On the palate, dry, good high acidity, medium+ alcohol (13.5%), fine high tnanins, full body. Medium+ flavour intensity, with flavours of chocolate, grilled bell peppers, leafy green herbs, cedarwood, menthol, blackberries, dark red plums, ash and tea leaves. Long drying finish. Very good quality considering 2003. Feels like it might dry out in a few years' time though. Drink up sooner is safer. Good but not stellar considering the price.

Decanted for an hour. Shows a complex nose of plum and other black fruit, a touch of menthol. Palate is full and lush with red currant, and tarragon. Did not improve with more air. This is an early drinking wine.

Opened the last bottle in the cellar at Berns, decanted 30 minutes before initial taste. Initial aromas of leather and a touch of oak unfolded over time to blackberry, other fruits, and a moderate hint of floral. Refined attack on the palate that was gentle, with a medium body and silky texture. A medium finish and very light tannins; almost no hint of pepper. It was lovely to unfold over the coure of an hour and pair with Chateaubriand. I did feel it was enhanced when there was a bit of steak in the mouth already - then the wine really became alive.

30 Vintages of Cheval Blanc: All tasted blind. 1982 to 2015 (with 1949 in the mix). The wines are fragrant, perfumed, seductive and always soft and without weight. Best performing vintages: the rather hot/ripe vintages 2015, 2009 and 1982 (all complex, seductive, complete and with elevated concentration). Next best: the promising and pure 2010, the still sexy 1990 and the immortal 1949. Notable outperformer: 2011 with many other good off-vintages. Notable underperformer: 2005, 2000, 1998 which all showed rather muted and not yet ready.
TN: Dark fruit, mineral, herbs, some ash on the nose. A palate with only medium concentration, dark fruit, not overly harmonious. Fine tannins, a bit too high acidity, not overly well integrated. Being revealed as the 2003 I was surprised as this is not how you would expect a 2003 to be. This was in the first flight (03, 04, 05, 07) and my palate was not yet fully ready. Hence, in an ideal setting I would probably score it higher than the 91 points.

Chateau Cheval Blanc - 30 year vertical (1949-2015) tasted blind: Expressive nose of red fruit, fruit compote, earthy notes. The palate feels young, medium bodied, the finish is a touch dry. Good news, I did not find much heat of 2003 here. On the other hand, aromatically not very long.

13.5% Soft, sweet spices, herbs,mint, blakcucrant, cassis liqueur, highly focus. Good balance of sweet dark and blue fruits. Sufficient of acidity, rounded, subtle. Yet so much flavours and depth, while the color shows a bit advance as well as the taste. This does firm up in the glass and show very good pedigree. This has the elegance from such a hot vintage.

Excellent bottle, and well worth the wait. Smooth, full, soft fruit flavors. Very silky. Decanted for about 90 minutes. It was agreed by all this wouldn't have gotten any better.

Disappointing. While this was nice enough with its soft, rounded fruit, tonight I thought this was lacking in depth and nuance and overall was abit flat. Perhaps flawed? Perhaps not? I have a couple of bottles left. I'll reserve judgement until I've tasted them.

Oh My Ears and Whiskers...what a stunning wine! More importantly, we were able to sip 75 ml by the glass at Tastings Wine Bar in Hong Kong. Luvly way to experience one of St. Emillion's best!!! Every element of a wine pretty much arrived with perhaps a tad too little tannins. Otherwise, a most elegant, stunning expression of 56% Cabernet Franc and 44% Merlot. The ripe fruits delivered an initial funky aroma that slimmed down to a pleasant experience. We do not think this wine will lay down past, say, 2020.

Cheval Blanc tasting (30 different vintages) at the Rheingau Gourmet Festival 2014: rubin color; red fruits and bread; medium/full body; restrained texture; some tannins; opened up a bit.
Like all the wines in this flight the 2003 appeared closed. Have hope that this wine will open up in a few years ahead. The question if the enjoyment of this wine will lead to a point rise on the rating scale is a different story. Maybe 93 is possible, but beyond?

From a blend of 56% Cabernet Franc and 44% Merlot, the wine is medium bodied and delivers more in its aromatics than on the palate. The perfume serves up a nose of fresh herbs, plum, earth, toast, coconut and dark cherry. The wine is soft and polished in texture, but lacks the density of material and complexity found in many of the best vintages. This is probably close to fully mature today. You do not need to pop your corks tonight. But I am not sure there is going to be much improvement from this point forward, due to further aging.

Very dark red, showing no fading. Dark berry fruit, including blackcurrant. Obviously a hot year as there is some baked fruit. It is dark and powerful on the attack and drys out rather than fades in the mouth. A treat to taste, of course.

CNY visit to HY and Jeremy's home (Singapore): Beautiful nose with floral, mineral, menthol and ripe red fruit notes. Medium to full bodied, with generous fruit and just minimal hints of toast, this wine is already showing some very nice secondary complexities. It is open and approachable, and quite fresh and balanced considering the vintage. I last tasted this 4 years ago (also from 375ml) and remember enjoying it already then -- it strikes me as having evolved and matured quite nicely since. It may not be one of the all-time great Cheval Blancs, but it is very enjoyable to drink and there is no need to wait ages

EWG Dinner at Noir (Noir Food + Wine): Classic cassis, blackberry fruit with a lovely perfume of cigar, violets and a slight pot-pour aspect as well as a touch of cocoa powder and even truffles. Stunningly good, everything you want in a Bordeaux in perfect proportions; still a touch austere though, very solid structure without a trace of overextraction or sur-maturite. Second day: even better as the tannins softened up, revealing more chocolate covered black cherry, a little cedar, very silky body, and a lovely cigar infused-floral nose. Great wine.

Decanted in bottle for 3 hrs before firs sip. Deep dark purple color. Aromas of plum, blueberry, and violet. Similar notes on the palate with a little coco and tobacco. Super rich and decadent. So much going on it's overwhelming to break down. A different experience with every sip. Drank over 3 nights with consistent experience. No formal notes taken. Drank at Bouchon in Yountville. Yummy and open. Nose of casis and plum. Tasted of crushed granite and dark fruit. Hints of sage and oak on midpalate, and there was a pleasing, long finish. Almost new world in its sweetness.

On the nose: subtle red fruits, cinnamon and clove. On the palate: Muted red fruits and soft currant followed by notes of clove, allspice and mild cinnamon. Very little tannins and structure in the wine. The fruit was so thin and muted that it barely got to 90 points. I think I would have rated it around 88pts if I had tasted blind. This decanted for several hours which I doubt was needed since the wine was so thin.

The nose had cherry and berry aromas with notes of bell pepper and a bit of smoke. Upon opening, there was a sweet caramel aroma, but it blew off after about 15 minutes. The palate had rich cherry flavors that almost seemed candied and well as notes of smoky spices. Medium-long finish. We tasted this next to an 04 Cheval Blanc and an 06 Cayuse Flying Pig. The 03 had much better balance than the 04, but I enjoyed the Flying Pig more than both of the Chevals...

The Kitchen Cabinet does Per Se (Per Se, East Dining Room): The sommelier at Per Se decanted this for us about 1 hour prior to service; a youthful purple core, turning to red at the rim. A striking bouquet of ripe cherry, plum and lavender; hints of vanilla and chocolate. Quite opulent for such a young Cheval Blanc -- a very hedonistic sort of wine -- with a silky mouthfeel, gobs of fruit, and a heady finish.

I tried this wine in 2007 and it was really closed down. This time (April 2010) the wine was COMPLETELY different. A nice cherry fruit core, sweet caramel on the nose and palate. Wonderful mouthfeel, midpalate. Nice finish, but not exceedingly long. I really enjoyed the unique caramel taste--wish I had more!

1st Gro(w)th Nite at PRIMAs (PRIMA, Walnut Creek): nose - smells like cherry syrup mouth - big red fruit, possibly even roasted fruit (or am i projecting given the nature of the 2003 vintage?). This wine was probably too young to be drinking. Reminiscent of a Napa cab.

My 2nd time of this wine. This bottle is better condition so the wine didn't show much in anything but this is the good clean and deepest among Pavie, La Mondotte and Valandraud, tasting together. Silky texture, roundm almost full-bodied.
Aftertaste is delicate, deep and expansive finished. Truly classic but need time. The promising !!!

Decanted 1 hour but still hints a little impact of alcohol in 1st nose. Then surprised me with the ready to drink, no sign of 2003 scent, good deep, good fruits, quite dramatic.
Round and delicious reminds me the words....First Growth is First Growth.....texture is too good for the hot vintage. I really happy with this wine.
Aftertaste is nice deep and lovely long-finished too. Very impressed !!!
I will keep my only one bottle for another few years.

Cheval Blanc Vertical (Craftsteak): Smells like a barrel sample, fat grapes and toasty oak. Tastes like an Australian Grenache. Fatter than Fat Elvis and stickier than peanut butter, this will thrill those who crave wines they can spread on toast and, to be perfectly fair, if you spread this on toast your toast would taste just a little bit like Cheval Blanc.

**Just corrected the vintage from 2005 to 2003, verified by a friend who kept the cork. No wonder. It was an off year.

The Kitchen Cabinet does Per Se (Per Se, East Dining Room): The sommelier at Per Se decanted this for us about 1 hour prior to service; a youthful purple core, turning to red at the rim. A striking bouquet of ripe cherry, plum and lavender; hints of vanilla and chocolate. Quite opulent for such a young Cheval Blanc -- a very hedonistic sort of wine -- with a silky mouthfeel, gobs of fruit, and a heady finish.

I tried this wine in 2007 and it was really closed down. This time (April 2010) the wine was COMPLETELY different. A nice cherry fruit core, sweet caramel on the nose and palate. Wonderful mouthfeel, midpalate. Nice finish, but not exceedingly long. I really enjoyed the unique caramel taste--wish I had more!

mouth - big red fruit, possibly even roasted fruit (or am i projecting given the nature of the 2003 vintage?). This wine was probably too young to be drinking. Reminiscent of a Napa cab.

Big Name : A Night of St.Emilion 2003
My 2nd time of this wine. This bottle is better condition so the wine didn't show much in anything but this is the good clean and deepest among Pavie, La Mondotte and Valandraud, tasting together. Silky texture, roundm almost full-bodied.
Aftertaste is delicate, deep and expansive finished. Truly classic but need time. The promising !!!

Thanks to Khun Wisit for calling and I can make a brief stop to taste on my birthday...2009....
Decanted 1 hour but still hints a little impact of alcohol in 1st nose. Then surprised me with the ready to drink, no sign of 2003 scent, good deep, good fruits, quite dramatic.
Round and delicious reminds me the words....First Growth is First Growth.....texture is too good for the hot vintage. I really happy with this wine.
Aftertaste is nice deep and lovely long-finished too. Very impressed !!!
I will keep my only one bottle for another few years.

Cheval Blanc Vertical (Craftsteak): Smells like a barrel sample, fat grapes and toasty oak. Tastes like an Australian Grenache. Fatter than Fat Elvis and stickier than peanut butter, this will thrill those who crave wines they can spread on toast and, to be perfectly fair, if you spread this on toast your toast would taste just a little bit like Cheval Blanc.
