Ah ha! A better bottle than the last! Not that the wine has gotten better but this was a fresher sample (and I still don’t think it’s going to get better!) but it is a well balanced cepage, with good acidity. I guessed a ‘98 Pol Roger

Still with a nice mousse, bruised orchard fruit and almond liqueur, lots of lingering sweetness on the palate. Not particularly racy or tense. I don’t think it stands to improve

Drank 2nd within a 95-97 vertical tasting during a Cantonese lunch at Jade Palace. Opted for PnP - in retrospect may have benefited from brief airing and removal from the ice bucket a bit sooner. But it did open up a bit in the glass - has matured well and was very enjoyable. Fine bead (as expected)

Chateau de Fargues Vertical; 6/1/2016-6/4/2016 (Sens, San Francisco): Medium golden; rich yeasty nose, nice complexity; palate is medium bodied, nice combination of freshness and richness; medium-long finish. Excellent champagne. 91
