the color and flavors are showing relatively youthful. It will, no doubt, continue to age gracefully for many years🍷

👃Very expressive nose with nice interplay between the predominant minerality and the brioche, strawberries, marzipan, and florals

👅A rich and assertive profile with plenty of acidity and crisp bubbles that deliver energy and joy. It is both assertive and pretty. Just the right amount of sweetness keeps the fruit fresh and delicious. Long finish. Great with food or easily has enough verve to drink on it’s own. Drinking well. Excellent value for a rosé from a major Champagne house

DAY 1
👃After hours in the glass, this is rich with spicy dark fruit, chalk/graphite/smoke, cedar, vanilla, and anise. Classic Cali Cabernet: Rich & sexy
👅Beautiful, luscious sweet fruit with just the right balance of oak and soft tannic notes. A bit of spice & herbals with clove and vanilla. Silky texture. Plenty of acidity keeping this fresh

Refrigerated and "Slow Decanted" the remaining wine for 8 days with nitrogen protection

DAY 8
👃Perfumed with dusty spice and fruit. Oak notes in the background. Rich and classic
👅The dark fruit (black currants and blackberries) leads and the spicy notes follow. Oak accents are there on the balanced, long, and delicious finish. Drinking very well. Similar to Day 1 though it seems slightly sweeter today

This 2010 R-M Panek is definitely in the zone. It has richness and the fruit is sweet but not ponderous or cloying.
Polished. No heat. Drinking beautifully. Drank this in the mid to upper 60'sF (18C) temperature

Slow Decanting this Jouan Aux Echezeaux for 11 days with the Vinloq System

DAY 1
👃Beautiful. Elegant. Red and black fruit with kirsch, incense, 5 spice, smoke and meat. Rich, nuanced, precise, and beguiling
👅This is drinking really well. Just the way I love Burgundy: Sweet and ripe fruit like raspberry/ cherry and blackberry, with savory elements, plenty of nuance, and complete balance. Plush texture. Acidity and tannins are spot on. Very hard to put the glass down

DAY 11
👃Smoky, earthy, sexy, sophisticated. Same as Day 1. So much personality. Incense and kirsch
👅This has fruit and delicacy but there is sneaky power here. The same range of fruits and florals are combined with savory earth, smoke, and meat. Silken. Long and lovely finish

1-I thought this was even more expressive after 11 Days of "Slow Decanting".
2-Can this wine improve with more bottle age? Maybe, but I find it captivating now. am totally happy with this just as it is 🍷🍷

11 Days of "Slow Decanting" this classically styled Chateauneuf du Pape

DAY 1
Served with the Vinlog System
👃Perfumed, ripe blackberry and plums with deep earthy notes of soil mixed with dusty cellar and a potato note. Oak signatures like vanilla and cedar mesh well with this classic styled Southern Rhone. Pretty stunning right away
👅Plummy dark fruit, kirsch, licorice, and same. Juicy. Oak influences and a touch of prune. A little warmth from the 14% alcohol lead into an extended finish. Good acidity. More refined than rustic

The remaining wine was "Slow Decanted" in my refrigerator

DAY 11
👃This is sweet with ripe, dark fruit and kirsch. Yes, that cut potato note is there again but it does not detract. There is a bit of spice and dustiness.
👅Full bodied and earthy with dark fruit. Silky texture. The tannins have mostly resolved with a little grip on the finish.
Based on this bottle, this wine still has time. It is drinking very well but it shows no signs of a downturn anytime soon

I seem to generally prefer CdP wines shortly after pouring rather than letting them breathe in the glass (or decanter).
That was true with this Donjon on both occasions. However, Slow Decanting the wine for 11 days did not change my enjoyment of the wine vs Day1🍷

👃A definite attention grabber with apples, oranges, pears, smoke, minerals, white florals and mint. Whoa!
👅Loaded but never weighty. The sweet fruit is also rich and tangy. Limes and oranges. Good acidity and a gracious midpalate. A total joy to drink

Let the remaining wine Slow Decant in my refrigerator for two weeks

DAY 14
👃Rocky minerals dominate and are complemented by white florals, ripe orange/ apples. A touch of musk. Lots going on
👅Sweet fruit like apples, li mes, and oranges with minerals.
Slightly creamy. Very solid midpalate and proper kabinett sweetness

This Klostergarten Kabinett is great now and it's going to be greater as it should reward lots of cellar time
Every bottle of Lukas Hammelmann wine that I open impresses me greatly. He is making wines that deserve your attention. He has mine👍

"Slow Decanted" this 🍷 with the Vinloq System

DAY 1
👃Immediate black currants and blackberries, licorice, chocolate, leather, pepper, and cedar. Exotic profile
👅 Sweet, ripe, dark berry fruit and licorice up front. Oak and leather/tobacco towards the end with moderate chalky tannins lingering on the finish. Good complexity and nice precision. Drinking well now

The remaining wine was Slow Decanted in my refrigerator

DAY 10
👃Predominately dark fruit, chocolate, and licorice with the pepper and cedar less forward than Day 1
👅Soft and elegant fruit, plush mouthfeel, oak influeces and leather. Slight tannic pull on the cheeks on the nice lingering finish. Generally softer and more rounded than day 1. Easy drinking for sure🙌

"Slow Decanted" this white burgundy with the Vinloq System

DAY 1
👃Lemon/underripe pineapple with stony minerals/black pepper. Vivid
👅Glorious minerality from start to finish. Lemony fruit takes a back seat to the minerality but there is plenty to provide balance. Great structure, very nice acidity, and a slightly oily texture. All bright and crisp

The remaining burgundy was Slow Decanted in my refrigerator

DAY 10
👃Minerals lead on the vivid nose with lemons in the background. Less flinty minerality than day 1
👅Lemon fruit followed by minerality coming on at the black pepper finish. Structure, acidity, and oily texture continue. Concentrated. Classy and well put together

The 2014 Morget Les Fairendes is going strong and was powerful and refined on DAYS 1 and 10.
No reason this cannot continue to improve based on the great overall balance

👃Appealing bright red fruit that added perfume with air Nice complexity in an elegant Burgundian style. Pairs well with salty foods like cheese or 🍿

This is in a great place now. Well made and a solid value. It was pretty much identical after 9 days of Slow Decanting

Let this breathe for hours. Drank at 42F/5C
Same parade of precise complexity. Less petrol than Day 1. The intense smoked honey is intoxicating

Flaunting all of the goodness with a bit less intensity. Shows all of the beauty of aged riesling. What a memory

👃More detailed with red fruit, 5 spice, ash, green leaves & purple flowers. Elegant & seductive
👅Silky and classy. Med body. Great finish. Needs a touch more midpalate intensity but it is refined, charming and irresistible

Still drinking well but not hitting all of the subtle notes

Day5>Day1>Day10

👃Cranberry/cherry, spicy, cedar, earth and tar. This is expressive. Florals and touch of mint
👅Cedar notes with red fruit and florals. Clearly stem inclusion was used. Asian spice/licorice.
The tannins are soft and well integrated. Med body with med + acidity. Drinking well

-Lovely fruit, spices, purple florals, soft integrated tannins. Really beautiful. Expressive but stays refined and elegant
-Good complexity with some secondary development. Stays light throughout. Still youthful and vibrant. This will stay interesting for some time👍🍷

👃Powerful:Smoke, dark fruit. Meaty. Horse sweat. Musky. Earthy. Florals. So much going on
👅Sweet red & dark fruits with smoke & earth. Fresh. Solid acidity. Mellow tannins. Full bodied but lithe. Drinking well

Remaining wine Slow Decanted in my refrigerator

DAY 7
👃Smoky, musky, horsey with red/dark fruit & kirsch
👅Cranberry/raspberry, smoke, bacon, iron, spice, & stones
Hitting all of the notes on DAY 7 but I preferred the unbridled 🐎 intensity of DAY 1

-1st bottle 4 years ago was closed hard. Not Closed Now!
-Lots of Old World character from this Christophe Baron wine that is part of the Cayuse stable
-This was the first vintage of Sur Echalas Grenache so it will be interesting to see the trail it blazes with more bottle age🍷

"Slow Decanting" this classic

DAY 1
👃Sweet apricot, tangerine, white flowers, varnish, & manuka honey. Beautiful and very expressive
👅Hits the tongue with honeyed sweetness and bright rich fruit leading the way. Acidity increases next followed by beautiful quince/apricot/tangerines. Finishes long with no unsavory bits. Everything in balance

The remaining wine was Slow Decanted

DAY 12
👃Just wow😮 Fruit, florals, varnish, and honey
👅Sweet rich apricot, smoky orange, honey, mango, varnish, grapefruit, quince, fig, sultanas.... Starts and ends with fruit. Savory in the mid palate. Lovely mouthfeel. Rich but not heavy

-This QdC was stellar and virtually identical on Days 1 and
12. This would likely stay great for much longer with Slow
Decanting but I just couldn't hold off
-This 2002 is in great form and I am sure another decade is
going to be no problem with this level of acidity and balance

I want to test how Vinloq’s “Slow Decanting” works with the Éloge

DAY 1
👃Chalky, spicy dark purple fruit. Sweet. Brush and briars. Cigar box. Cedar
👅Plenty going on here. Loaded with fruit, spicy cedar, green pepper. Chalky accents that finish spicy. Full bodied. Robust fruit. Sweet tannins that are “primetime”. Good length on the finish. Bring on the 🥩!

👃Glorious. Bright. Spicy. Perfumey
👅Fruit builds in the packed midpalate and finishes with the full complement of flavors. Proper acidity. Lovely silky tannins. No bitterness or heat. Oak fully integrated

This 05 Éloge is in such a delicious spot now. It has years ahead as there are no signs of age, but can it get better?

Fantastic on both Day 1 and 10. There was no point in keeping this for 10 days, but it is nice to have that option. Slightly more power on Day 1 but a little more elegant in style on Day 10. It plays both roles well💕

DAY 1
👃Honeyed orange blossoms, petrol, apricot & lemons
👅Perfumed orange and marmalade, honey, & florals. Great acidity & lightly sweet

DAY 19
👃Honeycomb, apricot, orange/peach, herbal & kerosene
👅Delicious buttery fruit, smoke, ash, oranges & honey. Dried mint on the mostly dry finish

19 days and this Brucke is going strong. More smoky notes now with less of the orange blossom florals. Loved this both times

👃Oranges/lemon verbena, white flowers, barrel notes, tea, spice, varnish. Nice show!
👅Fruit with buttery oak touches. Open and expressive. Great balance of fruit and new French oak notes

Remaining wine was Slow Decanted

DAY 13
👅Round & soft. Buttery, orange & vanilla. Tea. Toasty. Umami. Finishes dry & salty. No bitterness as it slowly fades away

Summary: Direct kinship to great wines of Sauternes. Delivered equal thrills on Days 1 & 13. This Kalin Semillon is a recent release after 20 years in bottle. Firing on all cylinders. No reason to wait💕🥂

👃Rustic red fruit with a slightly candied edge, wet asphalt, cherry/cranberry with some darker notes. Pretty perfume. Quite nice

This Champans certainly delivers authenticity and traditional respect along with lovely aromatics. The nice cherry fruit leaves me craving even more🍇🍷

👃👅Similar notes to day 1. The round profile & silky texture make this very enjoyable. Soft tannins & balancing acidity are also included. Cherry, blueberry, chocolate & tobacco + spice & lightly stewed fruit. So easy to drink👍

I don't see any reason to wait longer on this 07. The tannins are primetime and there is plenty of complexity and interesting flavors right now. Drink away!🍷🍷

👅More pretty & less intense than many PYCMs. Palate is medium bodied. Not totally dry

Change in character vs Day 1. The subtle fruit has been shrouded by intense minerality
👅Flinty, smoky minerality with just enough lemon fruit. Nicely salty. Long bold and distinctly dry finish

Quite different on the 2 occasions. It was more delicate and very nice on Day 1 but I preferred the intensity & minerality that had developed by Day 14

👅Red apples, pears, and almonds. Bruised apple is the predominant flavor. Energetic acidity. Medium bodied

Energetic and fresh with interesting complexity. Bold flavors but medium body. For an extra brut, this is not bone dry. As with most champagne, this wine excels with many foods

👃Red and purple fruits. Tar with light florals. Bright and
chalky
👅Significant fruit with tar, earth, licorice. Spicy raspberry/cranbery on the long finish. Drinking well

Fratelli Brovia remains somewhat under the radar despite producing first tier traditionally styles barolos from excellent vineyards

This Brea has the density expected of a Serralunga barolo coupled with the finesse, nuance, & drinkability that comes from excellent winemaking.
-Pretty lightfooted for a hot vintage
-Totally enjoyable after some time in the
glass on all 3 occasions

Very enjoyable now but it has plenty of life ahead. This wine should not suffer a narrow or short drinking window despite the 2011 conditions. In fact, I would expect this wine to become more serious with additional bottle age

👅The fruit is more dark. Earthy + tar. Midpalate is slightly thin. Some tannins that need time for resolution

👅Tannins are less than Day 1 but still noticeable. Purple fruit, earth & tar. Finishes nicely with fruit and licorice

I enjoyed this both days. Elegant and pretty but needs time to express itself and soften the tannins a bit. But I like it now and I love it’s potential🍷

Bottle Variation

First bottle, 3 months ago, was quite advanced in 👀👃👅 but with no other flaws (no oxidation/spoilage/or TCA taint)

This is my 2nd bottle:

👀Dark ruby./purple. Youthful
👃Sweet fruit
👅Fruit forward with blurry flavors. Dry tannins with slight heat. Paired nicely with wagyu beef🥩

DAY 14
👃Spicy blackberry, anise, chalk, & dried fruit
👅Purple fruit, anise & chocolate. Not complex but tasty.
Finishes spicy with some heat. Balanced sweetness. Lowish
acidity. Nice wine

This second bottle was what I expected. What caused the
first bottle to be so advanced?

👃Mango, lychee, coconut, smoke, elderflower/ white flowers
👅Honeyed pineapple & peach. Intensity without weight.Excellent acidity that gives energy. Fresh & pure. Long peachy finish. Quite sweet: 9% abv

What a wine! I loved this even more on Day17. The wines
from Donnhoff have long been favorites of mine and the
hallmark for me is the intensity and elegance that always
arrive with mystifying weightlessness. Bravo👏

The 👃 & 👅 were initially restrained but over 3+ hours showed buttery lemon, black pepper and smoky minerality that was superb

The wine was full on fantastic within 15 minutes this time
👅Intense & loaded: buttery fruit, herbs, stones, & nicely integrated oak notes. Packed midpalate, great acidity & energy. Long pleasant finish

Brilliant example of Puligny-Montrachet. Slow Decanting helped this show well more quickly on DAY 12. This will keep improving for a few more years in the bottle, but so good with enough oxygenation now

Musar wines are known to be unique & enigmatic. This was both and it was also really enjoyable👍💕

👅More tropical than Day 1. Added mango and horseapple to the Day 1 flavors. Nice musky minerality. Finish is clean, persistent but lightfooted

This will be showstopper with significant bottle age🙌 If only I can wait 🤔

I only needed one bottle to add Alex Loersch to my rapidly growing list of young German winemakers to follow intently

Legendary Loss

Calera founder Josh Jensen passed away earlier this month after a lifetime of achievements that included elevating American Pinot Noir on the world stage

Day 1
Served this with the Vinlog System
👃Bold, sexy, purple fruit floods from the glass endlessly
👅Spicy purple fruit, blood orange, sasafras, and licorice. A gentle tannic pull on the smoke tinged finish. Drinking well

Remaining wine was Slow Decanted in my refrigerator

DAY 10
👃Sweet, spicy, purple fruits with more vanilla, oak, vegetal, and tobacco notes than Day 1
👅Same sweet plummy fruit with tobacco and licorice. Fruit forward but balanced. Soft tannins and no heat

I did not have a preference for Day 1 or Day 10. There were more oak notes on both the nose and palate on Day 10. Two solid showings 👍This is solidly in its drinking window & will remain there for quite some time🍷

Time Tested

2003 was historically hot & dry. Did Monprivato succeed
despite these conditions?

DAY 1
Served the wine with the Vinloq System which allows nitrogen to be pulled into the bottle with pouring
👀Brown/orange mixed with red
👃Cherries, tobacco, tar & roses. Some stewed/dried fruit
👅Mature. Florals and fruit are present. Light. Could use more acid. Easy to drink. Balanced

DAY 10
Nice aged notes. Savory. Okay precision. Tannins are good. Kept improving in the glass

DAY 17
👃Classic & beautiful with aged notes. Finally what I was hoping for
👅Drinking well. Cherry. Significant tar. Savory

Similar on the 3 days, but the nose was most beautiful on DAY 17

The pedigree was apparent here in this lovely barolo despite the vintage conditions. Balance was retained with enough precision to allow the Mascarello Monprivato personality to come through👏

👀Dark yellow golden honey. Unfiltered
👃Sour citrus, wax, savory herbs with tea & mint
👅Honeyed, candied stone fruit. Ripe apples. Very herbal with pronounced acidity. Salty. The finish is dry, long, & delicious. So interesting. So expressive. Superb clarity. Singular flavor profile likely due to botrytis and long elevage. Just...wow

👃Bold, distinctive & precise
👅Probably would not guess riesling in a blind tasting. Tea, cognac & sherry all make appearances. Bruised/ripe apple is only perceived sweetness
Virtually unchanged in 15 days. Feels very sturdy. Probably would be an interesting wine to cellar

Jakob Tennstedt is a new winemaker in the Mosel. He biodynamically farms 50-100 year old vines he restored on steep blue slate terraces. This wine was so laborius to make that he will not do it again. I am glad I was able to try it this time and it gives me motivation to try his other wines🥂

👀Dark violet core with a bit of browning/orange at the rim
👃Whoa! Rustic with cured meats, earth, leather, blue/black fruits, charred wood, & garrigue. Love this💕
👅Purple fruit, olives, garrigue, licorice & smoke. Rich and savory. Bold and delicious. Old world/old school. Bring on the grilled meat 🥩

👅More composed and maybe less fruit forward

Burlotto's Monvigliero is one of my favorite wines in the world

👃Needs an hour in the glass and 65F/18C. Underripe strawberry, eucalyptus, herbs, & roses. The olive tapenade arrives last. Can a wine smell silky? (synesthesia?)
👅Red cherry fruit, herbs, olives, tar & florals. Velour texture. Tar and cherries linger on the long and lovely finish. Elegant & refined.

One HOT🔥 Auslese

Extreme heat and drought marked the 2003 vintage in the Mosel and protecting against overripeness and maintaining acidity were the two major concerns for winemakers

DAY 1

👃Honey, honeysuckle, pineapple, apple and pear
👅Delicious peach, pear and tropical fruits were accompanied by light petrol and slatey minerality. This is long. It finishes sweet, fruity and floral
Needs just a touch more acidity to deliver the home run but
this is a delicious triple⚾️

👃More petrol tonight with stone fruits & honeysuckle
👅Honeyed peach and pineapple with a touch of caramel. Dense & juicy with the sweet & persistent smoky fruits going on and on... This is dessert

Should provide many years of drinking pleasure. Well managed vintage for this consistently great wine🥂
