Académie des Cinquante Italy Tasting (Restaurant de Watergeus, Noorden, NL): Tasted blind. Pale colour, rich but refined style, extremely classy, everything in place, citrus, gentle wood, “ruht in sich” ("sovereign" is the best translation I can think of), pure and relaxed, such elegance and finesse, flowing from the palate to the long and dreamy finish over the most delicate bitters.

Not as much salt and seaweed compared to the 2017, more subtle and less concentrated but on the 2nd day this became a lot more like a chassagne with its lime, linearity and precision. Very good. But the 2017 stood out
