It ferments in stainless steel tanks and heads up to 15% and becomes part of the breeding and soleras system, carrying out an organic aging with a flower veil in these 516 L American oak boots, for more than 4 years. Deep Gold colour. Nose has salted, lightly toasted almond, beeswax and a light cheesy pungent note. Taste, like the nose, has barely no fruit at all, also replicating the nutty and cheesy aromas while adding light lemon peel. Medium body and acid, some oiliness. Very nice manzanilla, very affordable at 8,98€ for 375ml, but nothing special.

Bottle aged for 3,5 years (lot L18115G, bottled April 2018). NOSE: Fresh white bread, olive brine, saline rocky sea shore, green olives, elderberry flowers, sweet almonds. (90p) TASTE: Saline, briney, with an underlying freshness / acidity which is coated, almost hidden by the very viscous, creamy mouthfeel. Perhaps just a slight weakness on the mid palate, hardly noticeable. Mouth watering stuff. (89-90p) OVERALL: Less overtly flowery and appley but richer, creamier/oilier, deeper (darker?) and more substantial now than when I last tasted a bottle from this lot, at 0.5 year of bottle age in 2018. To me this shows again that when even ordinary (not specially selected, en-rama) finos or manzanillas from quality producers age, instead of withering and dying, they start on their way to a more profound Sherry heaven. Utterly delectable stuff. TOTAL SCORE 90 points.

On the palate the wine is dry, with low acidity, low alcohol, and a light body. The flavour intensity is medium-minus, flavours from biological ageing include bruised apple, chamomile, almond and nuts. The wine tastes salty. The finish has medium length.
This is a very good quality wine since it shows good typicity, good complexity of aromas and flavours, the alcohol is very well-integrated, the finish has medium length, and overall, the wine seems very harmonious. To be considered being of outstanding quality the wine would need greater complexity and length.
The wine is ready to drink and not suitable for further ageing in bottle. With ageing it would lose with freshness and become bland and disjointed.
NB: More elegant and more harmonious that bot the regular Tio Pepe Fino Muy Seco and the El Maestro Sierra Sherry Fino. Very good value.

Half bottle. Light as a feather and fresh as a daisy. Flowers and brine, fresh yellow apple and citrus, green olives and white almonds, gently dry. The mid palate could have more power (it is membrane filtered), but the finish is very intense. Very good young Manzanilla, great value for money.

Medium amber color. On the nose: Medium + intensity: stewed apple, biscuit / pastry. Marzipan and almond. Honey and caramel. Palates is biscuit and hazelnut. Medium body medium + acidity. Bone dry. As a novice sherry drinker I was looking forward to trying this “lightest” of sherry's. But I found this quite intense. Super bone dry as advertised but also quite rich on the palette to start. Lots of pastry/flor flavors and not much of the “sea salt” they promote of Manzilla. (Alvaro is I have had have more!) interesting, but am not yet a sherry fan and this did not change that.

Beautiful, this was exactly what I expected, and this overdelivers for the price too. Green, mean, salty, bitter and fresh. A vegetal note to the aromas which I don’t mind. Kind of like celery sticks. Palate feels crisp and transparent, all about refreshment here. High acid. Lovely with salted almonds.

Palate: wet rock, lemon peel, Brazil nut, a surprising flavor reminding me a bit of chicken bouillon; medium+ finish of almond, copper; dry (although it seemed sightly off dry on first sip); medium+ body; medium- heat; for some reason, I didn't note the acidity, but I recall it having good acidity
Overall: I felt that this was low on flavor and concentration, yet higher on heat. That's not a good combination for me. It was better with food, but this is just a mediocre wine in my book.

Consta la fecha de embotellado (Junio de 2017). Pajizo pálido con reflejos dorados. Nariz con toques de almendras crudas y flores blancas mediterráneas, ligeramente punzante con toques salinos de brisa marina y algo de aceitunas verdes. Age in this city that he just said so fast there is no way I am going to be able to write it down. Single vineyard wine. Ages four years in barrel on the flor. Floral in the nose, aromatic, dry, fresh, briny, tasty.
La Guita means the cash. So no Guita, no Manzanilla, and its rhymes if your Spanish. Guita also means string, hence the string on the bottle. Registered as a brand in 1908.
No other producers doing their own grapes with their own vineyard and into their own Manzanilla.

Very good standard-quality manzanilla - it really does what it's supposed to (even if Barbadillo's Solear does it even better). One could wish for less intrusive filtering as the midpalate is slightly watery and the finish not that long, but the flor and iodine characters are both impeccable. More than decent as an apéritif with marcona almonds.

Strong reduction notes initially. They dissipated after five minutes. This wine is light bodied but has good briny length. It offers aromas of green olives, green apple, and bitter flor. Its yeasty mouthfeel adds class.

A bottle bought at the Malaga airport at the ridiculously low price of 7.20 euro a liter. Riedel Vinum riesling glasses are perfect, kind of a large copita. Fresh, saline, with a hint of old casks, very attractive. Perhaps not quite so wonderful as Barbadillo's Solear but very good.

Bought in Spain Bottled in OCT. of 2015. Served chilled. Very pale straw in color. Aromas of Marcona almonds, yellow apples, salt brine, chamomile, Spanish green olives and hints of preserved lemons, dried herbs, tea, yeast and dried white flowers. On the palate this wine is clean, dry and builds intensity through the finish. Flavors of almonds, white tea, yellow apple, golden raisin, white fig, yeast, and chamomile wash over the palate with a focused salty minerality that is nothing short of delicious. in the back notes of dried herbs, tea crackers, and green olive. The finish is long and the high point of this sherry. Pair this with light tapas, olives, almonds or cured ham and rejoice!

Sometimes light is good. This light manzanilla is great as an aperitif or with food. It has refreshing flavors of apple juice, olives, and brine. There is a strong reminiscence to a dirty martini. A good wine to introduce someone to the strange world of sherry (which doesn't really taste like wine at all in my opinion; it just happens to be made with grapes).

Much better after three weeks under cork, half btl, half full: Nose: Has a clear, appley, Sherry nose that is the antithesis of an Oloroso. Excelltly dry, showing fruit and a hint of maturity but lacking in complexity and intensity. Palate: Quite young, with apple-fruity corpreal qualities as well as a dry performance with finesse. Propelled by its acids and kept steady by the elegant fruit. A lighter Manzanilla with a beginning nuttiness in the finish. Had hoped for a salty twang, but not here. (Aye, aye yer sawlty scummbaggs!)

I thought this was a fantastic bottle of wine. 6 EURO!!! Delivering great complexity, cerebral drinking, its hard to think of something that matches this for the price. Light nose of apple, apple skin, bruised apple, yeast, bread, pear acetaldehydes, brioche, soy sauce, ummami. Palate is dry, med- acid, light body with pronounced flavors of apple, yeast, bread, pear, ummami, bruised apple.

Tasted in Sanlúcar so no doubts about freshness, it nevertheless felt slightly deeper and more profound than its peers, with decently well developed nuttiness and rich flor aromas. Maybe a bit more laid back minerality, too, or maybe it was just the fuller body character that fooled me. Very nice, one of the better Manzanillas, even if it edges toward the Fino in style. Drinks like a middle point between classic Manzanilla and classic Fino.

When I open the bottle, the taste was very sea salty, almost the standard image of manzanilla, and I like that image! It was fresh, it felt like a better white wine with clear taste of place. Also the unmistakable character of dry sherry like yeast and flor. A while later it turned flat, a little disappointment. The next day it was back again, great balance in the mouth, on the nose less yeast, the taste had dried fruits like figs. Very nice to drink! (It was bottled july-13)

This is a solidly GOOD wine without faults. Nothing memorable. This salty and non-rich wine gives only a very small feeling of Dali's painting of dried up elephants with elongated legs in a desert landscape. Doesn't turn me on. It is balanced in its thinness and clean (as far as the genre goes). Feels like a weak zombie. Good pairing with a chorizo mini-baguette in the lounge at Barcelona Airport.

Dinner with Gavin and Annie (Tapas B44, San Francisco): By the glass at Tapas B44 in San Francisco. This was decent but not great. Typical Manzanilla nose here, with a waft of sea breeze, some lemon and lime sherbert aromas and just that little touch of minerality. The palate was fresh enough for a 2010 bottling, though the alcohol stuck out a bit amidst its big flavours of lemons and limes with a touch of figs running alongside some saline, sea-water notes. It had longish finish with a nice bit of spice and mineral, but that apart, this was actually quite a simple wine. A good enough pairing with our tapas and paella dishes, but not an outstanding sherry by any means.

I agree with some tasters here: this is delicious, it is nutty and generous on the nose; but for manzanilla it seems heavy, a bit broad and buttery from flor and lees. It seems to lack the salinity I think of in Manzanilla perhaps. Good, but broader still, a bit richer. Note also I have been reading a book on sherry from the 60's, and I could understand this perhaps as a more traditional style, as they probably always had more to them. One possibility. Other Manzanillas might be more modern and "bright". For now it is enjoyable and wins on price, especially if you like the depth of flavor. For the money though, I would still buy a more Manzanilla from Hidalgo or others for freshness and a bit more lighter style.

Blind Tasting - Manzanilla Sherry with Eric Asimov and Peter Liem: I found this wine to be too sweet, with a spicy caramel aspect that dominated the palate. It was Mateo's least favorite - he said it was going in too many directions. Eric liked the subtle spicy flavors, but thought the alcohol stuck out. Peter thought the wine was delicious, but said that he would not have guessed it to be Manzanilla - it was too round and rich, more like a Fino, he said. By the way, a few days before the tasting I drank this wine over two days and loved it.

Bottled November 28th 2007. Lemony, briny, yeastalicious on the delicate nose. Minerals and lemon on the palate. Medium body, bright acidity, could be a little fresher, with a short nuttiness on the otherwise lengthy finish. A good Manzanilla perfect on a hot day with little tapas of sardines and other seafoods or olives! 4/5

caveat- i know little about sherry. seems fresh and salty, pretty light for a 15%abv. some light cream like flavors and a nice dry mouth are very pleasurable. not particularly complex, but pretty nice and refreshing- great with salty food, but i guess thats a duh.

Light green straw color filled with aromas ofgrass, ripe green pear, cantalope with a intermixed with hints of mandarine and butter. Interesting mouthfeel with a nice acidity that hits you on the back of your palate followed by a creamy and buttery sensation that just coats your mouth. The palate is fun, nothing to scream from the rafters, but worth checking out with flavors of lime, peach and salty almonds. 3/5

Light gold green in color. The nose shows the flor and musty orange blossom honey, with a light green melon backdrop. Medium acidity with medium body and a creamy mouth feel. Light salt air notes combine with raw nuts and once again the delicate melon. Really a perfectly enjoyable summer white. 4/5

Bottled May 2006 - fresh as a daisy. Simply brilliant Manzanilla, fresh as a mountain stream, bone-dry but seamless, light but very intense. Subtle, floral, almond, chalk, hint of salinity. And cheap as chips.

This tasted like a pretty bland Fino. It was the first Manzanilla (15%alc) I ever had and I definitely missed the freshness that should be a sign of a nice manzanilla. I am quite sure that the bottle was a bit old. WIll try another only if I am sure that the bottle is fresh.

Deep Gold colour. Nose has salted, lightly toasted almond, beeswax and a light cheesy pungent note. Taste, like the nose, has barely no fruit at all, also replicating the nutty and cheesy aromas while adding light lemon peel. Medium body and acid, some oiliness. Very nice manzanilla, very affordable at 8,98€ for 375ml, but nothing special.

Bottle aged for 3,5 years (lot L18115G, bottled April 2018).
NOSE: Fresh white bread, olive brine, saline rocky sea shore, green olives, elderberry flowers, sweet almonds. (90p)
TASTE: Saline, briney, with an underlying freshness / acidity which is coated, almost hidden by the very viscous, creamy mouthfeel. Perhaps just a slight weakness on the mid palate, hardly noticeable. Mouth watering stuff. (89-90p)
OVERALL: Less overtly flowery and appley but richer, creamier/oilier, deeper (darker?) and more substantial now than when I last tasted a bottle from this lot, at 0.5 year of bottle age in 2018. To me this shows again that when even ordinary (not specially selected, en-rama) finos or manzanillas from quality producers age, instead of withering and dying, they start on their way to a more profound Sherry heaven. Utterly delectable stuff. TOTAL SCORE 90 points.

On the palate the wine is dry, with low acidity, low alcohol, and a light body. The flavour intensity is medium-minus, flavours from biological ageing include bruised apple, chamomile, almond and nuts. The wine tastes salty. The finish has medium length.
This is a very good quality wine since it shows good typicity, good complexity of aromas and flavours, the alcohol is very well-integrated, the finish has medium length, and overall, the wine seems very harmonious. To be considered being of outstanding quality the wine would need greater complexity and length.
The wine is ready to drink and not suitable for further ageing in bottle. With ageing it would lose with freshness and become bland and disjointed.
NB: More elegant and more harmonious that bot the regular Tio Pepe Fino Muy Seco and the El Maestro Sierra Sherry Fino. Very good value.

Un peu déçu par cette bouteille. Un Manzanilla vraiment léger pour ne pas dire aqueux avec très peu des caractéristiques d'un bon Jerez. Pourrait à la limite passer pour un vin blanc avec pas mal d'amertume et beaucoup d'alcool. Buvable, mais parmi les moins bons que j'ai eu l'occasion de boire.

Palate: wet rock, lemon peel, Brazil nut, a surprising flavor reminding me a bit of chicken bouillon; medium+ finish of almond, copper; dry (although it seemed sightly off dry on first sip); medium+ body; medium- heat; for some reason, I didn't note the acidity, but I recall it having good acidity
Overall: I felt that this was low on flavor and concentration, yet higher on heat. That's not a good combination for me. It was better with food, but this is just a mediocre wine in my book.

NOSE: Very floral with lots of chamomile, dandelions, yeast and some freshly cut grass. Then unrefined sandy sea salt, almonds, green olives, some apples and lemons. (89p)
TASTE: Flowery and fruity, in a delicately nutty and yeasty way. Slightly salty and oily. Fresh green olives in brine. Hints of apple and citrus in the exit and aftertaste. (89p)
Always a reliable, high quality Manzanilla. Great price/quality ratio.

Very good standard-quality manzanilla - it really does what it's supposed to (even if Barbadillo's Solear does it even better). One could wish for less intrusive filtering as the midpalate is slightly watery and the finish not that long, but the flor and iodine characters are both impeccable. Strong reduction notes initially. They dissipated after five minutes. This wine is light bodied but has good briny length. It offers aromas of green olives, green apple, and bitter flor. Its yeasty mouthfeel adds class.

Sometimes light is good. This light manzanilla is great as an aperitif or with food. It has refreshing flavors of apple juice, olives, and brine. There is a strong reminiscence to a dirty martini. A good wine to introduce someone to the strange world of sherry (which doesn't really taste like wine at all in my opinion; it just happens to be made with grapes).

Nose: Has a clear, appley, Sherry nose that is the antithesis of an Oloroso. Excelltly dry, showing fruit and a hint of maturity but lacking in complexity and intensity.

After a week of slow-ox, still doesn't perform. This is very ok, but the olorosos or palo cortados at this low price are much better.
And I need to complain:
The supposed-to-be-here-saltiness, where is it? Have had unsalted french fries that were more salty than this one.
Feels unnecessarily young, as if the carcasses in the dessert died from rich society disease only yesterday, and not (as preferred) 8 years ago from long term draight, exhaustion and UV-over-exposure...
This is only Dali light, but still a wine that I like, a bit...

Paired with 'jamón ibérico' and 'ropa vieja' in El Corral de la Morería in Madrid.
Me encanta su carácter salino, ese camino directo en nariz. También me gusta su textura acuosa y ese amargo final. Siempre una manzanilla deliciosa, de trago fácil.

My fino and manzanilla tasting notes are very repetitive. They all are briny and nutty and taste like the sea. And they all knock my socks off.
If I had to distinguish this wine from others, I would say that it is more briny than most. It really smells like a jar of green olives.

Tasted in Sanlúcar so no doubts about freshness, it nevertheless felt slightly deeper and more profound than its peers, with decently well developed nuttiness and rich flor aromas. Maybe a bit more laid back minerality, too, or maybe it was just the fuller body character that fooled me. Very nice, one of the better Manzanillas, even if it edges toward the Fino in style. Drinks like a middle point between classic Manzanilla and classic Fino.

Its best refreshing moment passed away developing quite interesting elements as a honeyed taste and more intense limestone aroma therefore a saline touch. Rich and profitable.
Deeper than last Solear.

First time ever tasting Sherry, that I can recall. Floral nose, medium body, with almonds, butterscotch, and toast set against briny olives, salt water, touches of pears and apples. Just a tiny hint of sweetness. Will revisit throughout the weekend.

When I open the bottle, the taste was very sea salty, almost the standard image of manzanilla, and I like that image! It was fresh, it felt like a better white wine with clear taste of place. Also the unmistakable character of dry sherry like yeast and flor. A while later it turned flat, a little disappointment. The next day it was back again, great balance in the mouth, on the nose less yeast, the taste had dried fruits like figs. Very nice to drink! (It was bottled july-13)

This is a solidly GOOD wine without faults. Nothing memorable.
This salty and non-rich wine gives only a very small feeling of Dali's painting of dried up elephants with elongated legs in a desert landscape. Doesn't turn me on. It is balanced in its thinness and clean (as far as the genre goes). Feels like a weak zombie.
Good pairing with a chorizo mini-baguette in the lounge at Barcelona Airport.

This bottle was fantastic.
Sharped, salty nose of flor and sea water.
Delicious taste pairing Salmorejo and deep fried baby squids.

Dinner with Gavin and Annie (Tapas B44, San Francisco): By the glass at Tapas B44 in San Francisco. This was decent but not great. Typical Manzanilla nose here, with a waft of sea breeze, some lemon and lime sherbert aromas and just that little touch of minerality. The palate was fresh enough for a 2010 bottling, though the alcohol stuck out a bit amidst its big flavours of lemons and limes with a touch of figs running alongside some saline, sea-water notes. It had longish finish with a nice bit of spice and mineral, but that apart, this was actually quite a simple wine. A good enough pairing with our tapas and paella dishes, but not an outstanding sherry by any means.

bottled october 2011 , very young color, hay , camomile , iodine , and an obvious salty touch accompanied by subtle nutty flavours , i love this bone dry manzanilla as an aperitif or just with some "simple" tapas as olive , boquerones , some sliced chorizo , roasted almonds etc. , straightforward but delicious nonetheless

A friend brought this to our 12/11/11 Spanish wine tasting. It had an elegant and mild bouquet (for a Manzanilla sherry) of roasted nuts, ocean air and bread aromas. The palate was mild and tangy with flavors that followed the nose.

Bottled May 2011. Taste of nuts, sea salt, slight pears. Pairs well with salty seafood. Went great with pickled jellyfish and grilled mackerel. Again, I think this wine rapidly deteriorates after bottling, reckon it should be drunk within 3-4 months of bottling date.

Bottled Feb 2011. Lovely aromas of apple, asian pear, nuts. Very fresh on the palate. Nice length. Great QPR. Goes well with olives, nuts, shell fish. I suspect people who give this a bad review are drinking bottles too old.
