Still going strong…last of our case…red and black fruits, iron and vanilla on the nose. A medium weight body, good fruit and a nice, savory uplifting finish.

Nearly perfect cork, no signs of seepage. PnP: Very much alive, but 15-20 minutes exposed to air really helped things pop. Deep stained cherry hardwood in color with a moderate amount of sediment given the age. Port like nose. Butterscotch, raisins, dried cherries, apricots and toasted almonds. Still very fruity – dried cherries, apricots, plums on the palate. A bit of nuttiness on the mid palate. Well integrated round smooth tannins – just the right amount. Persisting finish of vanilla, pepper, cedar, tobacco, prunes, and graphite.
Reminiscent of a vintage port with a few decades of bottle aging. After 2 hours open, the tannin structure peaked and became a more grippy, and the fruit became a bit fresher. At around 4 hours, the fruit started to fade and was time to finish up the bottle.
Still enjoyable, but I feel that this wine is on the decline. For my palate, 8-12 years is the sweet spot for these Easton Zins.

Very nice dark garnet color with no signs of bricking, which is amazing for a 15 year old wine. Aromas of blackberries, black pepper and green pepper. Flavors of blackberry, blueberries and a little licorice. Very smooth tannins that are integrated with a decent amount of acid. A medium body with a medium finish of 40 seconds. On first taste from the bottle this wine is very tannic but decant it for an hour or two and the fruit comes out and the wine becomes very balanced. It’s probably at its peak right now. We paired it with Santa Maria Barbecue trip-tip and it was fantastic.

We let it breathe for an hour, first sip - taste of prunes, worried it might be old. Gave it a little more time and in short order, it opened up to become a classic fruity, spicy, earthy well-aged Amador Zin. Paired perfectly with marinated/grilled leg of lamb steak and broiled/herbed-olive oil fresh asparagus. We finished this wonderful bottle. See no aging potential, this is definitely a drink now, but it needs a lot of breathing time to let the genie out of the bottle.

Light jaminess on the nose, jammy and plums on the palate with less spice than the 07. Velvety smooth with a dry finish.
