Decanted for four hours. One of the more complex, and interesting, C9Ps in my experience. Smokey Grenache notes of red raspberries; rich perfume from the Mouvedre. It took a little time in the glass for the alcohol to settle down, but overall this was a wonderful bottle of wine.

Outstanding wine. Slow O'd for a couple of hours, decanted for one. Perfect drinking window; nicely balanced: neither too jammy nor too austere, and lovely with food.

Double decanted for 90 minutes through a coffee filter with heavy sediment removed. Plum bordering on raisin, balanced by moderate acidity and notes of cherry. Drinking fantastically. Almost reminds me of a Sine Qua Non Grenache. You can definitely feel that 15.5% but it’s well balanced. Paired with a Mediterranean meal at Rose Mary in Chicago (tuna crudo, squid risotto, beef cheek gnocchi, and a smoked duck were all fantastic pairings.) Caveat: I love big, hedonistic wines.
Big masculine wine that is the opposite of shy; a wave of black and blue berries fortified by kirsch, red currants, and garrigue. A wine of great pedigree, this is a linebacker of a wine, with a dense structure and will knock you on your ass if you're not a bit of a hedonist.

Decanted and served. Ripe, but intense, precise, and seamless. A "wow" wine in a fruit-forward, modern style but balanced on the palate, if precariously. Lots of red fruit with just the right amount of meat juice, herbs and spices. Dunnuck gave this 100 points and he's usually about four points higher than me on Rhone wines so there you go. Drinking fabulously right now.

For the life of me, I don’t see where 100pts comes from. Drunk with a CNdP fan who found it too sweet. Decanted and consumed over 2 hours. Will try again in a couple of years to see if there’s any improvement

Definitely very ripe. You can tell Philippe Cambie is the consulting oenologist here. Plush. Delicious. These days, this is not my preferred style of CdP. But, you could do a lot worse!

CdP and Beef at the Woody's (Kyla's Kitchen): When did Cayuse move to the CdP??? Love it or hate it, this mixes New World with Old and if you're stuck in one of those ruts...oh well. We did a 1.5 hr decant, then followed for 3 more hours. This bottle housed a huge wine with tons of black fruit, Kirsch, espresso, garrigue, tar, and leather. The tannins are smoothing out since our last 4 years ago. Next one in 3-5 years, now-2027.

Blind tasting for my guests. Extremely dark hue, with brown borders. Mouth full, heavy, dense of dried fruits, prunes, blackberries , blueberries, candied orange peal. Obvious residual sugar, strong spirit after taste (cherries eau de vie). No oak, but a nice frame of sap. Like a Porto, without finesse. A massive wine, exuberant style, clearely unbalance for our french expectetions. Good for Brits and Australian rugby players.

Massive - what a huge wine in every respect - sweet fruit, structure, length, alcohol - this one split the party - most thought it was great - whereas for others it was over the top! Very Parker oriented and raises the typical 2007 question will it last?- I think this is still too young to drink and is still pretty primary - I will try again in 2 to 3 years - I think it needs to settle down a bit. V interesting!

100 RP Points plus some extra's (@ Bottles): Beautiful and creamy bouquet with cherries, lead pencil, herbs and spices. On the palate ripe berry fruits. A lot of raspberries. Chocolate. A firm amount of sweetness and good, soft acidity and tannin. A lush and tempting, concentrated wine, really drinking well now, but I guess that with more age on it, it will show more of its complexity. 95++

Popped and poured. An absolute showstopper. I would have pinned this as a Grand Cru Burgundy if I drank it blind. Seamless, super soft tannins, with a 60 second finish. I'm amazed at how well this is drinking right now, given that most CDP's from this vintage are no where near their drinking window. I can't imagine this wine getting any better than it already is, but I'm sure it will continue to evolve.
I would have loved to taste this several hours later to see how the wine would continue to evolve, but it was consumed almost immediately. One of the best CDP's I have ever had.

PHMG WAG: #100 (Chez Lyon in Eugene, OR): Strange, no one has written on this in a year -- maybe the 300% appreciation in price? It's still a baby in every way, including the dark red/purple color. This is a phenomenal wine, with layers and layers of complexities and stunning depth. Such pure fruit with dark plum reduction, raspberry ganache, biter sweet chocolate, wet rock, mesquite, roasted coffee and cinnamon notes at the forefront. The body is full with muscular tannins and impeccable structure. Everything all wraps up on the long finish where it picks up more dense fruit, biter sweet chocolate, coffee and mineral. The thing that really puts this into a class of its own is that it's just so complex, you find something new each time you sip. We decanted this wine for 4+ hours and it needed it to show its potential. However, I would highly recommend giving this more time to develop in the cellar to reach its full potential. I don't think its possible to find a wine more complex then this and I can see this wine being perfect for many, but for me it is falls just short of that. (Drink 2015-2037)

slow ox'd for two hours, decanted for two hours and then decanted back into the bottle for the restaurant trip. Did not pour for another hour and half. Dark in the glass. Nose was dark fruit, anise and truffles with a hint of glycerin. Velvet smooth taste. Almost too complex to identify any one flavor profile. A little more giving than my last bottle. Will try another one in a year or two. WOTN for me.

Uncorked DK does 2007 Chateauneuf-du-Pape (Aarø & Co): Dark red. Incredibly pure and dense nose with licorice, truffles, incense and perfectly charcoal grilled porterhouse with a slice of foie gras. Very dense and intense in mouth as well with the longest aftertaste of the night. Bigger and more potent than the Combe de Fous, but less elegant. Another wine sure to hit perfection some day in the future. (U98,5)

Tasted 11/09. The cork on this bottle was quite dry. I'm not sure if this was due to poor transportation from Europe (the bottle was purchased from a reputable retailer in the US). However, the wine lacked shabang and was very bland, lacking even basic fruitiness. A true disappointment given the good reviews, and a less exciting bottle than many other CDPs from 2007 that I have tried in the past few months.

I agree with Jacques C and think that at this point the wine is too one-dimensional. Unfortunately, I have concerns about whether this wine will blossom as time goes on since right now it is rather bland and one-dimensional (although definitely fruit forward, with some taste of wet horse in the background). I won't open up another bottle for 2-3 years. In my humble opinion, there are many other 2007 CDPs that are much more deserving of the $90 price point than this one (which is what the wine costs now, I bought my case at $60/bottle).

open and decanted about 45 minutes before trying. Dark in the glass. Strong flavors of dark berries with a hint of earth and ETOH. Nice velvety wine with a finish that goes on for days. Taste was fig, lavendar, and dark berries (blackberries stood out, but that might be because I was eating squab with a blackberry sauce). This wine was like a rose that was still a bud - it was tight (without a tannic bite) and you could tell that given enough time, it was going to bloom into something complex and wonderful. I'm going to hold for another 3-5 years before trying again. Not a 100 pt wine now, but it certainly feels like it will be in a few years. 97+

Tasted before the Parker review. "Wow!" That's what I said when I smelled this. A haunting and complex nose. Really draws you into the glass. And another "Wow!" when I tasted it. Utterly suave on the palate. Silk-like textures. Layer and layer of flavors. What is surprising about this wine is that it is a big ripe wine, but still has incredible transparency and balance. Long finish that comes back again and again with minerals and fruit. Some extremely fine tannins, but is not intrusive at all. I don't know how long this will last in the cellar, but if you own one you owe it to yourself to open one up to try now. Fantastic wine!
This was better than the 2007 Janasse VV that was tasted at the same time.

90% grenache, 5% syrah, 5% mourvèdre. Vignes de 60 à 100 ans. Élevage de 18 mois en barrique de 3 à 5 ans.
Superbe nez de confitures avec un peu de tabac, qui évoque un style plus traditionnel que j’affectionne.
Magnifique texture en bouche, le vin est gourmand et opulent, avec des tanins d’une bonne finesse. Des épices, du fruit rouge bien concentré et délicieux, wow! Un magnifique Châteauneuf qui me plait énormément et représente de manière exemplaire les vertus du millésime. Grand vin. 95-96 pts

WCC 2007 Châteauneuf-du-Pape Reds Blind (Dorato's Resturant, Guilderland, NY): [Double-decanted around 10am.] Big juicy stunningly complex wine. Very young with a great future. My 3rd WOTN by a narrow margin. 95-? Tied for Group #2 WOTN.

Magnifique texture en bouche, le vin est gourmand et opulent, avec des tanins d’une bonne finesse. Des épices, du fruit rouge bien concentré et délicieux, wow! Un magnifique Châteauneuf qui me plait énormément et représente de manière exemplaire les vertus du millésime. Grand vin. 95-96 pts
