    Developed, medium-deep honey-yellow color with a bronze core. Sweet-toned, rich and quite fine-tuned nose with complex aromas of pear and apple jam, some developed creaminess, a little bit of vanilla, light honeyed tones, an oxidative hint of Tawny-like nuttiness and a touch of overripe apricot. The wine is broad and full-bodied on the palate with quite round and mellow flavors of beeswax and honeycomb, some pear jam, a little bit of developed waxiness, light Tawny-like flavors of caramel and nuttiness and a hint of canned peach. The wine is only medium-to-moderately high in acidity, which makes the wine feel quite round and gentle, but is high enough to keep the wine well in balance. The finish is quite long, rich and mellow with pretty long flavors of tart green apples, wizened citrus fruits, some cantaloupe, a little bit of pear jam and a hint of tangy salinity.

    A beautiful, wonderfully developed and harmonious Pouilly-Fumé that doesn't feel that old for an old Sauvignon Blanc - this variety isn't known for the aging capabilities of dry white wines, so it is truly an experience to taste a +30 yo dry Sauvignon that isn't just remarkably complex and tasty, but also youthful enough to show even some further aging potential. The wine feels like it is very close to its plateau of maturity, but I wouldn't be surprised even if it developed further from here. Although I would've enjoyed a bit higher acidity, this is an exceptional wine all the same. Very highly recommended.
