Ripe golden apple, ripe citrus, more fresh ginger, more ripe apple on the finish, like a very thin slice is resting on the tongue, and it lasts forever. Some crushed shell minerality as well.

A brilliant pale gold in the glass. Opens up with layers of fresh citrus, a touch of wood spice - sandalwood - blanched almonds, a lifted note of freshly foraged white flowers, and a sea spray salinity. There’s a serious, steely quality to the wine as if the acidity will rip the enamel from your teeth. It doesn’t. The palate is softer and rounder with considerable depth and concentration and a profile that is riper than the nose with yellow apples poached in baking spices. At a beautiful point in its evolution where the tension and energy of youth are just starting to give way to the delights of mature white Burgundy.

This bottle was strangely mute. After a couple of hours of aeration, i got some sweet fruit, lemon and stone on the nose and the palate. But it was not the wine we expected. It was very pale yellow green so it is possible this bottle needed more time. But even with that, I hope this is an atypical bottle.
