  • Light yellow. One whiff and you know that you are in Chablis: sea spray, white flowers, lemon peel and a hint of matchstick practically leap out of the glass. Very dense in the mouth, with a strong mineral component, white fruits, citrus notes, and a mouth-coating, satin-like texture that transitions into a very long finish marked by an explosive burst of still more minerals and a whiplash of acid that lingers on the palate forever. In fact, nearly a minute later, the sensation on the gums is reminiscent to that of a young, tannic red wine! This embryonic Chablis is a total knockout, and is certainly on the short list of the most memorable Chardonnays I've consumed over the past decade...it is that good! 97.

  • From half. Still a reasonably light colour. Impressive from the outset: intense green orchard fruit set against a background of slightly saline oyster shell and flint - the slightly perfumed nature of the fruit maybe makes it recognisable as Preuses and it is a lovely and pure example of just-mature GC Chablis. ****1/2

  • Stunning bottle, and very reminiscent of the same wine that Ross brought to L'Apicio in Sept 2014. Opens up to a broad, clear palate that still has some tension but the sides are just so nicely rounded and finessed from age. Lovely acidity and energy, and great clarity. Very Grand Cru. With Ross at Racines.

  • Good lord, this is just beautiful. Very clean and fresh, but more relaxed than the ‘07 Dauvissat-Camus 1er Forest, in comparison, this seems like it’s unwound. Lots of wool on the palate, sea breeze notes, saline. A very complete wine. This is what young Chablis hopes to become. Peter B. returns to NY, L’Apicio.

  • Just a stunning bottle of Chablis. No signs of premox here thankfully; instead it's a seamless blend of fresh orchard fruits, more understated floral and herbal notes, and incredibly vivid saline, chalky, and stony mineral elements that come together on the nose and palate. There's remarkable depth here with more nuances constantly unfolding with air, great intensity to the flavours on the palate but a lightness of touch at the same time that makes it incredibly easy to drink. This bottle disappeared remarkably quickly. Fantastic.
