Dorado.

Wine Spectator newbies; 10/18/2018-10/20/2018 (Marriott Marquis): Interesting how two different wines can bring out such different parts of the dishes. While the rose brings out fruit, this one is much more bringing out the spice. The wine itself is more mineral with maybe a hint of citrus. It's tasty as well and a bit off the beaten track which was fun to try.

Quite an unusual approach to Txakoli, aged on the fine lees, a whopping 14% ABV. Quite a rich and ripe style, relatively low acidity, lots of yeasty complexity, tart lemon fruit, creamy texture, noticeable bitters, decent length. Slightly top heavy. At restaurant Escobar, Amsterdam, NL.
