My last bottle. The fruit has faded in relation to prior bottles. Dried herbs, plum and sour cherry. Dry and austere. Even perfectly cellared at 53 degrees (and by the way the cork was perfect after 14 years), this wine is past its prime.

I figured at this age it wouldn't get any better so it was time. Slow ox in bottle for a couple hours, dark, rich, still has life left. I got some creamy vanilla mid palate which I wasn't a fan of. Nothing wrong with it but not exciting either.

My last bottle. The wine looks purple colored. The legs are medium. There is light sediment in the bottle. It smells like black currant (cassis), cherry and vanilla. It tastes like black currant (cassis), raspberry, cherry, dust, vanilla and oak. The body is medium/full. The wine finishes medium. The wine has medium acidity. I think this could have lasted a few more years.

Powerful, dark, and brooding, this flaunts a bouquet of black currants, fancy oak, and licorice over secondary nuances of balsam and tar. The full bodied palate is integrated and has a coquettish piquancy about it, showing black fruit flavors, ample tannin, attractive richness, and lovely bottle age. A note of espresso laces the long finish. As complete and delicious as it gets.

In light of the adulation bestowed on the 2007 California Cabernet's, this wine somehow missed the press release.
This is a dark inky wine in the glass, and very restrained with the aromas. There are faint hints of cassis, cedar, and a bit of loamy soil. On the palate this is very tannic, with elements of smoke, cedar, and dried plums. It does not offer the complexity, range, or finish one would expect from a heralded vintage.
Considering the price, this is a disappointing wine from the tasting experience as well as on the wallet.
There are a lot of Super Tuscans or Maremma Cabernets that would crush this wine in a blind tasting.

Christmas Dinner Hall Cabernet Mini-Vertical (My home, Falls Church, VA): with Christmas dinner as part of a mini-vertical (2005-2007). This was the family's least favorite of the three, with a dry chalky texture that didn't quite fit compared to the other two vintages. If we'd only opened this bottle, I think we would have commented on the chalkiness and enjoyed the wine. With the other two bottles opened, this was finished last.

Very classic Napa CS. Cassis, dark fruit, tar, with an underlay of vanilla oak. Fairly well integrated and balanced for this level of cab. Not getting the disjointed notes that a lot of other people have. There is a bit of alcohol at the end, which is the only real issue for me. Overall, drinking fairly well.

Big deep bold cali cab with rich berries and dark fruit. Good balance, but surprisingly tanic for an '07 vintage. I would recommend decanting to help open up. Brick red in color, rich and fruit forward. A bit in your face, but definitely enjoyable. I'm a fan. This wine was traded to me by my good friend Glider. Thank you Glider!!

Wine is still a bit young but opening a least 30 minutes and a decanter will serve it well. The fruit is still developing but will be outstanding in a year or 2.

By the glass selection at Nicholas. It was too dark to evaluate color and I couldn't get a good nose out of the glass used, but the wine had very well integrated tannins with a very smooth, silky mouth-feel, long legs, and lovely notes of cocoa and black cherry. It could be that this was the first wine to "break" my self-imposed six-week fast from wine, but I truly enjoyed this wine.

TN: Heidsieck, Fontalloro, Clos des Papes, Monte Bello, Hall (Pronza's): Served from Magnum. This is very nice, open and ready to go. I don't think its quite at a level of the 08, which I find very interesting. 08 is really a better vintage than many give it credit for (if not as consistent). Purple in color. The nose has cocoa powder, cassis and a bit of oak showing. On the palate, this is upfront and pleasurable. Perhaps not as complex (although still young), but has great fruit and is very nicely balanced. Went well with the food.

Consistent with earlier tasting notes - very approachable and flavorful, a consistent favorite with full forward flavors of black raspberry, black cherry, currant, hints of spice and dark chocolate. Available tasted by the glass at Willys Steak House & Grill in Shrewsbury, Massachusets. Great complement to beef steak dinner with Jeff G.

Popped and poured. Medium-plus deep crimson. Fragrant aromas initially show black cherry, plum and red bean paste which evolve with air into moderately complex, complimentary notes of tobacco leaf and earthy, dried herbs. Medium-plus body. On the palate, the flavors are certainly more aligned on the red fruit/ripe cherry side of the spectrum along with ripe currant, a touch of mocha, and some spice from oak. The tannins are somewhat chunky yet overall smooth on the moderate close. While seemingly not built for the long haul, this decent Napa Cab could nonetheless use another 1-2 years to grow and hopefully show just a bit more.

An excellent wine with what I feel is alot of potential. Muted nose with a nice backbone of deep red and blue fruits, a bit tannic, but very much disjointed at this point. This may improve significantly with age, but then again???? I am not totally sold on the potential of this wine but at 35 bucks a bottle, maybe....

Was served at a steakhouse private function and it met expectations. This is clearly middle of the fairway 2007 upscale Cab that was a touch green upon opening (cellaring from here is debatable) and had the expected berry notes and some high calming notes such as cedar and tobacco. Several bottles were PnP'd and they opened up after about an hour - definitely decant if possible. Not my top choice to pair with a fatty steak but a couple days later a sealed remnant was revisited and it had smoothed out to a very palatable Cab on its own.

3 From Hall (Bloomington): A wine with tons of potential. A little tannic currently but over the night it opened up. Spice, cherry, coffee and oak. Good acidity and the oak is not too over powering and should settle down with some time. I see this wine with a 15 year window of drinking enjoyment. 92-94.

Bottles consumed so far had been a bit immature. Maybe we are turning a corner. This has been much more together so far. 2006 & 2008 have been so nice already, maybe 2007 is headed there after an adolescent interlude...?

Pop and pour - lots of concentrated fruit, but tannins tightly wound and it was disjointed (too young). Double decanted and it opened beautifully. Nose of blue and black fruit, cedar, and some spice. Taste followed: dark berry favors, cocoa, a little nutmeg and clove, with a medium finish with vanilla and fruit. Hold on to this for a couple of more years or decant to drink now.

I found the 07 just as pleasurable as the 06...short decant and run through vinturi, powerful and bold...long finish with lots of fruit and vanilla undertones...some oak and certainly will last several years in the cellar.

Pop and pour, definitely need a decant. Solid nose of cassis, mint, vanilla, cedar, green tobacco. On the palate, sour cherry, red currant, cedar, bell pepper. Finishes long with massive tannic structure. Kind of disjointed right now, seems to have good raw material, fruit is almost completely hidden right now. Hold for at least five years. Have some left, will try tonight to get a Day 2 reading.

Decanted for 2 hours, tasted over next 4. Very dark purple color, 95% opaque and big legs. Powerful nose of rose and blackcurrant with a bit of lavender and orange. Palate is medium weight with good acidity and fairly strong tannins and at times comes across as thin but in general, I just would like a bigger push of umami to sustain the finish. 5+11+14+7 = 87

Fathers Day with friends we ooen a few nice wines. BV 93 - Was slighly brown on edge, flavors were nice, suttle. The Hall 07 Cab was significantly different in flavor. Good color plently of life left in the bottle in caparison. The Phelps 06 merlot was a good in between, had oak and good flavor drinking at it's best right now. We finished with the Pride Cabernet which was the best of all. Everything on par. Very enjoyable.

Unremarkable. Opened 2 hours before drinking. No decant. Higher than usual tannins compared to other 2007 Napa cabs. Usually, over the course of tasting a wine like this, the tannins mellow and the fruit moves forward. This one did not ever present that expected, positive development.

Deep ruby/garnet color with flavors of chocolate, coffee, spice, plum sauce, and anise. High-pitched alcohol that leaves the mid-palate a bit hollow but picks up the pieces very nicely and manages to follow through with lovely mineral-filled finish. Best to let the tannins resolve and from 2012 to 2018.

decanted 2.5 hours, paired with grilled filet mignon. I can't give it any better chance than that, but it was just very good and not special. Not too tight, so I'm not sure it's going to get a lot better in a few years. a touch thin in the mouth, with a nose and palate of fairly simple (and rich!) dark fruit flavors. medium finish.

Cellar to glass, no decanting. Think it would have been beneficial to decant a bit. The wine seemed to have all of the great Hall components, but did not have the normal smooth transition from fruit to tannin. Felt like they were working against one another on the palate. Will try again soon with decant and better temperature acclimation.

Well I wish it was as good as the 2006. Not nearly as fruit forward as I'd expect from an '07 Napa Cab. Craig and Kathryn Hall probably put all the good fruit into the Reserve. Still a big wine, a hint of cassis drowning in a sea of tannins, almost earthy. Drink with dinner.

Dryand tannic. Drank w Fred on the balcony at the Ritz Carlton in Key Biscayne. One hour decant. Disjointed, tough, almost unenjoyable. Trip to Napa Valley; 1/30/2011-1/31/2011 (Napa, CA): 82% cabernet sauvignon, 13% merlot, 4% petit verdot, 1% cabernet franc. Jammy, fruit-forward, cassis, oak but not over the top, medium finish, bitter tannins, needs more time.

This one's a bit of an enigma for me. I like the maroon color and the and the complexity of the nose, with blackberry, lots of cassis and even a little green pepper. It's when you get to the mid-palate that I get confused: There's the expected fruit, but there's also a bitter rubbery oakiness that I'm not crazy about. On the finish, this gets prolonged a bit and overwhelms everything else for me. I liked this better the last time I had it. Go figure.

Opened for several hours. Dense purple-garnet color. Bouquet of redcurrant, mulled spices, black cherry. Opens with big flavors of black currant, coffee, bitter chocolate- still needs to loosen up and allow the underlying fruit to come out more. Strong in acid and firm gripping tannins- that round out on the finish-showing nice length. Needs time, but has the stuffing.

Blind home wine tasting with MOT Scoring sheet: Unfortunately this one does not live up to the promise or the hype of Hall. I will see what it is like after a few days. A very slight terrior and earthiness on the nose and just generally seems to be tooo young. Dry finsh with heat and even a bite in the early part of the finish. Heavy to moderate tannins with dark fruit. Unless it improves, not one I will buy to store in the cellar.

tasted on opening and then again the next afternoon. nose - starts out slightly spicey then transitions into a sweet toasted oak mouth - mid to full bodied, some nice juicy berry fruit on the attack though not overdone and in fact even restrained, follows by a mouthful of big dry tannins, and a maple sweet quality on the finish. Currently i would say the oak outdoes the fruit. Probably overoaked but to be generous I'd give this wine some time to integrate.

Used a Vinturi. Dark garnet and a blushed rim. Black cherries, smoke, vanilla and berries. A smooth palate, with round tannins and a nice finish. There's a mid-palate, just not very evident. Could use another year of bottle age to harmonize. This is a little disappointing considering the vintage and how much I enjoyed the '06. Still a great Napa Cab, just not broad or deep enough to be outstanding; a little more complexity would really help. Drink 2012 - 2016.

very tight upon opening. lots of black cherry, black berry on the nose. after 1 hr decant the fruit aromas soften to reveal some leather, currant. well integrated tannins with more cherry and blueberry on the palate. there is some tobacco, leather and tar on the finish. good balance and long pleasant finish. great QPR at $30.

Good acidity and the oak is not too over powering and should settle down with some time. I see this wine with a 15 year window of drinking enjoyment. 92-94.

Finishes long with massive tannic structure. Kind of disjointed right now, seems to have good raw material, fruit is almost completely hidden right now. Hold for at least five years. Have some left, will try tonight to get a Day 2 reading.

Go figure.

nose - starts out slightly spicey then transitions into a sweet toasted oak
mouth - mid to full bodied, some nice juicy berry fruit on the attack though not overdone and in fact even restrained, follows by a mouthful of big dry tannins, and a maple sweet quality on the finish. Currently i would say the oak outdoes the fruit. Probably overoaked but to be generous I'd give this wine some time to integrate.

Still a great Napa Cab, just not broad or deep enough to be outstanding; a little more complexity would really help. Drink 2012 - 2016.
