Monday hangout at Domaine (Chicago, IL): Disgorged April 2017. Others liked this more than I did; I'll admit to not really getting the Bouchard champagnes, and I found this a bit too strongly acid-driven for my taste. This has a bit more weight than other low-dosage Champagnes can have, but for my palate, the high acidity feels a bit off-kilter.

Miscellaneous Wines from Beaune and Chablis; 11/6/2022-11/10/2022: At L’Hôtel de Beaune, Beaune. Disgorged April, 2017. Pale color. Fine, transient mousse. Botanical herbs, verbena, and citrus on the nose with an intensity that singes the nasal hairs. Light to medium body, dry, amazing penetration of lemon and orange peel carried by superb acidity and a quarry’s-worth of stone. A laser-guided Champagne bomb. I can hardly contain my excitement about this bottle.

Showing much better on day 2 than 1. Notes of tonic, chalk, nuts, minerality, citrus, also some red berries. It‘s medium-full bodied, with medium mousse that is nice and slightly creamy, has medium-high acidity and good texture and mouthfeel. Good length. An excellent, fresh and tense Haute-Lemblé.

Toujours un beau rendez-vous les Champagne de Monsieur Bouchard. Bu dans une coupe Top Ten car M. Bouchard recommande fortement l`usage de coupe régulière plutôt que la flute pour apprécier ses Champagnes. Disons que ça a aidé car il semblait austère au début mais avec la coupe, il se transforme rapidement, belle complexité, c'est vineux, sur les citrons et la craie, Excellent encore une fois! Il ne fait pas dans la norme mais plutôt un seul cépage d`une seule parcelle d`un seul millésime. La grande majorité des maisons en Champagne font un assemblage de cépages, parcelles et/ou millésimes. L`expression du terroir la plus fidèle possible! Pas facile à trouver, il axe sa production sur la qualité (un seul pressage et aucun dosage) avec des rendements gardés très bas volontairement plutôt que la quantité et ses parcelles sont assez petites.
