Lovely dark color and nice nose with a touch of sandalwood. Rich and luscious fruit profile typical of Napa's best. I did not get the prunes or plum others mention. More blackberry, maybe currant. Soft fine grained tannins that last. Good now and probably a couple more years.

Decanted for 30 minutes. Aromas of blackberry and black currant jam, but most of all prunes, especially as it aired out. Still some vanilla as well. Aromas were strong.
Medium-full bodied. Lots of ripe dark fruit and jamminess accompanied by vanilla. Still juicy. But with it being 12 years past the vintage, the fruit was decently supported by smooth, well-integrated tannins and decent acidity. Finish was medium with nice subtle hints of tobacco and dustiness.
The fruit, acidity, and tannins were united. But at the end, the only fruit that came to mind was prunes. Tightropes the line between jammy and pruny, but my lasting impression is towards the latter unfortunately. 80 pts. Tbh, the wine is past its peak.

This was one of the last few vintages of Caymus that I own. I stopped buying them after 2013 as I feel they went for volume over quality and were living off of their brand name and reputation. This was a great bottle right at the opening and didn’t change much after a few hours which tells me it is at its peak. Sadly I need to find a new special occasion Cab as I won’t pay the $$$ they want for Caymus anymore and I feel the value isn’t there anymore.
Brought by a friend to dinner and served with filet mignon and a chocolate dessert. Decanted as short time. Very aromatic, ripe and rich. Aromas of chocolate and toasted oak followed by blackberry, cassis, plum, and herbal. Highly extracted, ripe and rich flavors with chocolate and toasted oak dominating followed by blackberry, black currant, green bell pepper, plum. Full body, long smooth finish. Not my typical style of cabernet, but a perfect match to the food.

I’m not getting any of the plum notes that many other tasters picked up. This wine tasted like a wine past its prime. It was a dark purple in color which I thought was too purple. I’m happy I didn’t pay full price for this bottle.

Deep and vibrant red. Nose was pleasant despite higher ABV. Wonderful hints of Pum and deep dark currant. Tannins were soft and velvety. Subtle oak and leather made for a nice finish.
Bottle was opened about 90 minutes before we poured it and was not decanted.
Full bodied red complimented our braised short rib dinner.

Soft floral aromas with a faint hint of green pepper. Color is dark red nearly black. Flavors of dark fruit, blackberry, cassis and dark morello cherry. Tannins are smooth, soft and rounded with perfect acidity. Finish is long. Very nice.

As an update to my previous review . I opened this bottle and allowed it to breathe for about 40 minutes, I did not decant. It was one of the best wines I have tasted, so smooth and such a wonderful mouth feel. It is at its peak, I have one bottle left and will drink it this year ..waiting for the perfect occasion.

Expectations exceeded with this perfectly performing Cabernet. On the advice of fellow CT contributors I popped and poured this 2011 Caymus and it took only a brief while to open. Could benefit from a short decant but not necessary with just a little patience. Paired with a late night snack of savory cheese. Deep ruby, purple at first glance. Lovely nose of immediate wafts of green bell pepper, chocolate, blackberry, plum, and black currant. Palate is full body, dark fruit driven, well structured with integrating yet supporting tannins and balanced acidity. Expect this wine can easily age further although it is a pleasure to drink now.

Most recent previous bottle was six months ago, at which time I noted that it was time to drink up. Demonstrating how little I really know, this one was noticeably better. Same structure and fruit as before, but it seems to have added some complexity and refinement. Too bad it was my last bottle, because the 2011 was their last Napa Cabernet from Caymus that didn't taste like a vanilla latte with cherry juice and alcohol stirred in.

I find this interesting as this tasting was different than one I had a year ago for the same wine. The wine was deep purple at the core and med garnet at the rim. The Viscosity was high and the alcohol was 14.8 %. The wine was clear but had significant sediment On the nose was a bouquet of forest floor, dark cherry, anise, prunes and baking spice. It was intense. On the palate I tasted was overripe cherry, earthy, prunes. pipe tobacco . The wine was dry with a long finish. The tannins, alcohol and acid were medium.This was incredibly well balanced and very smooth and lucious like a deep sensual kiss. This is a drink now wine although I will keep the few bottles I have left and try them year after year. I had this paired with a Charcuterie platter ...good times!!

As I wrote before, this is textbook Napa Cabernet. Not particularly complex or interesting, but it checks all the boxes - nice, assertive nose, lotsa plums and cherries, fairly rich, and a very good finish. Almost perfect balance right now, although I don't know how long that will last. Upon release, a certain high-volume wine magazine said drink through 2020. Right now I'd say drink through early 2022.

Very healthy cork. Really dark colour. Didn't really show its ten years age. The nose and taste didn't really match as it came across much more meaty and rustic on the nose but more balanced when you drink it. A very good glass of Californian Cabernet but less elegant than l remember the Caymus wines.

Nice assertive nose. On the palate, I got plums, dark cherries, and more plums. Textbook Napa cabernet - fairly rich, viscous, and a solid finish. Well balanced and probably at its peak right now. So why not a higher score? Because I'm old and cranky. This wine has zero personality and smells and tastes like it was made in a lab. When I bought it, there were a number of dramatically superior Napa cabernets available for $40 or less - Whitehall Lane, Chappellet, Sequoia Grove, Provenance, etc.

Concentrated dark fruit, slight bit of spice, hints of vanilla, oak, and clove. Perhaps this will continue to mature and age. It seems to be getting better. Some minerality but I expected more earthy,loamy thanim tasting now. Went well with ribeye steak. I’ll let the rest of my bottles age a bit to see how they evolve.

I paired this with a burger and fries! Great Pairing and great wine. It is full bodied and has a great mouth feel and complex flavors. Most say that it needs to be consumed this year but I think I will keep some for future years to see what develops. It currently has browner tones and this is what happens as this wine ages. I may do a comparison of a newer vintage with this one to see the differences. See my detailed notes .

The wine was clear with no sediment. The color was intense, opaque with the core being deep purple and the rim lighter. The viscosity was high. The wine was in good condition with medium intensity. There was a bouquet of mocha, chocolate, black cherry and a hint of leather. The wine was dry with high acidity, medium chewy tannings. The flavour was of bitter dark chocolate, black cherry and a hint of pencil lead. The alcohol was high and the wine full bodied. The length was medium.
This wine was of very good quality but is at maturity and could easily be consumed right now, however I think it may taste even better in a few more years . The wine was smooth, balanced and somewhat complex. At the current price a think that this is not a good deal as it is at maturity. I would pair this with a fillet mignon with a baked potato topped with an aged cheddar and some sea salt crusted asparagus. I would also be good with a fatty pizza with a-lot of meat.

Decent Cab with grilled steak. Open for about an hour but not decanted. Very fruit forward with stewed dark fruit. There aren’t any secondary flavors here and I don’t think it will change much. Like most of the ‘11 Napa Cabs I’ve had this is drinking beautifully. Currants, cassis, and huckleberries frame pungent earth and herb aromas. Structured and resonant in the mouth, with luscious dark fruit juxtaposed against melted richness and layered textures. Cinnamon bark and black olives lend savory complexity on the long finish. Excellent now but additional cellaring may provide fruther upside.

Dark purple color. Aromatics of stewed black fruits, caramel, licorice and oak. Warm and rich on the palate, with flavors of ripe black fruit, cocoa and vanilla. A little fat and decadent on the palate and finish, with very little tannic grip. Crowd pleaser, especially for the casual wine drinker. Simple and one dimensional next to middling left-bank Bordeaux at half the price.

This is like a genie in a bottle. Give it time to open up and it will grant you the wish of a fine wine. We opened and let decant an hour, but it needed more time to unwind. Bramble, blackberries and black cherry notes which continued with a little bit of cola when drinking. Some acidity with very moderate tannin and a very long finish.

So many 2011 Napa cabs are lacking concentration and body. This is not one of them. Caymus’ vast vineyard sources allow them to make an extremely consistent cab, despite significant vintage variation. I am sitting on many high-priced 2011 Napa cabs hoping that they will out-perform the vintage. Of the 2011s that I have tasted this far this wine is the best.

PNP, according to CT I purchased a case on 9/13/2013, 2 bottles left, much better than the bottle I opened on 2/2018, way better balance, softer, still plenty of sweetness and jammy fruit but balanced nothing over the top. Not going to get better but should last for several years in a consistent cool environment.

A little unbalanced in favor of alcohol up opening. Recork and keep in the fridge for 24 hours and decant for three more hours. It is more balanced, but the nose is more muted. Mid palate is smooth but hollow. Finish is long and with pleasant vanilla. Not as vibrant as when it was young. It shows the deficiency of the vintage.

Decanted for 2 hours, this 2011 cabernet did not disappoint. Black and red fruit aromatics with notes of vanilla and blackberry on the palate. Not as powerful as other Caymus cabs, yet easy drinking (especially with the Brasato di Manzo I ate with the wine)!

Double decanted. Very easy drinking; lots of oak and black fruit - definitely one of the more quaffable wines from the vintage. I would have pegged this as a zinfandel if I was tasting blind. I’d say this can go a few more years but I’m not sure how much better it will get from here.

Smooth, with resolved tannins. We let it sit in the glasses about 15 minutes before drinking with filet mignon. Dark berry and mocha aromas and flavors, with less vanilla than earlier vintages. Very nice. Too bad Caymus has gone so big and over the top with last few vintages. This was the last vintage we purchased and will not buy 2012 and later unless they return to their older style.

Opened 1hr, 13th bottle tasted since January 2014, cellared in 54 degree environment. That being said this bottle was the worse showing of the previous 12, fruit is fading, one dimensional, harsh, big alcohol, noticeable oak, not as sweet as previous bottles, perhaps this is the reason for such a poor showing. RS often covers up flaws, three bottles left, drink sooner than later!

Aerated and decanted for 2 hours prior to serving with Standing Rib Roast. It was a solid Cab and held up well to the beef, but, truth be told. it didn't stand out from the two other less expensive cabs the group consumed. I won't turn down another bottle as a gift mind you, but I'm not rushing to the store to drop $60 on a bottle!

Fairly similar profile as the 2010 vintage which I had recently. Purple fruit - dark cherry, currants, and blackberry. Smooth mid-palate with decent depth especially for the difficult vintage. No green notes as I've frequently encountered with many 2011 Napa cabs. As usual, a little rich and sweet but like the 2010 vintage not over-extracted and over the top fruit like some recent vintages. Solid finish but not overly long nor deep with a little vanilla and spice. One of the better 2011 cabs that I've had.

Deep purple to the edge. Rich bouquet of cassis, blackberry, vanilla, cinnamon and a touch of flint. Easy drinking palate of cassis, apple pie, baking spices with a hint of blueberry and a touch of oak. Full body, medium plus acidity with silky smooth tannins and a surprisingly long finish. This is a calmer, quintessential flavor profile Caymus vintage with more cassis and adequate acidity. 2012/2013 exhibits more in-your-face kirsch, vanilla and oak to varied critical review. This is a great wine still going strong despite the poor 2011 Napa growing season. It is less structured than 2010/2009, but the soild acidity makes up for that and it will please those that hated the changes brought with the 2012 vintage. Drink soon to get the most out of this wine.

This was the last wine opened and probably the best one. Rich creamy, velvety wine with a lead pencil mid palette that wraps the blackberry and cassis flavors. Long finish, balanced and absolute velvet. I don't remember the regular bottling (none SS) being this good.

I waited for a while to take this one out of my Eurocave. I apparently hit the mother load. It's now amazing. 2012 and 2013 are awful. This is beautiful. Not too much oak or vanilla. Gorgeous fruit from beginning to end. This wine is now the equivalent of the best sex I ever had in my my early 30s. Amazing. I wish I had more.

Pop and pour. Previously we scored this at 92 pts. Today the oak is showing and seems slightly out of balance. Dark fruits dominate once you get passed the oak. Over three hours it did not change. We're a bit surprised by the oak. Still nice and very "Caymus" in style but not what we remember from our last bottle a year ago. Today it drinks like a 89 pointer.

I drank this in stages having coravined it once and then hit the rest of the bottle a few weeks later. No loss or change that I can recall. I let it breathe for an hour or so. It was a very even drink with no harsh notes on either end. It had some flavor but not as robust as the 2009 or the more gregarious 12. I think I was expecting more and not such a subtle set of notes. 90 based on nothing wrong and most will think it a terrific wine with great balance. Perhaps its just the year.

First impression in the nose was plum and blueberry with some kind of very light vanilla and minor oak. On the palate same impression. The high alkohol level is noticeable at latest with the 2nd glass.
On day 2 it keeps the picture. For me personally I prefer more the Togni-style than Caymus. But it is a solid Cabernet and I do not see any serious reason to keep it longer in the cellar.

Two-hour Vinturi decant. Dark and forward fruit-berry mixture, lacking a bit in structure, but Caymus did manage to produce a very consistent product in a very inconsistent vintage. I'll give them props for that, but have decided to drink my Caymus stock young and focus elsewhere in Napa Valley with my limited three-Eurocave capacity.

Popped and poured. This is a very nice, not overly oaked, not overly jammy, fruit forward Napa Cab. It seems a little thinner than some I've had, but thats not a bad thing here. I believe the alcohol on this was 15.8 but it didnt bother me. It stood up very nicely to some medium NY strips on the grill with grilled veggies. However I have to say I really enjoyed it much more without the food. Very nice and noticeable blueberry tones on the nose. Caymus is one of those wines I go to when there isnt really much of a WA selection to choose from and I'm rarely disappointed. Do I still think I can get better QPR from many of the WA cabs/red blends than this? - yep.
Day 2- just finished the second half of the bottle. Drinking beautifully. Maybe I'm not so sure about that QPR comment, this was awfully good.

The 2011 Napa cabernet vintage IMO has the distinction of being the worst vintage since the 2000 vintage. Caymus seams to defy the typical perspective of great vintages, versus lesser vintages, with the lack of structure compared to lesser vintages. The 2011 vintage is classic by Caymus standards, koolaid color, rich, sweet, blackberry, dark plum, intense, more structured than most 2011's, decent balanced, yet simple. Paired amazingly with BBQ Briskit, if you could imagine!

Blackberry Koolaid, cherry cola, vanilla, a touch of oak, everything is decently balance. Structure, acidity and tannins are nearly non existent, this Caymus like most Caymus's is strongly dependent on fruit for it's definitive current pleasure. Drink soon for the love of the fruit!

Decanted 1hr, thick, rich and extracted, plenty of one dimensional currants/cassis, plums and hins of vanilla. The finish is soft, structure is minimum at best, tannins are nealy non existent. Paired quite nicely with BBQ Briskit with all the fixings. It is obvious that as with most 2011 California reds, this Cabernet is for early consumtion, I plan on drinking my remaining bottles over the next couple or three years!

The wine looks garnet colored. The legs are medium. There is no sediment in the bottle. It smells like vanilla, black currant (cassis) and raisin. It tastes like blackberry, blueberry, raspberry and black currant (cassis). The body is full. The wine has smooth texture. The wine finishes long. The wine has low acidity.

I almost never review a dry red wine under these circumstances ( open for over 24 hours in a decanter) but this Caymus was opened for Xmas day and all but 2 glasses were consumed. Twenty some hours later still one dimensional, what more can I say, it is what it is, drink soon for the jammy sweet fruit!

Had with a dinner of rigatoni and sausage. Pop and pour (no decant). This wine could have definitely used a decant -- oak, vanilla, and chocolate, but was not as full bodied as I would have liked (which is in line with other 2011s I've tasted). Seemed to come together better in the final galss of the evening. Would decant before trying again.

This was better than I was expecting it to be. Ripe red fruits really come alive on the nose. The palate is very rich and full body, tons of jammy fruits, a fair bit of oak, nice finish. Very modern style Napa Valley Cab.

I need to change my note on this one. It wasn't until 6 hours of decanting that this started to shine. The blueberry and leather started to punch from the glass, with an acid attack to match. Well integrated alcohol. Still a little pricy for what you're getting, it highly enjoyable. 92+
From magnum at Boulder. Opened by Ron and Karen. Lovely nose of black fruits and spice. Surprisingly open for business after a short decant. More black fruits with some caramel. Finishes well. A nice treat.

Decanted 2hrs, drank over 6 hrs, this bottle my 5th, 10 left was showing quite nicely. Plenty of currants, cassis, plums, vanilla, for me the sweetness was in check. I have come to the conclusion that this is a vintage for early consumption and this caymus is no exception. I have not tried the special selection yet but I assume even the SS will follow a close path to other 2011.

This is a typical "Caymus Style" heavy, vanilla, oak, cotton candy...bomb! It's well behaved and not obnoxious. This wine is drinking exceptional so young!
It will be interesting to see where this wine goes in the next decade or so.

Some may criticize Caymus as being over-extracted, or too commercial or not complex enough. But I love it. There is not another wine that is as consistent year in and out. You always know what to expect and they always deliver. Even in a bad vintage (2011). Great dark fruits, vanilla and caramel, and great balance with a long finish.

The nose is extremely well behaved. Defying descriptors, almost.
On the palette, it's textured, layered and velvety. Extremely well structured showing candied cherries and other dark fruits. Deeply extracted, while at the same time, framed by a text-book tannin structure. The finish is so long and just evolves in the mouth. Year in, year out, this wine is a model of consistency. I challenge you to find any average wine within the Caymus portfolio.

PnP and sipped w/o food with friends. Rich lush opulent black fruit with a heavy dose of oak. Almost candied, the wine went right up to the line of being too obnoxiously over the top, but did not cross it. I liked this far more than the 2007 vintage. Great sipping wine, might not go as well with food. Very happy to have tasted it.

Sweet and smooth with soft tannins and minimal structure, this Cab has some similar characteristics to a high end Aussie Shiraz. Mixed dark berries that have a jammy consistency dominate the palate with hints of currant, spice and milk chocolate. While I like this style, not what I usually expect from Caymus.

Blind Napa Cab Tasting (Vintage Wines San Diego, CA): Blind Napa Cab tasting at Vintage Wines. Least favorite since this was pretty much like chewing on a piece of wood. Tannic with medicinal notes. Usually like Caymus and was actually quite surprised because the usual fruit didn't seem to be there. Guessing once the tannins soften will improve but still not sure where the fruit went.

Multiple tastings with consistent notes. This is not your typical Caymus fruit bomb, quite a bit more austere. Ultimately disappointing, but I do love my fruit bombs. I've also tasted the 2011 Special Selection, a sort of jumbo version of this, definitely much more jammy, but tasted really disjoint, dare I say, discombobulated? I'll probably throw a few in the cellar for further review.

Smells like the vanilla ice from a orange creamcile.
Dark fruit, vanilla, chocolate, some earth and tobacco, cedar and finishes with some oak. The vanilla kind of overwhelms the wine and is imparted from the barrel aging. There is nice complexitiy. Finish lacks some length and the wine is a bit acidic. The tannins are silky. Overall it's a good wine, not overly impressed with the vanilla.

Took to a restaurant and decanted about an hour. Caymus always seems to impress me, even though I have seemed to drift away from the classic fruit bombs. The 2011 was no different than the rest. The nose was bursting with dark, bright fruit. The taste was classic Caymus of vanilla, chocolate, creamsicle (?), which was silky smooth with a lengthy finish. The quality and consistincy year after year is truly impressive.

Pnp left in the glass for 15 min. In the glass, dark garnet, pigmented, long slow legs. On the nose, tart red berries, spice, whiff of mint & tobacco. In the mouth, hot spice, sweet dry tannins, ok concentration, weenzy bitter and some heat pokes through at the back of the throat. Nice finish, could be a bit more complex. Needs more time for the tannins to mellow. Update: the QPR wasn't there for me at $77 retail.

Shared 3 bottles of 2011 Caymus Cab with the crew at Cellar 59 last night. We popped, aerated into a decanter and poured. What a beautiful wine, esp. considering it's just a baby at this point. Dark fruit and spice on the nose of this dark, dense red/purple/black wine. Cherries, currant, chocolate and spice are carried along this medium bodied wine, supported by well integrated and proportioned tannins, acidity and heat. Well layered aspects appear with each subsequent sip. The finish is long and is punctuated with a nice note of vanilla.

Vindredi (Bellevue, WA): Tasted blind. Warm, ripe nose with sweet red fruit, toast and vanilla. Full bodied, almost syrupy, dominated by the fruit (mostly red, and quite ripe). Finishes with very fine, elegant tannins. Very approachable and enjoyable to drink.

An ok wine, though a fruit bomb and quite one dimensional...not because it's young, it's just simple. Lacks any elegance and the structure is pretty clumsy. Would work ok at $20 for some palates, but at 65 it's a rip off.
Caymus is one of those cabs where it can be drank early and still be appreciated. Opened up during football Sunday and drank over a four hour period. Hint of cherry, licorice with a touch of cassis. Very fruit forward.
A nose of black cherry licorice, cedar, vanilla and leather lead to a full bodied wine with a big dark fruited flavor profile which turns to tobacco and earth on the long authoratative finish. Quite a complex offering which paired perfectly with a prime porterhouse.

Popped and poured. Closed nose, some dark fruit, but not much coming through. Surprisingly light/balanced, with a little cassis and blackberyy. You don't get the oak until late in the finish, but once it shows up it is strong. I know this wine is young, but underwelmed by this.

Nose of red fruit, ripe cherry. tar, cedar, vanilla. Palate repeats same profile - classic Caymus. Very young, would give this some time before drinking again. Soft tannins, will age nicely.

Dark garnet and high opacity. Very closed nose upon opening, needs to breathe a considerable time. It definitely gets better over the course of a few hours and develops nicely. Nose of burnt cherries, leather, licorice, some tar, very faint cedar. Taste of cherries, alcohol, sour grape. Good bite! Firm tannins, but a bit concerning as I would hope a wine this young would still have even more. Might limit the ageability on this one as the fruitiness is enough to warrant a little more acidity and tannin. Will have to wait and see... Complexity is good with a nice long finish and a lighter mouth feel. Fades to graphite minerality, cocao and holds its grip a nice long time. Not as powerful or elegant as I would have expected but still a very good wine. Young for sure and may just decide to mature into a real winner. A bit of a tossup at the price paid of $63 though.

Second time I have had the 2011. The first time was fruity right out of the bottle and quite smooth. The wine has closed down a bit since then. Tried a small taste in the glass and sensed the wine closed. I decanted the wine afterwards. After about 45 minutes the wine opened up. Not a total fruit bomb, but coming alive with flavor with some of the expected fruit one would associate with California Cab.

Big fruit bomb typical of Caymus. You can pop the cork and start drinking right away. This one will be good with a little age, but also is drinking well now. I liked it better than 2009-2010. I plan on getting some more of it before it sells out. This will be a fun wine to have in your collection. I like how Caymus can be drunk by almost any type of wine drinker including those that are not Cab fans.

The fruit, acidity, and tannins were united. But at the end, the only fruit that came to mind was prunes. Tightropes the line between jammy and pruny, but my lasting impression is towards the latter unfortunately. 80 pts. Tbh, the wine is past its peak.

This was one of the last few vintages of Caymus that I own. I stopped buying them after 2013 as I feel they went for volume over quality and were living off of their brand name and reputation. This was a great bottle right at the opening and didn’t change much after a few hours which tells me it is at its peak. Sadly I need to find a new special occasion Cab as I won’t pay the $$$ they want for Caymus anymore and I feel the value isn’t there anymore.

Brought by a friend to dinner and served with filet mignon and a chocolate dessert.
Decanted as short time. Very aromatic, ripe and rich. Aromas of chocolate and toasted oak followed by blackberry, cassis, plum, and herbal. Highly extracted, ripe and rich flavors with chocolate and toasted oak dominating followed by blackberry, black currant, green bell pepper, plum. Full body, long smooth finish. Not my typical style of cabernet, but a perfect match to the food.

Deep and vibrant red. Nose was pleasant despite higher ABV. Wonderful hints of Pum and deep dark currant. Tannins were soft and velvety. Subtle oak and leather made for a nice finish.
Bottle was opened about 90 minutes before we poured it and was not decanted.
Full bodied red complimented our braised short rib dinner.

Soft floral aromas with a faint hint of green pepper. Color is dark red nearly black. Flavors of dark fruit, blackberry, cassis and dark morello cherry. Tannins are smooth, soft and rounded with perfect acidity. Finish is long. Very nice.

Expectations exceeded with this perfectly performing Cabernet. On the advice of fellow CT contributors I popped and poured this 2011 Caymus and it took only a brief while to open. Could benefit from a short decant but not necessary with just a little patience. Paired with a late night snack of savory cheese.
Deep ruby, purple at first glance. Lovely nose of immediate wafts of green bell pepper, chocolate, blackberry, plum, and black currant. Palate is full body, dark fruit driven, well structured with integrating yet supporting tannins and balanced acidity.
Expect this wine can easily age further although it is a pleasure to drink now.

Most recent previous bottle was six months ago, at which time I noted that it was time to drink up. Demonstrating how little I really know, this one was noticeably better. Same structure and fruit as before, but it seems to have added some complexity and refinement. Too bad it was my last bottle, because the 2011 was their last Napa Cabernet from Caymus that didn't taste like a vanilla latte with cherry juice and alcohol stirred in.

I find this interesting as this tasting was different than one I had a year ago for the same wine.
The wine was deep purple at the core and med garnet at the rim. The Viscosity was high and the alcohol was 14.8 %. The wine was clear but had significant sediment
On the nose was a bouquet of forest floor, dark cherry, anise, prunes and baking spice. It was intense.
On the palate I tasted was overripe cherry, earthy, prunes. pipe tobacco .
The wine was dry with a long finish.
The tannins, alcohol and acid were medium.This was incredibly well balanced and very smooth and lucious like a deep sensual kiss. This is a drink now wine although I will keep the few bottles I have left and try them year after year.
I had this paired with a Charcuterie platter ...good times!!

As I wrote before, this is textbook Napa Cabernet. Not particularly complex or interesting, but it checks all the boxes - nice, assertive nose, lotsa plums and cherries, fairly rich, and a very good finish. Almost perfect balance right now, although I don't know how long that will last. Upon release, a certain high-volume wine magazine said drink through 2020. Right now I'd say drink through early 2022.

Very healthy cork. Really dark colour. Didn't really show its ten years age. The nose and taste didn't really match as it came across much more meaty and rustic on the nose but more balanced when you drink it. A very good glass of Californian Cabernet but less elegant than l remember the Caymus wines.

Nice assertive nose. On the palate, I got plums, dark cherries, and more plums. Textbook Napa cabernet - fairly rich, viscous, and a solid finish. Well balanced and probably at its peak right now. So why not a higher score? Because I'm old and cranky. This wine has zero personality and smells and tastes like it was made in a lab. When I bought it, there were a number of dramatically superior Napa cabernets available for $40 or less - Whitehall Lane, Chappellet, Sequoia Grove, Provenance, etc.

Concentrated dark fruit, slight bit of spice, hints of vanilla, oak, and clove. Perhaps this will continue to mature and age. It seems to be getting better. Some minerality but I expected more earthy,loamy thanim tasting now. Went well with ribeye steak. I’ll let the rest of my bottles age a bit to see how they evolve.

I paired this with a burger and fries! Great Pairing and great wine. It is full bodied and has a great mouth feel and complex flavors. Most say that it needs to be consumed this year but I think I will keep some for future years to see what develops. It currently has browner tones and this is what happens as this wine ages. I may do a comparison of a newer vintage with this one to see the differences. See my detailed notes .

The wine was clear with no sediment. The color was intense, opaque with the core being deep purple and the rim lighter. The viscosity was high.
The wine was in good condition with medium intensity. There was a bouquet of mocha, chocolate, black cherry and a hint of leather.
The wine was dry with high acidity, medium chewy tannings. The flavour was of bitter dark chocolate, black cherry and a hint of pencil lead. The alcohol was high and the wine full bodied. The length was medium.
This wine was of very good quality but is at maturity and could easily be consumed right now, however I think it may taste even better in a few more years . The wine was smooth, balanced and somewhat complex.
At the current price a think that this is not a good deal as it is at maturity. I would pair this with a fillet mignon with a baked potato topped with an aged cheddar and some sea salt crusted asparagus. I would also be good with a fatty pizza with a-lot of meat.

Like most of the ‘11 Napa Cabs I’ve had this is drinking beautifully. Currants, cassis, and huckleberries frame pungent earth and herb aromas. Structured and resonant in the mouth, with luscious dark fruit juxtaposed against melted richness and layered textures. Cinnamon bark and black olives lend savory complexity on the long finish. Excellent now but additional cellaring may provide fruther upside.

This is like a genie in a bottle. Give it time to open up and it will grant you the wish of a fine wine. We opened and let decant an hour, but it needed more time to unwind. Bramble, blackberries and black cherry notes which continued with a little bit of cola when drinking. Some acidity with very moderate tannin and a very long finish.

So many 2011 Napa cabs are lacking concentration and body. This is not one of them. Caymus’ vast vineyard sources allow them to make an extremely consistent cab, despite significant vintage variation. I am sitting on many high-priced 2011 Napa cabs hoping that they will out-perform the vintage. Of the 2011s that I have tasted this far this wine is the best.

PNP, according to CT I purchased a case on 9/13/2013, 2 bottles left, much better than the bottle I opened on 2/2018, way better balance, softer, still plenty of sweetness and jammy fruit but balanced nothing over the top. Not going to get better but should last for several years in a consistent cool environment.

A little unbalanced in favor of alcohol up opening. Recork and keep in the fridge for 24 hours and decant for three more hours. It is more balanced, but the nose is more muted. Mid palate is smooth but hollow. Finish is long and with pleasant vanilla. Not as vibrant as when it was young. It shows the deficiency of the vintage.

Decanted for 2 hours, this 2011 cabernet did not disappoint. Black and red fruit aromatics with notes of vanilla and blackberry on the palate. Not as powerful as other Caymus cabs, yet easy drinking (especially with the Brasato di Manzo I ate with the wine)!

Smooth, with resolved tannins. We let it sit in the glasses about 15 minutes before drinking with filet mignon. Dark berry and mocha aromas and flavors, with less vanilla than earlier vintages. Very nice. Too bad Caymus has gone so big and over the top with last few vintages. This was the last vintage we purchased and will not buy 2012 and later unless they return to their older style.

Aerated and decanted for 2 hours prior to serving with Standing Rib Roast. It was a solid Cab and held up well to the beef, but, truth be told. it didn't stand out from the two other less expensive cabs the group consumed. I won't turn down another bottle as a gift mind you, but I'm not rushing to the store to drop $60 on a bottle!

This isn't my favorite style of cabernet -- it is a bit over the top. Regardless of the style you like, there are better wines at far lower price points. I agree with others; it is in a good drinking window now and probably won't last much longer.

Fairly similar profile as the 2010 vintage which I had recently. Purple fruit - dark cherry, currants, and blackberry. Smooth mid-palate with decent depth especially for the difficult vintage. No green notes as I've frequently encountered with many 2011 Napa cabs. As usual, a little rich and sweet but like the 2010 vintage not over-extracted and over the top fruit like some recent vintages. Solid finish but not overly long nor deep with a little vanilla and spice. One of the better 2011 cabs that I've had.

Easy drinking palate of cassis, apple pie, baking spices with a hint of blueberry and a touch of oak. Full body, medium plus acidity with silky smooth tannins and a surprisingly long finish. This is a calmer, quintessential flavor profile Caymus vintage with more cassis and adequate acidity. 2012/2013 exhibits more in-your-face kirsch, vanilla and oak to varied critical review. This is a great wine still going strong despite the poor 2011 Napa growing season. It is less structured than 2010/2009, but the soild acidity makes up for that and it will please those that hated the changes brought with the 2012 vintage. Drink soon to get the most out of this wine.

Cheng's Drink Down our Cellar Party
This was the last wine opened and probably the best one. Rich creamy, velvety wine with a lead pencil mid palette that wraps the blackberry and cassis flavors. Long finish, balanced and absolute velvet. I don't remember the regular bottling (none SS) being this good.

I waited for a while to take this one out of my Eurocave. I apparently hit the mother load. It's now amazing. 2012 and 2013 are awful. This is beautiful. Not too much oak or vanilla. Gorgeous fruit from beginning to end. This wine is now the equivalent of the best sex I ever had in my my early 30s. Amazing. I wish I had more.

Pop and pour. Previously we scored this at 92 pts. Today the oak is showing and seems slightly out of balance. Dark fruits dominate once you get passed the oak. Over three hours it did not change. We're a bit surprised by the oak. Still nice and very "Caymus" in style but not what we remember from our last bottle a year ago. Today it drinks like a 89 pointer.

As always a solid effort from Wagner. Not as good as other years but still a really solid wine and much better then 2011 cakebread and Dunn for that matter.

Why not drink wine for St. Patty's Day? Very consistent wine, even in a poor vintage. Typical full body I have come to expect from Caymus. Notes of vanilla, mocha, blackberry and a little dark red cherry or raspberry. Excellent finish.

I drank this in stages having coravined it once and then hit the rest of the bottle a few weeks later. No loss or change that I can recall. I let it breathe for an hour or so. It was a very even drink with no harsh notes on either end. It had some flavor but not as robust as the 2009 or the more gregarious 12. I think I was expecting more and not such a subtle set of notes. 90 based on nothing wrong and most will think it a terrific wine with great balance. Perhaps its just the year.

On the palate same impression. The high alkohol level is noticeable at latest with the 2nd glass.
On day 2 it keeps the picture. For me personally I prefer more the Togni-style than Caymus. But it is a solid Cabernet and I do not see any serious reason to keep it longer in the cellar.

Popped and poured. This is a very nice, not overly oaked, not overly jammy, fruit forward Napa Cab. It seems a little thinner than some I've had, but thats not a bad thing here. I believe the alcohol on this was 15.8 but it didnt bother me. It stood up very nicely to some medium NY strips on the grill with grilled veggies. However I have to say I really enjoyed it much more without the food. Very nice and noticeable blueberry tones on the nose. Caymus is one of those wines I go to when there isnt really much of a WA selection to choose from and I'm rarely disappointed. Do I still think I can get better QPR from many of the WA cabs/red blends than this? - yep.
Day 2- just finished the second half of the bottle. Drinking beautifully. Maybe I'm not so sure about that QPR comment, this was awfully good.

The 2011 Napa cabernet vintage IMO has the distinction of being the worst vintage since the 2000 vintage. Caymus seams to defy the typical perspective of great vintages, versus lesser vintages, with the lack of structure compared to lesser vintages. The 2011 vintage is classic by Caymus standards, koolaid color, rich, sweet, blackberry, dark plum, intense, more structured than most 2011's, decent balanced, yet simple. Paired amazingly with BBQ Briskit, if you could imagine!

An outstanding effort, especially given the conditions of 2011 in Napa.
This is a typical "Caymus Style" heavy, vanilla, oak, cotton candy...bomb! It's well behaved and not obnoxious. This wine is drinking exceptional so young!
It will be interesting to see where this wine goes in the next decade or so.

Some may criticize Caymus as being over-extracted, or too commercial or not complex enough. But I love it. There is not another wine that is as consistent year in and out. You always know what to expect and they always deliver. Even in a bad vintage (2011). Great dark fruits, vanilla and caramel, and great balance with a long finish.

This is a prodigious wine!
The nose is extremely well behaved. Defying descriptors, almost.
On the palette, it's textured, layered and velvety. Extremely well structured showing candied cherries and other dark fruits. Deeply extracted, while at the same time, framed by a text-book tannin structure. The finish is so long and just evolves in the mouth. Year in, year out, this wine is a model of consistency. I challenge you to find any average wine within the Caymus portfolio.

PnP and sipped w/o food with friends. Rich lush opulent black fruit with a heavy dose of oak. Almost candied, the wine went right up to the line of being too obnoxiously over the top, but did not cross it. I liked this far more than the 2007 vintage. Great sipping wine, might not go as well with food. Very happy to have tasted it.

Sweet and smooth with soft tannins and minimal structure, this Cab has some similar characteristics to a high end Aussie Shiraz. Mixed dark berries that have a jammy consistency dominate the palate with hints of currant, spice and milk chocolate. While I like this style, not what I usually expect from Caymus.

Thank you, JeffM_Florida for summing it up...sweet and flabby! I have loved Caymus for years, but the last three vintages have me questioning continuing my vertical. This is always a crowd pleaser when I serve it, but for my personal taste, the recent offerings leave much to be desired when compared to Caymus of old. If that makes me a grumpy old man telling kids to stay off my lawn, so be it. Sadly, I miss what this producer once stood for...

At Schnells. Needs at least one hour decant. Still young, but tannins show promise and soften with decanting. Plums, dark berries, cassis, oak, leather. Dark, luscious.

Multiple tastings with consistent notes. This is not your typical Caymus fruit bomb, quite a bit more austere. Ultimately disappointing, but I do love my fruit bombs. I've also tasted the 2011 Special Selection, a sort of jumbo version of this, definitely much more jammy, but tasted really disjoint, dare I say, discombobulated? I'll probably throw a few in the cellar for further review.

Decanted 1.5 hrs, currants, cassis, plums, outstanding balance for such a young cab, tannins are soft and already showing signs of integration. It is amazing how these cabs from caymus are so consistent year after year, sure to improve with short term bottle age. 90+

Strong nose with aroma of black pepper. Flavors of licorice, butter and a hint of black cherry. Slightly dry. Good bold flavors! Even better after breathing.

This wine was really enjoyed by all. Typical Caymus fruit but more balanced and not cloying like the 2008 was. Notes of leather and coco came thru in a compliment to the fruit.

The wine looks Inky colored. The legs are Medium. It smells like Blackberry, Red Currant, Fig, Fig, Fig, and Fig. It tastes like Red Currant, and Blackberry. The body is Full. The wine has Smooth texture. The wine finishes Medium. Very good.

Dark fruit, vanilla, chocolate, some earth and tobacco, cedar and finishes with some oak. The vanilla kind of overwhelms the wine and is imparted from the barrel aging. There is nice complexitiy. Finish lacks some length and the wine is a bit acidic. The tannins are silky. Overall it's a good wine, not overly impressed with the vanilla.

Took to a restaurant and decanted about an hour. Caymus always seems to impress me, even though I have seemed to drift away from the classic fruit bombs. The 2011 was no different than the rest. The nose was bursting with dark, bright fruit. The taste was classic Caymus of vanilla, chocolate, creamsicle (?), which was silky smooth with a lengthy finish. The quality and consistincy year after year is truly impressive.

Pnp left in the glass for 15 min. In the glass, dark garnet, pigmented, long slow legs. On the nose, tart red berries, spice, whiff of mint & tobacco. In the mouth, hot spice, sweet dry tannins, ok concentration, weenzy bitter and some heat pokes through at the back of the throat. Nice finish, could be a bit more complex. Needs more time for the tannins to mellow. Update: the QPR wasn't there for me at $77 retail.

Shared 3 bottles of 2011 Caymus Cab with the crew at Cellar 59 last night. We popped, aerated into a decanter and poured. What a beautiful wine, esp. considering it's just a baby at this point. Dark fruit and spice on the nose of this dark, dense red/purple/black wine. Cherries, currant, chocolate and spice are carried along this medium bodied wine, supported by well integrated and proportioned tannins, acidity and heat. Well layered aspects appear with each subsequent sip. The finish is long and is punctuated with a nice note of vanilla.

Vindredi (Bellevue, WA): Tasted blind. Warm, ripe nose with sweet red fruit, toast
and vanilla. Full bodied, almost syrupy, dominated by the fruit (mostly red, and quite ripe). Finishes with very fine, elegant tannins. Very approachable and enjoyable to drink.

Caymus is one of those cabs where it can be drank early and still be appreciated. Opened up during football Sunday and drank over a four hour period. Hint of cherry, licorice with a touch of cassis. Very fruit forward.

A nose of black cherry licorice, cedar, vanilla and leather lead to a full bodied wine with a big dark fruited flavor profile which turns to tobacco and earth on the long authoratative finish. Quite a complex offering which paired perfectly with a prime porterhouse.

Popped and poured. Closed nose, some dark fruit, but not much coming through. Surprisingly light/balanced, with a little cassis and blackberyy. You don't get the oak until late in the finish, but once it shows up it is strong. I know this wine is young, but underwelmed by this.

Dark garnet and high opacity. Very closed nose upon opening, needs to breathe a considerable time. It definitely gets better over the course of a few hours and develops nicely.
Nose of burnt cherries, leather, licorice, some tar, very faint cedar. Taste of cherries, alcohol, sour grape. Good bite! Firm tannins, but a bit concerning as I would hope a wine this young would still have even more. Might limit the ageability on this one as the fruitiness is enough to warrant a little more acidity and tannin. Will have to wait and see... Complexity is good with a nice long finish and a lighter mouth feel. Fades to graphite minerality, cocao and holds its grip a nice long time. Not as powerful or elegant as I would have expected but still a very good wine. Young for sure and may just decide to mature into a real winner. A bit of a tossup at the price paid of $63 though.

Second time I have had the 2011. The first time was fruity right out of the bottle and quite smooth. The wine has closed down a bit since then. Tried a small taste in the glass and sensed the wine closed. I decanted the wine afterwards. After about 45 minutes the wine opened up. Not a total fruit bomb, but coming alive with flavor with some of the expected fruit one would associate with California Cab.

Big fruit bomb typical of Caymus. You can pop the cork and start drinking right away. This one will be good with a little age, but also is drinking well now. I liked it better than 2009-2010. I plan on getting some more of it before it sells out. This will be a fun wine to have in your collection. I like how Caymus can be drunk by almost any type of wine drinker including those that are not Cab fans.
