2011 M. Chapoutier Domaine de Bila-Haut Occultum Lapidem Côtes du Roussillon Villages Latour Red Rhone Blend (view label images)
Fully resolved and drinking wonderfully at present. Displays ample vigor and lift to do so for quite some time.
Red
Decanted four (4) hours. There's a lot going on here but I'm of the opinion that this requires at the very least another 3-5 years to start undressing itself. A pleasant combination of red/black fruit was coaxed on Day 2 and latent power and structure are evident. Just think it will be significantly more interesting in the future.

Red
Decanted three (3) hours. Wish I had more of this. Alas only a single bottle purchase. Wonderful accompaniment to roast lamb and root vegetables. A warm panoply of combined blue and black fruits hit the nose straight away with hints of black pepper and sous bois. Weighted on the palate with remarkable depth, high abv. is deftly cloaked by pronounced flavors of blackberry and warm spice. Active acidity present demonstrates sufficient lift to carry evenly distributed finish. Lovely stuff.

Red
Decanted two (2) hours. Deep purple in color with aromas of plum, blackberry, black cherry, cocoa dusty earth undertones. Inviting and open for business, tightly woven structure has evolved nicely giving way to supple presence on the palate. Warm black fruit is supported with desired acidity that evolves to evenly measured finish. As others have noted, pretty nice effort here at this price point.
White
Drinking wonderfully now and still showing impressive lift and length at this stage. Don't know that I'd wait any longer though. Drink up!
Red
Deep garnet. Displays of intense aromas of rose petal, blackberry, black cherry, cranberry, soy, earth and Asian spice. Beautifully constructed and textured with layered tapestry of aforementioned flavors. Moves effortlessly along the palate driven by energetic acidity to long rewarding finish. While drinking wonderfully now with proper decant; fine grain tannins retain significant grip to suggest rewarding experiences lie ahead in the future.
Red
Disappointing. Out of balance, clumsy and vegetable (Green Pepper). 1 of 6 remaining but not expecting much.
White
Similar to prior observations. Pop-N-Pour and consumed over three(3) days. Aromas of ripe lemon and baked marzipan jump out immediately. On the palate voluminous fruit is matched with rapier like acidity that provides intensely long satisfying finish. Love this!
White - Fortified
Decanted (5) days and consumed over two (2) months. Can't say it much better than what "Forceberry" has already articulated. Beautiful wine. Dark amber in color with expressive aromas of dark sultana, fig, orange peel, treacle, and burnt caramel. Lithely on the palate w/razor sharp acidity that rewards with exceedingly long finish.
Red
Decanted one (1) hour. Garnet w/bricking at rim. Reveals aromas of rose petal, red cherry, dark chocolate and licorice. Fully integrated. Red fruit is waning slightly with floral expressions and undertones dominating. Delicate weight and balance on the palate. Provides evenly distributed finish.
White
Decanted and consumed over three (3) days. Displays aromas of white pear/peach, lemon, salted caramel and wet stone. More linear and precise than the 017’. White fruit, saline and minerality press forward. Rewardingly long even finish. Love it!

Last of three (3). Decanted one (1) hour. Similar to prior experience with aromas of lemon, pear, and marzipan. “Struck Match” was mentioned elsewhere, and I think that’s spot on. Retains acceptable acidity to balance warm fruit but it’s a little funky. Modest finish with detectable heat on the back end. It's made the turn and heading for home. Drink up!
White
Decanted three (2) hours. Medium gold with intense aromas of peach, apricot, lemon curd, pineapple, mango, honey, vanilla and acacia. Lush, richly textured fruit is perfectly balanced by bracing acidity and underlying minerality. Displays elevated viscosity surrounding the palate with long, lingering, lip-smacking finish. Another brilliant effort from Aubert that will undoubtable drink well for many years to come.

Elevated viscosity provides velvet textured presence surrounds the palate leading to long, lingering, lip-smacking finish. As often is the case with Aubert oak use is beautifully integrated. Delicious now but will certainly drink well for a decade or beyond.

Over five (5) years since last visit. Double decanted and left to stand for four (4+) hours. Broodingly dark purple in color with intense aromas of black cherry, blackberry, dark chocolate, charred wood, and sweet spice. Densely packed with formidable structure, presenting intense flavors of spiced blackberry and cherry with smoky veiled backdrop. Sits generously on the palate retaining a firm tannic grip at the moment. Notwithstanding elevated alcohol present; rewards with long mouth-coating finish. Throws significant sediment so an extended decant is warranted. This is certainly not for everyone and I’m leaning towards the less enthusiastic. That said, this is a BIG wine that one cannot but wonder what the future has in store for it.

Harmonious balance with not a sharp edge to be found. Fruit, alcohol and acidity are perfectly measured providing round supple presence on the palate that leads to amazingly long lip-smacking finish. Remarkable Chardonnay.

Pop-N-Pour and open for business. Deep purple in color. Combination of dark fruit aromas are accompanied with notes of mocha, espresso, forest floor, tobacco, and lavender. Full bodied and softly textured on the palate. Ripe flavors of cassis, black cherry, blueberry, and blackberry are joined with purple flower accents and dusty/smoky underpinning. Well balanced with desired energy and length that leads to round evenly distributed finish. Drinking nicely now and displays ample structure to do so for a while longer.
White
Similar observations when last visited. Paired with braised pork chops and sauerkraut. While enjoyable; would prefer a little more verve. Fruit expression was solid but overall a little lethargic…..missing the minerality.

Double Decanted and consumed over three (3) days. Similar to prior observations. Black fruit aromas of black cherry, blueberry, blackberry, and plum are joined with purple flower, herbal and sweet spice notes. Full bodied with weighted presence on the palate; rich black fruit flavors are accompanied by sweet spice and earthen undertones. Rewards with dry evenly distributed finish. Still retains significant grip at present drinking progressively better by day three (3). It’s all there and can be had now with extended decant; but my sense is the sweet spot for this lies in the future. Hold and re-visit in 3-5 years.

Well here’s another one that displayed a remarkable transformation. Clumsy and un-balanced to aromatic and giving. Rewarded with aromas of red cherry, sweet spice, tobacco and rose petals. Fully resolved now giving flavors of dusty cherry and vanilla. Sits easily on the palate moving to evenly distributed finish.
Red
Deep ruby in color with hints of orange at the rim. Presents intense aromas of cherry, vanilla, sweet spice and tobacco. Reluctant initially; fine grained tannins are tightly structured with significant grip remaining. Took a while to unwind but when it did….it blossomed rewarding with bright flavors of red cherry and warm vanilla interlaced with spiced notes of licorice and cinnamon. Sits harmoniously on the palate joined with energetic acidity that gives way to long brooding finish with tar/tobacco notes.

What an amazing evolution for this wine. When I first had this wine in 2013’ it was nearly un-approachable. Several years later in 2015’ it provided a narrow glimpse into what lies in wait for the future. Sadly, this was the last one for me but I would not be the least bit surprised if this rewarded for another 3-5 years or beyond. For me today; it was perfectly on point. An aromatic display of ripe red berry fruit surrounded with sweet spiced aromas. Fine grained tannins are soft and approachable giving subtle hint to underlying strength likely remaining. Sits waif like on the palate then disintegrates in to long lingering finish.
White
Similar to prior experience but finding the dairy and oak footprint a little overbearing. Several hours later muted aromas of lemon curd, peach, pineapple, coconut and marzipan appear. Full bodied, textured with weighted presence on the palate; flavors of lemon curd and marzipan dominate. Retains required acidity necessary for balance. Just left wanting for more fruit expression here. Finish is measured with slight detection of heat. Didn't see this improving previously and opinion remains un-changed. Drink now!
White

Full bodied and richly textured; a tapestry of ripe melon, pineapple, pear, lemon curd, orange zest and coconut flavors are balanced by energetic acidity and underlying minerality. Elevated level of viscosity; the generous fruit provides weighted presence on the palate that softly unwinds into long lingering finish. A well-crafted effort with a long drinking future ahead.

2010 Fontodi Chianti Classico Chianti Classico DOCG Sangiovese (view label images)
Decanted for two (2) hours. Do not know what to make of this wine. Consulting my prior observations; it is clear it was all over the place w/o ever seemingly coming all together. Perhaps a case of expectations far exceeding reality? In any event, the fruit expression was difficult to perceive through the dense shroud of dusty earth and bramble/underbrush element present. I can only conclude that I was premature in my consumption and that the optimal window for this wine lies in the future. Will be interested to read what others experience moving forward.

Concur w/devraj's observations. In a really nice spot right now and great for lock-down movie night. Would also concur with Fuel 55's observation regarding cork. Terrible shape on this one as well. Durand is definitely the way to go.
