  • Yellow colour. Med+ bouquet with spiced apple cake, some exotic fruits and nuts. High acidity levels with some oily texture, spiced apple pie, yeast, marzipan and calvados. Really good wine.

  • Fermented spontaneously with indigenous yeasts. Aged for 3-4 years in old foudres and demi-muds. Made in "ouillé" style, i.e. the casks are replenished as the wine evaporates during the aging. Tasted blind.

    Intense yellow-green color. Powerful, pungent and slightly waxy nose with aromas of waxy apples, mushroomy tones, some savory old wood, a little bit of grappa, light notes of wool socks, a hint pungent aldehydic character and a touch of beeswax. The wine is medium-bodied, waxy and slightly funky on the palate with somewhat oily mouthfeel and characterful flavors of steely minerality, a little bit of saline aldehydic tang, a hint of savory wood spice and a touch of lemony citrus fruits. Very little in the way of fruit here. The finish is dry, waxy and lengthy with flavors of tangy salinity, some mushroomy tones, a little bit of chalky mineral bitterness and a hint of mealy red apple.

    A nice, classic and tangy Jura Savagnin that shows some of the traditional aldehydic Jura character even though the wine is supposedly made in "ouillé" style. The fruit department feels a little understated, but it doesn't really matter, since there are lots of other things happening here. Perhaps lacking a bit depth and complexity, but since these Jura wines can age like crazy, I can imagine this will get better with further aging. Nice.

    In the mouth very insubstantial with short length and a contained acidity. Nothing special.

    En boca muy insustancial con escasa longitud y una acidez contenida. Nada especial.
