Bordeaux Visits - November 2023: Deep, full garnet color. Alluring aromas of black cherry, cedar, nutmeg, lavender, paprika and rosemary. Seamless and elegant on the palate, showing darker fruit and adding notes of black tea. Richly textured, but with verve. Seamless and elegant, yet broad and expansive. Very fine tannins and long length.

Had this alongside the much more complex and deep 2015 vintage.. what a treat to have two Grand Vins side by side, Château Pavie dinner.
🍇 60% Merlot, 25% Cab Franc, 15% Cab 🍯 80% new French oak, 20% 1-year barrels
We were hosted at this Chateau Pavie dinner by Olivier Gailly (Commercial Dir, Pavie) who told us about the slopes and plateau of the property.
Cab Franc thrives on the foothills, Cab Sauv on the steep slopes and Merlot are found on the limestone plateau. The deep clay soil promotes opulence and depth on the mid-palate. Whilst the shallower soil, brings tension to the mouthfeel.
Chateau Pavie’s vineyard comprises one large block, which is relatively unusual in the region. Its a 42 hectare site!
Notice the sexy monogrammed black label? In the most recent classification of St. Emilion wines, 2012 Saint Emilion Classification... Chateau Pavie was promoted to the coveted position of Grand Cru Classe A status.
The Right Bank appellation of St. Emilion is the only region in Bordeaux to change its status every ten years. This upgrade to Grand Cru Classe A status, was only given to 4 Bordeaux chateaux in total, Chateau Pavie, Chateau Ausone, Chateau Cheval Blanc and Chateau Angelus.
2012 was a cooler vintage, and Cab Franc lends itself to being adaptable to such climates. Retaining higher acidity levels, this promotes some freshness.
But seems thinner and less ripe compared to the mighty 2015! Mandarin Oriental K.Lumpur with the Usual Vivino suspects and WMK too. Cheers lads!

A week in Bordeaux (Mouton, Pontet Canet, D'Issan, Langoa & Leoville Barton, SHL, Arbo, Pavie, Fleur de Bouard, Cheval Blanc, VCC, Figeac); 5/21/2023-5/26/2023 (Left and Right banks of Bordeaux): Tasted @ the Chateau. This bottle was opened the night before and then under vacuum. Drinking very well, very balanced with fine tannins. Getting some more of this more my cellar. I love the black label! Very impressive property and tour, first class!
