Unlike what some others prefer, my approach is not to decant but to pop and pour. I particularly enjoyed the mild aromatic initial pungency that was very elegant and addictive, a quick whiff after popping the cork. When quite chilled and poured into the glass, a lot of aromatic sweet apples, skin, core, and just a touch of lemon. Not too tart either. After 15 minutes in the glass, light honey aromas. This is unlike many other 2016 vintage Chablis or White Burgundy for that matter. In a very good spot right now where there is very vibrant freshness and enough fruit (I worry when the fruit completely fades before the next day). Elegant acidity and body, flowers, ground almond paste, and just a tiny touch of citrus. This is more approachable than a structured and linear 2014, and doesn't have the marine pool / seaweed flavors of 2011 tasted two years ago. Pair this with seafood and as much sauce as you need. Phenomenal with cooked shellfish. Extremely classy and classical at the same time, one of the best expressions of Dauvissat Forest. For sure better than 2018 vintage. Could age a lot longer for sure, but for those who like it fresh like a younger Dauvissat village Chablis, this is in a great spot now approaching the 8 year mark. Wish I had more.

A very good showing today on pnp and developed nicely in the decanter. Some mirabel fruit, faint hint of classic oystershells, voluptuous for chablis but enough cirtic cut to hold it together. Overperformance vs my expectations for the vintage especially. 92+

France Trip: Paris, Champagne, Burgundy; 9/3/2023-9/17/2023 (Paris, Champagne, Burgundy): Pale gold color. Split bottle between the four of us at Le Millesime in Chambolle-Musigny. Oyster and clam shells, brine, zested lemon and orange peels, Mandarin orange, shellfish broth on the nose. This palate is so very briny; lemon, Meyer lemon, lime, limestone, crystalline and so Dauvissat in its purity.

Decanted and served and frankly this would benefit from a longer good hour decant. No issues with premox of course.. Side by side with the 2016 Vaillons ( Papies 93) . This is more steely, more firm and less aromatic but every single bit the level one expects and is indeed a touch youthful still and with a few of its best years ahead while the Vaillons felt on point and at peak. Mineral , soft flint and with a lovely balance. The shy sister of the Vaillons but maybe the one that ends up winning the marathon. 92 for now

Pale primrose; this has an austerity & steeliness on the nose with a whiff of cow-lick; pinpoint focus, tremendous tension & energy, a lick of salinity; power surges through the intense finish. Lingering. The definition of great 1er cru.

On opening, the quite deep gold colour and odd aromas had me worrying about premox. After two hour's oxygen, they had all blown off, revealing a top quality 2016 La Forest, clearly superior to the recent, very good 2017. Grand Cru quality, in my view. Presently, at a nice stage of its development - very early maturity - with attractive development and more nuances than the 2017 or previous tastings of the 2016. Drunk over three evenings, during which it did not change. Complex aromatics enhanced by the Zalto Denk'art Burgundy glass. Sea spray, lemon citrus, grapefruit, wet slate, oyster shell, nascent baking spices, pears, tinned peaches and meadow flowers. Seamless on the palate. Good volume, depth and concentration. Intense with vibrant acidity. Mineral and chalky with grapefruit, peach and pear, yellow apples, lemon and a suggestion of caramel. Finishes long, saline and mineral. Perhaps, unlike the 2014 say, it does not have the ingredients to make really old bones (improving into the 2030s), but its an absolutely delicious, classic Chablis right now.

Tasted twice this summer with similar notes. I have found Dauvissat Le Forest to be a great value and a wine that drinks well it its youth. Round with rich fruit and a nice acid backbone.

Shinji Chablis lunch. Bottle breathed ~2 hours beforehand already. Appearance is clear, medium intensity, lemon colour with hint of gold. Thin legs. Nose is clean, medium+ intensity, with aromas of fragrant mandarin orange kumquats, underlying iodine and the usual brine saline minerals. Developing. On the palate, dry, medium+ acidity feel, medium alcohol (13%), medium+ body. Medium+ flavour intensity, with flavours of honeyed Mandarin oranges, rich citrus lemon pith, ripe peaches, ripe apples, chrysanthemum. Hints of oil and caramel onto the rich long finish. Very good quality. Very enjoyable, though I get the sense that this seems to have evolved faster than expected given the age. This clearly will not be as long-lived as the 2014 of this wine.

This is absolutely gorgeous, even better than a bottle 6 months ago. Not necessarily all that much of what I think of as Chablis typicality, but it is so damn delicious that it hardly matters. This opens as flinty, fresh and mineral. Oyster shell and lemon zest are abundant on the nose. The palate is similarly bright and flinty, but joined by a whiff of oak and ripe gooseberry. This is notably refined, and absolutely delicious. It will be hard to wait on my remaining bottles, but this is well-poised to age gracefully.

Had an itch to open this after a disappointing clos de vougeot watching the Tour de France. I knew there was a good chance this would be what I wanted Dauvissat rarely disappoints and this was no exception. Chablis is so much finer than the wines further south in the Côte de Beaune and I quite often prefer their flinty mineral profile. This has that in spades. Beautiful aroma, classic Chablis like a fresh sea breeze with a complex mineral note which is so typical in the best wines. This bottle captures all that beautifully with a citrus note. Laser like focus and a texture to match this is a dynamite example of Premier cru Chablis. Still got a bit of baby fat to shed but really enjoying this so don’t be afraid to open. Premier cru Chablis doesn't get any better than this.
Edit: After 90 minutes this is now bordering on the spectacular. At least the best premier cru Chablis I've ever had. Gave it 94 initially but it's just getting better and better as it sits in the glass. Brilliant.officially the best premier cru chablis ive ever had.

What a wonderful bottle of Chablis. Of course it’s too young, but I needed a special white for Easter.
There is a faint hint of reduction on PnP. Served at 60* which helped coax out notes of underripe nectarine, honey, and cherry blossom. Anjou pear with lime peel cut on a lingering finish. Fleshy fruit with a mineral spine, but it feels so light on the palate. A world class wine

Drunk over two days, during which - after the first hour - it did not change. Deep vibrant gold, quite deeply coloured. A bouquet of iodine, grapefruit, chalk, crisp green apple, tide pool, greengages and nascent meadow flowers. On palate, powerful, with plenty of volume and concentration. Precise and intense. Excellent, racy acidity. Overall, very well balanced; aligned and in proportion. Grapefruit and lemons, spices, greengages and warm tilled soil. Also, quite mineral with a touch of phenolic astringency. Saline with a long, dry finish. Drinking well now. Ideally, perhaps better in another 2-3+ years. A Grand Cru quality Chablis, in my opinion.

Christmas Party (Chez Michelis): The wine is impressive in the nose, high intensity, nice citrus, lemon, pear and green apple. The wine shows power in the palate, medium acidity, mineral, citrus, some vegetal notes too, full body, medium to long finish. The wine is still quite young with lower than expected acidity but that could my fault because I haven’t tried this before. Outstanding quality

Un vin qui fait honneur au style de la maison. Rien d’exotique ici, ce qui arrive parfois sur ce millésime riche. C’est bien effilé, sec, avec une finale de pierre. Encore très jeune, bien sûr, mais quand même passablement ouvert. Une longueur et une dimension qui approchent le grand cru. Bien que le 2011 est plus plaisant en ce moment, celui-ci montrera sans doute plus de profondeur dans quelques années. Excellent. 92++ pts
Gylden strågul. Pen nese. Godt moden, litt tropisk- og delvis nedfallsfrukt (kunne vært renere) på duft. Mineralsk; sjøaktig preg, samt forsiktig eikebruk. Ganske svær og breial frukt i munn. Modne, gule epler, samt overmodne sitroner og noe grapefrukt. Stram, men mer fruktdrevet enn Forest ellers. Pen lengde med syrlig og småbitter sitrusfrukt. Ikke akkurat klassisk, men god utgave av denne vinen.

It smelt of river rocks drizzled with honey. It was quite thick and unctuous in the mouth but by no means heavy. It had some citrus rind to the back-end and plenty of salinity.

Tasted after >1hour of air in bottle already. Appearance is clear, pale intensity, yellow lemon almost slight gold colour. Legs. Nose is clean, medium+ intensity, with aromas of salty saline minerality, briney iodine tidal pool, rich citrus lemon pith. Developing. On the palate, dry, high acidity, medium alcohol (13%), medium+ body. Medium+ flavour intensity, with flavours of baked golden apples, rich citrus lemon, orange meringue, savoury briney salty saline minerality, honeyed nuts and butter oil. Long finish. Very good quality. Rounded savoury rich mouth-feel, though the aromatics and minerality are very clearly Chablis. Already a lovely drink! Definite upside with more a little more age also.

Clear, pale lemon-gold. Nose: Golden apple, saline minerality, grapefruit, Burgundian butter and oak. Palate: High acidity, medium/medium+ body, medium+ intensity of apple, sweet lemon, ripe grapefruit, buttery oak. Long finish. Very good stuffing. Somewhat rounder and less precise than I initially expected. But certainly still nice drinking, and I expect this to improve with a couple years more age.

A classy 1er Cru Chablis of near Grand Cru status. Pale gold colour. A bouquet of yellow apples, pears, grapefruit, chalk and salty sea breeze. In the mouth, powerful and rich. Dense and ripe with good volume and decent acidity. Tactile yet silky mouthfeel. Lemons, yellow and green apples, pears, wet limestone and granite and dusty soil. Quite long, finishes bone dry. It's still young and a little compressed. Give it 3 + years more cellar time.

Domain Vincent Dauvissat 2016 Chablis (Chablis, France): Fragrant, complete nose that is the most floral to this point. Incredible round, harmonious feel due to great glycerine. This really reaches Grand Cru texture. Soil-filled finish. Again, the acidity does not overwhelm, so this may be a relatively early maturing Forest.

Flying l'Yonne; 8/29/2017-9/1/2017 (Irancy - France): Reference among its peers. Mineral to the bone with an unmatched elegance and intensity, both. Terrifying on the nose with a wide cornucopia of floral aromas but the most amazing thing is developed on the palate where the wine seems almost ready to be bottled. No wonder it has to be served last. A gem that rarely disappoints.
La referencia entre los de su clase. Mineral hasta la médula con una elegancia e intensidad inigualables. Terrorífico en nariz con una amplia cornucopia de aromas florales, lo más asombroso se desarrolla en el paladar donde el vino parece casi listo para ser embotellado. Shinji Chablis lunch. Bottle breathed ~2 hours beforehand already.
Appearance is clear, medium intensity, lemon colour with hint of gold. Thin legs.
Nose is clean, medium+ intensity, with aromas of fragrant mandarin orange kumquats, underlying iodine and the usual brine saline minerals. Developing.
On the palate, dry, medium+ acidity feel, medium alcohol (13%), medium+ body. Medium+ flavour intensity, with flavours of honeyed Mandarin oranges, rich citrus lemon pith, ripe peaches, ripe apples, chrysanthemum. Hints of oil and caramel onto the rich long finish.
Very good quality. Very enjoyable, though I get the sense that this seems to have evolved faster than expected given the age. This clearly will not be as long-lived as the 2014 of this wine.

Was looking forward to try a Dauvissat for the first time, gold coloured, flinty, chalky, salty sea, elderflower, pear, lovely mouthfeel, full & rich, hedonistic, long, stunning!

This is absolutely gorgeous, even better than a bottle 6 months ago.
Not necessarily all that much of what I think of as Chablis typicality, but it is so damn delicious that it hardly matters. Feels more evolved than its 5 /6 years, and 100% open....dances around in the mouth with ripe apples, stones, and a beguiling floral note, and a fresh but ripe acidity. This opens as flinty, fresh and mineral. Oyster shell and lemon zest are abundant on the nose. The palate is similarly bright and flinty, but joined by a whiff of oak and ripe gooseberry. This is notably refined, and absolutely delicious. It will be hard to wait on my remaining bottles, but this is well-poised to age gracefully.

Had an itch to open this after a disappointing clos de vougeot watching the Tour de France. I knew there was a good chance this would be what I wanted Dauvissat rarely disappoints and this was no exception. Chablis is so much finer than the wines further south in the Côte de Beaune and I quite often prefer their flinty mineral profile. This has that in spades. Beautiful aroma, classic Chablis like a fresh sea breeze with a complex mineral note which is so typical in the best wines. This bottle captures all that beautifully with a citrus note. Laser like focus and a texture to match this is a dynamite example of Premier cru Chablis. Still got a bit of baby fat to shed but really enjoying this so don’t be afraid to open. Premier cru Chablis doesn't get any better than this.
Edit: After 90 minutes this is now bordering on the spectacular. At least the best premier cru Chablis I've ever had. Gave it 94 initially but it's just getting better and better as it sits in the glass. Brilliant.officially the best premier cru chablis ive ever had.

What a wonderful bottle of Chablis. Of course it’s too young, but I needed a special white for Easter.
There is a faint hint of reduction on PnP. Served at 60* which helped coax out notes of underripe nectarine, honey, and cherry blossom. Anjou pear with lime peel cut on a lingering finish. Fleshy fruit with a mineral spine, but it feels so light on the palate. A world class wine

Great wine with Poularde de Bresse & fries (actually AMAZING with fries cooked in chicken fat) in at Bistro du Hotel in Beaune. Green apple, yellow fruit, blue green algae, cheese rind, sea salt.

Drunk over two days, during which - after the first hour - it did not change. Deep vibrant gold, quite deeply coloured. A bouquet of iodine, grapefruit, chalk, crisp green apple, tide pool, greengages and nascent meadow flowers. On palate, powerful, with plenty of volume and concentration. Precise and intense. Excellent, racy acidity. Overall, very well balanced; aligned and in proportion. Grapefruit and lemons, spices, greengages and warm tilled soil. Also, quite mineral with a touch of phenolic astringency. Saline with a long, dry finish. Drinking well now. Ideally, perhaps better in another 2-3+ years. A Grand Cru quality Chablis, in my opinion.

Christmas Party (Chez Michelis): The wine is impressive in the nose, high intensity, nice citrus, lemon, pear and green apple.
The wine shows power in the palate, medium acidity, mineral, citrus, some vegetal notes too, full body, medium to long finish.
The wine is still quite young with lower than expected acidity but that could my fault because I haven’t tried this before. Outstanding quality

Lovely Chablis had at a restaurant. Nose shows lovely sea brine, iodine, floral notes, citrus, green apple. Palate is excellent with good balance. Good but not great intensity. Nice finish. Top shelf Chablis for sure.

Un vin qui fait honneur au style de la maison. Rien d’exotique ici, ce qui arrive parfois sur ce millésime riche. C’est bien effilé, sec, avec une finale de pierre. Encore très jeune, bien sûr, mais quand même passablement ouvert. Une longueur et une dimension qui approchent le grand cru. Bien que le 2011 est plus plaisant en ce moment, celui-ci montrera sans doute plus de profondeur dans quelques années. Excellent. 92++ pts

Godt moden, litt tropisk- og delvis nedfallsfrukt (kunne vært renere) på duft. Mineralsk; sjøaktig preg, samt forsiktig eikebruk. Ganske svær og breial frukt i munn. Modne, gule epler, samt overmodne sitroner og noe grapefrukt. Stram, men mer fruktdrevet enn Forest ellers. Pen lengde med syrlig og småbitter sitrusfrukt. Ikke akkurat klassisk, men god utgave av denne vinen.

Tasted after >1hour of air in bottle already.
Appearance is clear, pale intensity, yellow lemon almost slight gold colour. Legs.
Nose is clean, medium+ intensity, with aromas of salty saline minerality, briney iodine tidal pool, rich citrus lemon pith. Developing.
On the palate, dry, high acidity, medium alcohol (13%), medium+ body. Medium+ flavour intensity, with flavours of baked golden apples, rich citrus lemon, orange meringue, savoury briney salty saline minerality, honeyed nuts and butter oil. Long finish.
Very good quality. Rounded savoury rich mouth-feel, though the aromatics and minerality are very clearly Chablis. Already a lovely drink! Definite upside with more a little more age also.

A classy 1er Cru Chablis of near Grand Cru status. Pale gold colour. A bouquet of yellow apples, pears, grapefruit, chalk and salty sea breeze. In the mouth, powerful and rich. Dense and ripe with good volume and decent acidity. Tactile yet silky mouthfeel. Lemons, yellow and green apples, pears, wet limestone and granite and dusty soil. Quite long, finishes bone dry. It's still young and a little compressed. Give it 3 + years more cellar time.

Flying l'Yonne; 8/29/2017-9/1/2017 (Irancy - France): Reference among its peers. Mineral to the bone with an unmatched elegance and intensity, both. Terrifying on the nose with a wide cornucopia of floral aromas but the most amazing thing is developed on the palate where the wine seems almost ready to be bottled.
No wonder it has to be served last. A gem that rarely disappoints.
La referencia entre los de su clase. Mineral hasta la médula con una elegancia e intensidad inigualables. Terrorífico en nariz con una amplia cornucopia de aromas florales, lo más asombroso se desarrolla en el paladar donde el vino parece casi listo para ser embotellado.
Con razón lo sirve en último lugar. Una joya que rara vez decepciona.
